April Favourites

Happy Monday everyone! I kind of wish it was still the weekend, but oh well Monday means it is only 5 more days until the weekend ;)

I wanted to discuss today a few of my favourite things this April.

Coffee.
Duh.

Mad Men.
I just adore this show. I missed season 4 though. So I have to catch up on all those missed episodes. I just love everything about this era, and how they formulate each episode.

Zuzana’s ZWOW’s.
I do these workouts at least once a week and I love how hard they are. Seriously. I missed her workouts when she left bodyrock, and am so glad she is back to posting these high intensity workouts. I swear nothing has made me love exercising more than pushing myself to the max during interval training. That sounds weird, but its true.

Balls.
Food that is. From cookie dough balls, to mac and cheese balls, goat cheese truffles, and even cocoa almond butter ball.


Bare Essentials Foundation

I am planning on sharing my skin transformation soon. I suffered from the worst skin almost anyone had ever seen. It was horrible, I can not even describe the suffering I went through when my skin was at its worst. Switching to this foundation, improved my skin almost immediately and it has helped keep my skin clear for the past 2 years.

I have a serious obsession. I use it at least once a day. I need to share more of my recipes I have been making with this. :)

If you are looking for a book to read. Read this. It was an amazing read. I never wanted to put it down and was so sad when it ended. It is very long, but seriously good. Don’t let the author Stephen King fool you, it is not a creepy, scary novel.

Coloured denim.
To be honest, I was wary about this at first. I mean, who can pull of coloured pants? As soon as I tried on my first pair, I was hooked. I stepped out of the dressing room expecting the worst, but was pleasantly surprised by how much I love them.

This month I participated in the Foodie Pen Pals, hosted by the lovely Lindsay.

I loved the experience of it, and can not believe the hard work Lindsay must go through each month to get this all put together.

I received a lovely package from Erin, who does not have a blog, but is a triathlete! How cool. Erin made me muffins! She said this was her first time ever making gluten free muffins and she did a great job! My family and I loved them. They were mango too. A favourite of mine :)

She sent me wonderful tea flavours as well, and included some snacks that I tried out and they were really good. I loved the ingredient list of them, nothing too crazy. Along with a soup mix that will be good when I need a quick lunch or dinner. Thank you Erin for the package!

Friday Five

Hello friends! :)

Oh, how I love Fridays. After a long week, the weekend has finally presented itself.

I started the day off with breakfast, coffee, and a workout. Three of my favourite things.

Has anyone noticed the super sized status of strawberries this year. It’s insane. I wonder what kind of things they add to get them to grow so big? Ah, better of not to know I think. Ignorance is bliss.

A couple other things to mention…cookie dough and pudding.

Yesterday was one of those days I decided to get a little crafty in the kitchen.
I love experimenting with recipes and ingredients. I have a couple special things coming up soon! You’ll just have to wait a little while longer ;)

I whipped up another batch of my cookie dough balls. Superb.

Moving on to the pudding, its pretty much a cinch to make. And the ingredients together make this pudding super creamy.

Chocolate Peanut Butter Faux Cheesecake

  • 1/2 cup cottage cheese
  • 1/4 cup plain greek yogurt
  • 2 tablespoons peanut flour
  •  1/2 tablespoon cacao powder
  • 10-ish drops liquid stevia
  • 1/2 banana
  • 2-4 tablespoons almond milk (to blend)

Throw all ingredients into a blender or use a hand blender, and blend away. This is the perfect snack post workout or before bed.

Mmm. I love me some pudding.

Five Things Friday

1. I’ve been adoring Kristin’s pumpkin protein dough. Amazing. Do yourself a favour and make it.

2. Go check out Meg’s High Five Friday post she hosts every week.
I would like to give myself a high five for keeping up with my plan to increase my calories, trying to maintain a positive attitude, and challenge myself to try new things.

3. Wonka created a bunch of the craziest, coolest sounding ice cream flavours. I kind of want to try them just because of their name’s and design. I mean are you even kidding me? Kerfluffle Truffle, Chipperberry Swirl, Caramel Nut Kadoozle, and more.  These sound awesome.

4. Go and do this 1000 rep workout. I was a sweaty mess by the end of this. I know there is a lot of controversy with the new bodyrock.tv website, but there is no denying that they can still give me a kick ass workout. I do prefer Zuzana’s workouts, but these still rock.

5. I just love the Ellen Show. And Tony. Watch this pleaseeee.

Cheesy Balls

Dare I say I made the best cheesy balls yesterday.

 I never thought I would ever use those words in a sentence. There’s a first for everything.

I have a little confession to make to you all…

Did you love that Kraft Dinner when you were a younger kid? Welp, I didn’t.

There was something about the weird looking noodles and creamy bright orange cheese that threw me off.

Yes, I was one of those odd ball kids, who hated mac and cheese, pizza, handburgers (wait, is it a hamburger or handburger?), and all those other foods kids usually enjoy. I lived off carbs. White pasta, white bread, sugary cereals, and french fries. Oh, and frozen peas. Seriously, I do not know how I was not a whale.

Homemade macaroni and cheese on the other hand.
I. could. not. get. enough.
Honestly, almost every single day I came home from school I would beg my mom to make her homemade mac and cheese. It was delicious, it was (mostly) all I would eat for dinner. Until, I realized it wasn’t doing very nice things to my waist line.

When I went on my journey to lose weight, eating mac and cheese? Forget about it. That was totally off limits to me.
That is, until I started experimenting with healthier ingredients to make a great tasting alternative to mac and cheese.

Healthy Cheese Sauce Balls (what a weird recipe name)
Recipe (makes 4 balls) inspired by this recipe

  • 6 tablespoons nutritional yeast
  • 80 grams goat cheese (if vegan, use tofu)
  • 2 tablespoons cashew butter
  • 1 tablespoon lemon juice
  • 1/2 tablespoon dijon mustard (I can’t use this because I’m allergic to mustard, but I know lots of people use it to get a tangier tasting sauce)
  • 1/4-1/2 teaspoon each garlic powder, onion powder (if desired) (again, not for me, I have a sensitivity to these)*
1. Place goat cheese and cashew butter in a microwave safe bowl and heat for about 30 seconds.
2. Add the lemon juice, mustard, and spices (if using), and nutritional yeast.
3. Grab a fork, and stir until the ingredients are well combined.
4. Separate into 4 equal portions (makes about 2 tablespoons per serving)
5. Enjoy.
I topped this with roasted cauliflower, spinach(!!!), and zucchini.
By the way, roasted spinach is delicious.
Once you place them over your hot food it will melt over like a cheese sauce. And just stir in to combine. For some reason I think of this song whenever someone says cheese, because one time on the radio I heard someone thinking the song was called “like a cheese stick”. Not quite, buddy.
These little cheese balls are not only totally cheesy and fun to say, but they are delicious too. It was like a little slice (or ball) of my childhood.
The combo of cashew butter and nutritional yeast is like heaven on earth, and with the creamy goat cheese it amps it up even more. If you don’t have cashew butter, feel free to use tahini.
*I avoid these because of the FODMAPS. Thanks to Elise posting about FODMAPS, I tried removing most of these from my diet and have noticed a significant improvement in my IBS. I find that garlic and onion irritate me the most, so I never use them. I will however, eat other FODMAP containing foods in limited moderation.
Benefits:
Nutritional Yeast-
  • Good source of dietary fiber, vitamin B6 and B12, and selenium.
Goat Cheese-
  • More digestible than cow’s milk, high in calcium, vitamin K, D, A, B6, and B12. And contains CLA’s (to help burn belly fat)
Cashews-

  •  Contains no sugar or cholesterol and is high in magnesium (can help those bones), thiamin, and riboflavin.

WIAW #5

Good morning everyone!
It’s that time of week again – what I ate Wednesday
Another day of delicious eats were celebrated over here.

I did a fairly good job at getting those veggies in, but since I am trying to eat more calories, I didn’t want to stuff myself silly with the green stuff. You know how too many vegetables sits in the stomach, sometimes not the best. Especially in my situation.

My alarm went off at 5 AM, and boy was I tired. I woke up from such a deep sleep, I contemplated not going to spin class this morning in effort to get a bit more sleep. I eventually decided I might as well get up because it did not look like I’d be getting back to bed after the mental dialogue going on.

Spin ended up being great, so I am glad I went.

8 – Breakfast
I had overnight egg white oat bran, with extra chia seeds, 1/4 cup pumpkin, 1/2 a frozen banana, and I topped it with some cocoa almond butter.

I followed it up with a cup of Starbucks, great way to start the day off right!

Since I worked out this morning, I have to make sure to add extra calories into my day. This is something I was avoiding before, part of me just wanted to stick to how I usually eat, but I know that I need to make some improvements in my nutrition if I want to function normally. The mental dialogue I play over in my mind drives me a little nutty. This eating disorder plays such wild games with my head.

After breakfast, I finished getting ready and headed out to grab some groceries I’d be needing for the rest of the week, and to run a few errands. It was such a beautiful day, I was so excited. I can not wait for summer and the nicer days to come!

By the time I got home I was hungry for lunch.

11:30 – Lunch
I made myself a flax-egg pizza crust (made with ground flaxseed, almond flour, an egg, egg whites, and nutritional yeast), and topped with tomato paste, goat cheese, spinach, and red peppers. And I had an apple on the side.

3 – Snack
greek yogurt mixed with 1 scoop sun warrior vanilla protein powder, and a tablespoon of cashew butter that I mixed in, delicious (I half ate this before picturing, oops)

5 – Dinner
Even though it was really nice and hot outside, that was not enough of an excuse to fire up the oven. I roasted broccoli, asparagus, and cauliflower in 1/2 tablespoon coconut oil, dill, and nutritional yeast. And topped that with more goat cheese (obsessed) and a turkey burger. With a side of tomato paste ketchup (just stevia mixed into tomato paste).

This dinner was a little more “challenging” because I had goat cheese twice in one day, and to my eating disorder, having cheese twice in a day is “bad”. Which is stupid, because it is certainly not bad in the slightest.

While I’m preparing meals, I sometimes can not comprehend my own rational voice between my eating disorder voice. If that statement is even true.

I am not sure which one is actually “me”. If that makes sense to anyone. When I talk to my therapist, I will tell him how I avoid certain foods and follow food/exercise rules because I am afraid I will get fat, and he tells me that is not really me, but the eating disorder telling me this will happen.

I get confused, because how do I decipher the two of them? The eating disorder seems like such a part of me that is not separate, that I can’t tell whether it is really an “eating disorder voice”, or if I have trained my mind to actually think this way.

Do you believe an illness like this can control us in such a huge way that it actually is a separate part of you. Am I really a separate person from this disorder?

8 – Evening Snack

Now I’m off to catch up on some Real Housewives and get to bed! :)

Recovery takes a lot of determination, hard work, and willingness; it will also have set-backs and I need to learn a set back is not a relapse. I am not a failure because I had a set-back, and I don’t have to go down that dark path any more. Everybody deserves full recovery, including me.

Fun Outings and Healthy Behaviours

Happy Tuesday lovelies!
How is your day treating you thus far?

 I convinced myself to go out this weekend and could not be happier. It was my friends birthday, and I clearly did not get the memo that it was a pink party. So I had to represent the pink lei out in the bar. Doesn’t it just look so glamorous with my bright blue dress. I felt a little silly, but whatever it was a great time! I also tried out a recipe for cucumber and strawberry infused vodka that I did not picture, so I will be making another batch this week so I can give you guys some pictures of it :) It rocks.

I had a lovely Saturday night, which was a nice change up. I admit, I had been isolating myself. After I fractured my rib and then bruising my tailbone right after. I allowed those as excuses to not make time for my friends. Not okay. Around this time, I also became more obsessive in my calorie/exercise regime, and also was feeling rather depressed about some things going on in my life right now. These are the times when I need my friends and family the most and can not isolate myself from them, like I did in the past.

The next day, I awoke with a slight hangover…oopsy. So I took my time getting up and enjoyed a cup of tea, then enjoyed my overnight oat bran.

*oat bran, egg whites, chia seeds, pumpkin, after doused in cinnamon and raw almond butter*

When I was in the depth of my eating disorder, I spent all day by myself, just wanting to hide from life.I had dreams of what I would be, what I wanted to do. But, I lacked the motivation and energy to get myself out of the house. I would literally use any excuse to not leave the house. From the weather to my hair, I used anything to avoid people. As a result, I ended up isolating myself and made it hard to keep friends around in my life. I am very lucky that some of my friends stuck around, even though I was honestly the worst friend ever during this time. I was not willing to make much of an effort at all when it came to that part of my life, I was just so consumed in my eating disorder.

Enough is enough though, life doesn’t bring you opportunities when you are just waiting around for something to present itself. It is such a great feeling (sometimes) to put yourself out there and not isolate from the world. Just to leave the house feels like a relief. Doing anything at all to not be at home, whether that be going to the grocery store, meeting friends or family, or grabbing a coffee. I lived in fear that people would judge everything about me when I went out in public, but truthfully I doubt people even notice all the “flaws” I see in myself. It was definitely uncomfortable at first and caused me a lot of anxiety.

*My bedtime snack was awesome, it was my protein pumpkin pudding, but I added in 1 tablespoon of protein powder, instead of 1/2 a tablespoon. It gets so thick from the protein powder and coconut flour. And just tastes so good. Perfect for me.*

That’s how you get over unrealistic beliefs and behaviours though, just keep on doing them until they become easy to do. And when I do them enough, the anxiety feeling basically goes away for good. However, I need to find more healthy behaviours to relieve my anxiety instead of relying on exercise and decreasing my food intake to make my anxiety lessen. This is harmful in the long-term. I have found that the best ways are to communicate with friends and family about my true feelings on the situation, instead of pretending everything is rainbows and butterflies. Everyone has anxiety about things, and I should not be ashamed about that. Neither should anyone else, it is a normal human feeling. I guess its not so simple to just say you will do something, you have to have the motivation and determination to put yourself out there. Results will come if you keep doing these things, just keep a positive attitude, communicate, and keep trying, no matter how many times you “fail”. We make the best out of life and have success when we challenge ourselves and step out of our comfort zones, that is the only way we can truly change. They say the definition of insanity is doing the same thing over and over and expecting a different result. Yep, this is definitely true for me. I need to change in order to get a better result. Well that’s my little spiel for today.

Vlog: How To Make a Protein Muffin

Hey heyyy friends!!

Hope your weekend was a blast!

Today I have a vlog for you that I put together. I had been getting quite a few questions on how I make my protein muffins. Plus it’s always fun to actually see someone in person. So, I just figured to make it easier for everyone, I would just make a vlog. Anyone else hate that word? It sounds weird to me…

I hope you enjoyed my first video blog, I definitely felt like a huge dork filming it. Next time I’m sure it won’t be so awkward ;)

It’s noted that I say obviously, and, and uh way too much. Yikes.

Instructions

  • Combine 3 tablespoons of any flour you want to use*
  • Add 1/2 teaspoon of baking powder and 1/4 teaspoon stevia
  • Mix that all together using a fork, until combined
  • Add in 1/4 – 1/3 cup of canned pumpkin (or applesauce, mashed berries (jam), banana), the options are up to you
  • Add in a couple drops of liquid stevia (I add 7 drops)
  • Add in the 1/2 cup of egg white

*The flours I love to mix around with include: Teff flour, brown rice flour, oat flour, buckwheat flour, protein powder, almond flour, coconut flour, and peanut flour. You can customize with any type of flour you would like to use. Feel free to use a combination of different flours as well.

Grab your fork and mix all the ingredients together, very well. Making sure there are no clumps in the bowl.
Microwave for approximately 3-4 minutes. It will depend how strong your microwave is.
After it has finished cooking, remove from bowl, allow to cool for a bit. And enjoy! I like to eat mine cold, so I just place it in the fridge until I’m ready to eat it.

Benefits:
Teff Flour-

  • A whole grain that is high in vitamin C, thiamine, calcium, and iron. Naturally gluten free.

Sun Warrior Protein Powder-

  • Contains all 9 essential amino acids. High in essential nutrients (thiamin, phosphorus, potassium, riboflavin, and iron). Is an easily digestible protein powder.

Pumpkin-

  • High in fiber, iron, magnesium, manganese, potassium, vitamins A & C, and phosphorus. Loaded with the antioxidants, alpha and beta-carotenes.

Egg Whites-

  • No cholesterol or saturated fat. High in riboflavin, selenium, and vitamin B.

Fun Fitness Friday

Happy happy Friday!

Why is today so happy you ask?
Well, firstly it is Friday, duh. The weekend is almost here!

I ‘ve already finished an intense workout I’ll be sharing with you in a bit, I’m about to eat breakfast, and I’ve been in a happier mood since I have decided to increase my calories.

Coffee stop yesterday, of course. My energy in a cup!

With today being Friday and all, you need to check out Meg’s High Five Friday post.

This week I’m giving myself a big ol’ fiver for increasing my calories. This is still a bit of a work in progress. It is mentally challenging for me to be increasing my calories.

However, I feel an increase in calories is necessary right now, for a few different reasons.

1. I was having an insane amount of trouble sleeping properly. Not being able to get into bed until after 12 AM and then waking up at the latest, 5 AM, was too much for me after a few weeks of going through this. I was exhausted after every single workout, no matter how lame or short it was. And getting exhausted after climbing up the stairs is not normal.

2. I kept on thinking I was getting sick, or that I always feel this crummy all the time anyways, but its time to face the truth that I wasn’t eating enough. Which in turn, makes you feel lousy.

3. I’ve also been suffering from panic attacks in the morning, I have had panic disorder for about 2 years now. And I know it usually resurfaces when I lose weight, am exercising too intensely, or under eating.

4. My hormones get out of whack, which makes me a lovely, moody person. I sound like such a blast ;)

5. I started freaking out over every calorie I was putting in my mouth, worrying about my macronutrients being “perfect”, and feeling anxiety everytime I ate.

So for right now, I am simply eating more. And I haven’t gained weight. Just goes to show, I wasn’t eating what my body was in need of. Even though I could use a few more pounds on my body. Well, enough of this talk for now.

Now onto the workout from earlier today, it was ridiculous. I really pushed myself and finished feeling FAB!

Some exercise examples:

Box Jumps
Kettlebell Swings – I just use a dumbbell, because I don’t have a kettlebell
Medicine Ball Squat Jump
Sumo Push-Ups
Double Under Jump Rope - these are killer, oh man. If you can’t do these, regular jump rope is fine.
Release Burpees – I don’t bring my hands out to the side like that though, just basically do a superman/back extension after the push-up
Wall Balls – I just use a medicine ball
Jump Rope with High Knees
Shoulder Push-Ups – I do them with both legs on the ground, my shoulders aren’t that strong yet ;)
Mountain Climbers 

And I die.

2. Yesterday, while driving, I saw someone get arrested at the bus stop. I am super curious to why. I mean, what can you do that’s arrest worthy at a bus stop. Actually…There were so many people crowded around and the road was closed off. Am I the only person who is SO curious when they see an accident, or a an arrest, or anything out of the norm? Probably…

3. I absolutely loooove Ashley Tisdale’s outfit she’s wearing in this picture. Now I am on the lookout this weekend for some clothing items I can replicate this with…

Cocoa Almond Butter

Why hello there Thursday, its great to see you again.

The week has just flown by for me!

Aside from the not so nice weather we had yesterday, everything is peachy.

This morning, I decided I wanted to have a little chocolate with my breakfast. I have never seen chocolate almond butter over here in my parts of Canada, sadly. So, just decided to make my own.

I combined 1 tablespoon of raw almond butter, a heaping 1/2 teaspoon raw cacao powder, a little bit of stevia, ~1/4 teaspoon vanilla extract, and ~1/2 teaspoon almond milk. I just mixed it all together with a butter knife and served this atop of my breakfast oatmeal.

Yesterday started out with a little mishap. While driving my car, I looked behind me and saw there was a creepy spider there. Why is it that I think that spider’s are the scariest thing in the world. I definitely panicked a bit, I mean what happens if it crawled near me, I would surely die. At least it felt that way at the time. I contemplated just going home and running from my car, screaming, until somebody could kill the spider for me. Instead, I decided to stop at the closest gas station and asked the man working there if he would kill it for me. Classic times.

After my spider fiasco, things started getting a little better though ;)

I completed a sweaty workout. I did Zuzana’s ZWOW #2. It’s a goody.

After, I made sure to refuel myself with a protein smoothie.

This beauty had almond milk, 1/2 banana, 1 cup strawberries, 1 teaspoon each of ground flaxseed and almond butter, 1/2 serving vega protein powder, stevia, and a pinch of xanthan gum. Delicioso.

WIAW #4

Good morning everyone!

Hope everyone’s Wednesday is going well so far! I’m just starting the day drinking some tea and getting ready for the upcoming day.

 

It’s time again for what I ate wednesday! Come and join the party.

My favourite way to begin the morning off right is with a good breakfast, obviously. I decided to try out some overnight oats using yogurt instead of the usual egg whites I use. Truthfully, I like the egg whites better. This was still good though.

Oats cooked, then added 1/2 cup greek yogurt, 1/2 tablespoon chia seeds, 1 tablespoon almond flour, 1/2 cup pumpkin, cinnamon, stevia, topped with almond butter after photo. Got to get those healthy fats on.

I then got ready for the day, but my sister insisted that I come into the salon and get my hair done. It didn’t take much convincing. So off I went to the salon where I ate my [not pictured] lunch and came home and had a snack of cookie dough balls, mixed with some leftover greek yogurt.

This coming week, I have decided I need more of a plan to make sure I get enough calories in. If I am keeping up with my exercise I need to make sure I’m fuelling myself with not just proper nutrition, but with enough calories to satisfy myself and keep up with my activity.

I decided for dinner to get some veggies in the oven to start baking.

I coated my cauliflower and zucchini in a little coconut oil and nutritional yeast and baked that in the oven. Topped it all off with a homemade turkey burger, some marinara sauce, and goat cheese. Mmm good.

Now, I’m off to catch up on some of my favourite shows I missed from last week, then eat my last snack of the day. I also have to hit the hay early tonight. I only got 3 hours sleep, then decided to get up for a spin class at 5. I am le tired. For sure.

Night snack is a protein muffin, with coconut flour cream (2 tablespoons coconut flour, 1/4 cup almond milk, stevia drops)

Cookie Dough

Hello beautiful people.

Thank you all for your sweet comments on yesterdays post! You are all the best!

So if your like me, by the time the afternoon hits I need a little something in the snack department. I’m not one of those people who can eat 3 meals a day and be satisfied. Eating about 5 small meals a day keeps me in a happy mood. You know what happens when you get too hungry before a meal, yeah not too pretty ;)

These cookie dough balls are a perfect snack to help tide your hunger over until dinner. Especially if you are on the go. They are also great to have before a workout first thing in the morning, because of their size, they don’t weigh me down in the morning or make my stomach uncomfortable, which is great.

And is it just me, or do you prefer raw cookie dough over cooked cookies? As I kid I absolutely loved raw cookie dough. I would put it in the freezer and eat it from there. These are a little healthier ;) And I can still throw them in the freezer and not worry about getting salmonella poisoning. A plus in my books!

Ingredients (6 balls)

  • 1/4 cup protein powder (I used sun warrior)
  •  3 tablespoons coconut flour
  • 2 tablespoons raw cashew butter (you could use any nut butter)
  • 1/2 tablespoon coconut oil
  • 1 banana (or 1/2 cup applesauce, or pumpkin)
  • 1-4 tablespoons almond milk
  • liquid stevia (to preferred taste)

Melt the coconut oil in a bowl, add the nut butter and banana, and stevia (or other sweetener), and mash until combined. Then add the protein powder and coconut flour and combine well (I just use my hands). The dough will be pretty thick, so if you need to add some liquid add in your almond milk (1 tablespoon at a time), until you can form them into balls. Refrigerate or freeze until your ready to eat.
