It’s Wednesday, which means its time for another WIAW party
Let’s jump right in, shall we?
I woke up super early to attend spin today, holy mother of pearl, it has been so hot during class lately. We are currently having a little heat wave here, which I’m not complaining about! I love the warmth, just don’t like how I start sweating before spin has even begun. After I felt like I had died, I came on home and ate breakfast.
7:30 Breakfast – Overnight Oat Bran
oat bran, egg whites, chia seeds, cinnamon, stevia, pumpkin, banana, and cashew butter to finish it all off.
I just can’t quit you.
None of my meals were very fantastic yesterday, I wasn’t feeling like spending much time in the kitchen, so my eats were rather easy and not too exciting.
11:30 Lunch – Socca + Kale Chips
For lunch, I decided to make Michelle and Lori’s skillet socca. Holy moly, so good. I have a new lova in life, and it’s socca. I just used 1/3 cup flour and 2 teaspoons oil though served alongside a side of kale chips.
I just threw the kale chips in the oven at 425 for about 10 minutes. And coated them in a dash of oil, nutritional yeast, and crushed red pepper flakes.
After I got back from the grocery store I made a quick snack. A smoothie was all I could think of when I arrived home, it was so beautiful out and just wanted something refreshing and cool.
3 Snack – Smoothie
My smoothie included frozen spinach, frozen strawberries, frozen avocado (so creamy), almond milk, vega protein powder, dash of xanthan and guar gums (for even more creaminess). It’s a horribly hideous colour, but delicious non the less.
For dinner I was planning on making a recipe I’ve had my eye on, but when the time came, the last thing I wanted to do was cook. So I just threw a spaghetti squash in the microwave, again cooked per Janetha’s instructions. Genius, I tell you.
5 Dinner – spaghetti squash, topped with a turkey marinara I had that was frozen in the freezer, and goat cheese.
Now I’m just catching up on Grimm, while sippin’ on some Cashew Butter Milk. I love this show, but no one has heard of it. So I guess I’m a loner in that I like it. What can ya do?!
