Good morning everyone!
Hope everyone’s Wednesday is going well so far! I’m just starting the day drinking some tea and getting ready for the upcoming day.
It’s time again for what I ate wednesday! Come and join the party.
My favourite way to begin the morning off right is with a good breakfast, obviously. I decided to try out some overnight oats using yogurt instead of the usual egg whites I use. Truthfully, I like the egg whites better. This was still good though.
Oats cooked, then added 1/2 cup greek yogurt, 1/2 tablespoon chia seeds, 1 tablespoon almond flour, 1/2 cup pumpkin, cinnamon, stevia, topped with almond butter after photo. Got to get those healthy fats on.
I then got ready for the day, but my sister insisted that I come into the salon and get my hair done. It didn’t take much convincing. So off I went to the salon where I ate my [not pictured] lunch and came home and had a snack of cookie dough balls, mixed with some leftover greek yogurt.
This coming week, I have decided I need more of a plan to make sure I get enough calories in. If I am keeping up with my exercise I need to make sure I’m fuelling myself with not just proper nutrition, but with enough calories to satisfy myself and keep up with my activity.
I decided for dinner to get some veggies in the oven to start baking.
I coated my cauliflower and zucchini in a little coconut oil and nutritional yeast and baked that in the oven. Topped it all off with a homemade turkey burger, some marinara sauce, and goat cheese. Mmm good.
Now, I’m off to catch up on some of my favourite shows I missed from last week, then eat my last snack of the day. I also have to hit the hay early tonight. I only got 3 hours sleep, then decided to get up for a spin class at 5. I am le tired. For sure.
Night snack is a protein muffin, with coconut flour cream (2 tablespoons coconut flour, 1/4 cup almond milk, stevia drops)

Why thank you, my friend, I love the coconut cream with protein cake, so so good! I can’t get enough of baked veggies, even though its getting warmer out! Have a great day too!
What yummy eats! The goat cheese on that bowl looks amazing and wow, when it’s not green that protein cake looks pretty darn tasty, haha! I think the oats look super decadent with the yogurt but I agree I think the egg white texture looks better. I’ll join you in focusing on FUELING well!
I love goat cheese all of a sudden. Haha, totally agree the green is a little crazy looking, unappetizing I’m sure! Yeaaah for extra fueling!
You make overnight oats with egg whites? Interesting! I’ve only made them with yogurt but I never cook the oats first, just do them raw. How do you do yours with the egg whites?
I thought I was the only one who says “I am le tired” hahah love it.
Haha I know, sounds super weird! But yep, that’s what I do. I’m going to post a tutorial soon because I get a lot of questions about that. Basically I cook the oats in water, then cook again after egg whites are added, add the chia, and stevia/mix ins, and put in the fridge overnight. The best. Haha I always say le tired. My friends think I’m nuts

What combination of ingredients do you use? I need some help with mine I think, or a different recipe, it just isn’t turning out right!
Love those protein cakes. I usually mix it up. My favourite so far is 1 T each of teff flour, protein powder, and almond flour, then 1/4 cup pumpkin, 1/2 cup egg whites, 1/2 teaspoon baking powder, and stevia. So I always do 3 tablespoons of some kind of flour and the rest ingredients I keep the same. They rock.

LOVE the eats for this WIAW! You already know I love that protein muffin recipe…I need to make that again soon. And I picked up some goat cheese last weekend and have been eating off it all week. I forgot how good that stuff is!
Yah its so good, I love to change up the flours, I always end up using 3 T, just depends what ingredients I’m in the mood for! If I go without goat cheese for a while I forget about it too and as soon as I eat it I get so excited over how good it tastes. Yah, I’m a nerd
Oooh, I like the sound of coconut cream – I have to give that a try! Where do you find coconut flour?
I just found it at the closest health food store to where I live! I sometimes have to ask the employees where its located because its not always put in view.
Dinner sounds like an awesome combo, especially topped with goat cheese…I swear, that makes almost anything better!
