Happy Tuesday, loves! Hope your morning is great so far.

Yesterday was a rather boring day, still recovering from my illness over here. It’s not getting too much better, so might have to head back clinic, or I guess I could just wait until my doctors appointment Thursday. Have you ever had a migraine? I’ve had a lasting one for about 2 weeks and its driving me slightly insane. ;)

When I’m sick I turn into a complete weirdo, I can only eat foods with certain textures and become extremely picky. I don’t like when things are over cooked. I can’t even stand the thought of putting any form of meat or anything that looks like meat into my mouth. Pancakes and waffles are just too rough for my pleasure. The only things that sounds good to me are foods resembling baby food.

Boy, I sound like a gem. The past 3 days, my food has looked eerily similar to things babies would be eating. I’ve definitely been putting my vita-mix and food processor to good use.

So now I have some fun concoctions to share.

pumpkin cookie dough

Know what I’ve been loving lately before bed? Coconut cookie dough.

This batch is most certainly a tasty treat.

To make the “cookie dough” I combined a bowl filled with 1/2 cup rolled oats, 1.5 tablespoons coconut flour, 1 tablespoon cashew butter, 1/2 teaspoon cinnamon, nunaturals vanilla stevia, and 1/4 cup pumpkin.

And then I just mashed everything together with a fork. I bet this would taste even better with pumpkin though. Just because I think everything tastes better with pumpkin. What can I say? I’m in love.

I topped it off with some peanut flour paste before digging in. Peanut butter + cookie dough is my new favourite couple.

Being sick seems to make the days drag by, its not too fun being cooped up in the house all day. Well, actually I have been making an effort to leave the house first thing in the morning to hit up the Starbucks drive thru, because even though I’m sick I can’t get enough of this addiction.

During the afternoons, I’ve been relying on blending cottage cheese, which reminds me of this lady.

This made for a filling snack before dinner. Love the creaminess of it! I just blend 1/2 cup of cottage cheese, with a little greek yogurt (about 1/4 cup), 1 tablespoon cocoa powder, vanilla stevia, and 2 tablespoons pumpkin.

Gimme dat blended cottage cheese, why does it taste so much better blended?! Don’t understand that one.

After the picture, I brought out the nut butter to come out and play. Toppings are always a must.

I’m off to make myself some more tea. I can’t stop drinking it these days. Not that that’s a problem.

  1. I love cottage cheese. that looks so delicious. when I am sick I crave the weirdest combinations as well. A lot of the time I love fresh fruit like watermelon.

  2. I want to eat all of the above! I tend to go crazy for comfort foods when I’m sick! Cereal, oatmeal, and anything sweet!

    Lisa I’m so sorry you’re sick!! I hope you get better soon. I get migraines on occasion too–they’re awful. You know caffeine actually helps with migraines. I once had a pounding migraine and my mom gave me straight black coffee and it felt so much better. So Maybe your Sbucks addiction will be good. I
    Hope you feel better soon. And yes when i’m sick I just want to eat pudding, cottage cheese, and applesauce.

    • They are just the worst. I had no idea caffeine helped migraines! Good thing I love my coffee! Haha, I wish it was helping out, but sadly not yet!

  6. Hmm blended cottage cheese, interesting! I have to say I usually am eating my cottage cheese in its normal form. Not to say it wouldn’t taste great blended!

    • Its actually really good! I thought people were nuts for blending it ;) but I tried it out and actually like it better. Maybe its a texture thing though?

    I can usually still eat normally when I’m sick, depending on what kind of illness it is. But last summer I had a super weird stomach/head sickness that made me develop a strong aversion to so many foods. I couldn’t even stand the thought of eating oatmeal! Thank goodness it only lasted a week or so. :P

    • Yah, I eat pretty normally, the only thing I crave more of it sweeter tasting food and nothing hard on my throat. Oh my goodness, I would be so lost if my sickness caused me to stray from oatmeal ;) its like my go to food for being sick!

  10. Tea is never a problem ;) I have had so much already and I love the fact that I don’t have to pace myself with the cinnamon rooibos now :D have you tried it? isn’t it fabuloso? ;)

    anyways, i love your concoctions and seriously cannot thank you enough for sharing them :) I am have been blending cottage cheese for years, but I like the mix of yours! I will try that soon :) Mmmmm I am excited :)

    • No never ever is. I don’t believe you can have too much of it! So happy you are loving the tea! I did try it last time I was there and bought myself some as well! I love ittt, it is so good and cinnamony, which is perfect since I have an obsessions with cinnamon!

    Gaawd, a 2 week migraine sounds like a nightmare:/. I do get migraines sometimes- the type where you can’t see anything but blurry flashy lines for a while- its awful. Seeing your doctor sounds like a good idea.

    I am LOVING all the cookie dough concoctions flying around the blog world right now:D. I swear its like my fave thing to eat currently-i will be trying out that 1st creation ASAP, iv yet to add (the wonder that is) coconut flour to the mix & I know it would be fab*excited*.

    One of my fave snacks=
    *blend 1/2cup of beans/chickpeas+1tbsp nut butter+1tbsp milk+extracts/stevia
    *in separate bowl mix 1/4cup oats+protein powder/brown rice flour
    *stir both mixes together until it become a dough texture
    *refigerate
    *devour!

    • I honestly can’t wait until my doctor’s appointment tomorrow, since it hasn’t cleared up at all, even with the meds I’m on. Yuck. Haha, I know cookie dough is all the rage right now, and I can’t get enough!! Oh that sounds so good! I love blended chickpea concoctions that are sweet, of course. I’ll have to try that out!

    My nightly concoction always tastes like cookie dough. It’s usually something involving yogurt, casein and coconut flour. Mmm.

  13. I will need to try blending cottage cheese up. I know they make a whipped version, but have never tried it. I am intrigued!

    I love using it in savory recipes, like mixing with tuna or putting in marinara sauce with pasta.

    • I’ve actually never seen the blended one before! I’m just starting to get into the cottage cheese with savoury recipes! I have no idea why I didn’t try that out before…

  14. Sorry you’re still sick, but hellooooo to the most beautiful creation I have ever seen. Coconut cookie dough. I will be going out and making this immediately. My stomach needs it after staring at those gorgeous pictures for about 15 minutes taking it in lol

    Yuuuummo; coconut cookie dough. Even the name sounds like heaven!

    My fav snacks change all the time, but a constant fav is Greek yoghurt and raspberries. I add different things to it, sometimes granola, sometimes oat bran, sometimes protein powder.

    • I’m not actually a raspberry fan, but I love yogurt with blueberries or strawberries! And I love it mixed with protein powder too! Gets so thick.

    • Thanks Lizzy! Still in a bit of pain, but hopefully my doctor can let me know what’s wrong tomorrow! It sucks when meds won’t even work!

  17. Ooh, Lisa, your sick snacks sound like delicious *everyday* snacks to me! I definitely need to try your coconut cookie dough–yum! And you know I’m loving your cottage cheese concoction! ;) I need to try it with Greek yogurt and pumpkin…I have a feeling I’m going to be in love at first bite. It really DOES taste better blended, but for some reason, people are averse to trying it that way! Once they do, they always switch over though! ;)

    You already know my favorite snack, but my second favorite is egg white puffs. I’ve talked about them on my blog a few times, but they’ll be making another appearance soon. I’ve discovered a few new fun variations. :)

    • Haha, I know you’d love the blended cottage cheese love! I know, its so weird how the blended makes a difference, but it really does!
      Oh yah, I still need to try those egg white puffs! I always want too, but I’m scared I’ll somehow mess them up! I can’t wait to hear more fun variations!

  19. The coconut cookie dough sounds so good. I’m the same way when I’m sick I can’t eat meat. I tend to crave sweets like fruit an chocolate too. I love tea as well.

    • Yep, copious amount of tea, and sweets like crazy! I almost eat no savoury foods throughout the day hah
