Good Morning beauties and happy Tuesday to everyone!
I hope everyone enjoyed their weekend, and your long weekends for all the American’s out there!
I spent the weekend celebrating a couple of friends’ birthdays, so it was a busier one for me. It was a lot of fun actually, and am so glad I went out to celebrate their special day.
I didn’t get many pictures in because I was having too much fun, but let’s just say it included a few of these.
Yah, not feeling the best the next day, but it was well worth it
And is that not the most fun cup ever? It’s a huge margarita glass with an awesome pink boa wreath around it with a sparkly bottom. Love.
Since I wasn’t feeling the best the next day, baking was about the productive thing I did.
I made some turkey burgers inspired by this recipe from Courtney.
Italian Turkey Burgers (makes 5 burgers)
- 454 grams extra lean ground turkey breast (1 lb.)
- 3 tablespoons tomato paste
- 1 tablespoon italian seasonings
- 3 tablespoons nutritional yeast
- 1 teaspoon crushed red pepper flakes (if you like spice)
Combine all ingredients together in a bowl and mix until combined. Refrigerate the turkey mixture for about 20 minutes (or longer). Separate into 5 equal sized patties. Cook on a stove or grill about 8 minutes per side (depends on stove). Top with desired toppings and eat! These are really good and perfectly healthy! I cooked these in a little coconut oil, and it gave them a nice crisp side. So scrumptious.
I enjoyed one of these with some spaghetti squash, asparagus, marinara, and goat cheese.
Besides baking and spending time with friends, my Sunday was treated with some hangover toast and a side of starbucks.
I toasted 2 pieces ezekiel bread and topped it with coconut oil, stevia, cinnamon and a little sea salt. It’s a beautiful tasting thing.

That margarita glass is SOOO fun, I want it too! The hangover toast sounds great. I too had a headache this morning from a couple drinks yesterday and toasted up an english muffin with Laughing Cow cheese to have with my morning coffee. REALLY made me feel a lot better! It’s amazing how much I crave toasty carbs after drinking
That bowl of squash goat cheese marinara GOODNESS looks fantastic. So do the turkey burgers. I love those and Courtney often has great recipes for them!

Haha carbs are my saving grace when I’m hungover, they are about the only thing I can stomach the next day! Yah Courtney’s recipes always sound so delicious!

HAHAHHA!! Oh honey, I can relate…I was like that Sunday morning after an afterparty we attended in Edmonton. I thought I was going to die when I woke up at 8am to go meet a prospect at starbucks at 9:30…..I kept thinking “why on earth did anyone schedule this so early!”

I had my baby shower this weekend which was so nice! My twin sister decorated everything and it all looked amazing! I definitely felt really blessed!

I’ve never tried putting coconut oil on toast. It’s really good??
Yah, its really good. It tastes a bit like butter, but with a slight coconutty tone to it, if that makes any sense at all, which it probably doesn’t hah..

They rock! I love the nutritional yeast because it binded them and I didn’t have to use cheese. Which I love, but its better on top!
This is the kind of burger I was craving at my family barbeque! Unfortunately all that was there was regular burgers and hot dogs. I didn’t settle though! I got myself a veggie burger on way home. Next time I’m making these for the healthy people.
Oh and i’m proud of you for actually baking something while having a hangover! I’ve been there and I know it takes alot.
Oh man, don’t you hate that hah. Next time though! I know I’m quite impressed I got the motivation to bake stuff, usually that never happens!
