Thursday things and a recipe

Hello, loves! Happy Thursday to you all!

This morning, I woke up and didn’t have my overnight oat bran prepared, I know, who am I? I’ve eaten a different breakfast just about everyday this week.

Today, I finally put together a recipe on those spectacular pancakes from Tuesday’s post.

Perfect Pancake (serves one)

  • 2 tablespoons brown rice flour
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • 1 egg + 1 egg white
  • 1/4 cup mashed banana
  • 2 tablespoons almond milk
  • any spices you desire (I used a little cinnamon) and stevia drops as well.

You’ve got that right, my friend Moe.

I mixed the ingredients all together, greased a pan with coconut oil, heated over medium heat, and cooked the pancake about 5-6 minutes per side.

Mmmm, it came out fluffy and moist (sorry if you hate that word). It was crispy on the outside, gooey on the inside. Which is how I like my pancakes or baked goods.

And yah, I totally made these the night before, so I could have these first thing in the morning.

So filling. And hit the spot.

Coconut flour and banana is now my new favourite combination as of late. We’ll see how long this infatuation lasts…I’m considering changing my blog name to coconut flour lately, since it seems to be a major part of my diet right now.

*I also tried baking this last night for a snack instead, and it was superb! I just baked at 375 for about 15 minutes. I wish I pictured it, because it was really tasty!

After, I made my way to starbucks (of course) and grabbed an Americano and spiced it up with pumpkin pie spice and cinnamon. Mmmm. I love my coffee.

Later on, I thought I’d try out some yoga.
Fail.
Yoga and I are not getting along. Maybe if I stop dreading the practice I would actually like it? That sounds like it could work.

Instead, I spent my time catching up on blogs and researching personal training courses. Thoughts from anyone? What’s the best out there?

I’m also loving the fact that I’m trading in my LBD’s for BCD’s (bright coloured dresses). Bright colours are definitely in right now. I do adore my black just as much as the next person. But, its nice to change it up and have something more refreshing and eye grabbing for the summer time!

And I just happened to order this dress in 3 different colours. Oops?

I’ve also been obsessed with Burning Love episodes. Holy hilarious. If you like the Bachelorette you have to watch these videos.

  2. if you love the combo of coconut + banana, you should try out my coconut blueberry banana muffins! you’d love them, and they’re very healthy for you too. on my pancakes, i love spreading some nut butter and/or greek yogurt on top for some extra staying power! yum!

    • No problem! :) It’s so good, right? I was so scared at first to try it, but I definitely use it everyday over here! I got it from bebe! On there online store, since we don’t have one where I live!

  7. I’m old-fashioned when it comes to pancake toppings; a little maple syrup and I’m one happy girl :) . Sometimes it’s nice to step out of something you’re used to and try a new color..spices things up a bit! Cute dress :) .

    • Maple syrup is definitely a good one. For some reason I don’t have it in my pantry, that’s got to change. I haven’t had just good ol’ maple syrup on pancakes for quite sometime!

  8. I love any type of fruit topping, a little maple syrup, and a sprinkle of nuts. Bananas and pecans, apples with walnuts, and blueberries with almonds are my three favorites!
    I’ve heard SO many great things about Kodiak cakes, I just have to find and try them!

    • Ooh those toppings sound great! I’ve heard great things about them too. I haven’t seen them where I live, but I hope they come around in stores soon!

  11. I have spinach pancakes every morning and I top them with yogurt because I like to have a lot to dip in each bite! :) I have an old recipe for them posted on my blog but I make them different now. Perhaps I will do a new post for them.
    I do not fear the word moist. :)

    • I love spinach in my microwave muffins, but haven’t tried them in pancakes! I’m doing that next time for sure. Definitely post your new recipe :) Haha moist is such a controversial word it seems like, you either don’t mind it or hate it.

  12. Yummy pancake recipe! I usually make mine pretty similar but with all coconut flour or coconut + buckwheat :) I love pancakes, though I’m often too lazy to make them! So silly, because it doesn’t take much time or effort at all — maybe I can make myself make pancakes for breakfast tomorrow ;)

    • I love buckwheat, I’ll have to try out that next time! Do it, pancakes are the best. Sometimes I just make them the night before, because I always think in the morning I’ll be too lazy

    • I know, I was shocked I didn’t add oat bran as well ;) I almost did. Yes, you have to try out coconut flour! Next time you see it at the store totally buy it! Definitely worth the splurge

  16. Haha I’ve seen those Burning Love videos too, they are so funny yet they kinda make me cringe so much I can’t even watch half of them lol. You can totally tell Ben Stiller is behind them though, it’s so his type of humour!

    • Haha, they are definitely a little cringe worthy sometimes. But I still find them mostly hilarious!

    • I hate running out of eggs, since I eat them daily. I guess you can always make eggless pancakes. But, they just aren’t the same!

    I used to dread yoga too…and now I am obsessed with it. You need to find your “yoga soulmate” I found power yoga was it for me. I tried to go back to a regular Vinyasa class ad HATED it!!!

    Those pancakes remind me of something I make for Ella. SO yummy! Good job with them, pretty girl!

    • Ooh great idea! I’ve been trying the same type of yoga over and over haha. Obviously I should try a different type. Sometimes I can be so silly ;) I’m going to try power yoga next time! Thanks Laury, I must admit I love looking at Ella’s food as well and think most of it looks pretty delicious!

  21. Yum, pumpkin pancakes are the best! I just wish they didn’t turn my skin orange haha. (But seriously.) That dress is so cute! Where did you get it? I’m planning on rushing a sorority in the fall, so I need lots of good dresses for rush + parties. Can you recommend any good places to shop online?

    • Haha, I know!! My palms and bottom of my feet turn orange pretty easily. Kind of annoying how my favourite foods do that!
      I bought the dress online at bebe.com. That’s where I do most of my dress shopping, you can occasionally find a good sale online there. Sometimes I get dresses of Victorias Secret as well!

    Your pancake sounds delicious! I haven’t made pancakes in sooo long but I have a feeling that’s going to change soon. Nut butters are definitely my favorite topping. (:

  23. Yummy! Those pancakes sound amazing! I have coconut flour sitting in my kitchen and have had no idea what to do with it. I think you answered my question! I love PB on my pancakes and some sugar-free syrup doesn’t hurt either! ;)

    • Definitely try these out. I can’t believe you don’t use your coconut flour much, I seriously use mine everyday haha. I love it. But some brands can be not so great.
      Nut butters are definitely tops for pancake toppers, agreed!
      That reminds me, I need some more sugar-free syrup

    • Haha, I know. Burning Love is just the best. I can’t get enough recently. Or the bachelorette. I’m reality TV obsessed. It’s bad.

  25. your pancake looks so hearty and amazing! totally reminds me of one i cooked inc ollege with a friend. well, we cooked several :P out of flavored oatmeal packets! such a perfect idea b/c it infused the flavor of the packet into the pancake!! we did banana and cinnamon. yumm. banana and coconut flour sounds like an awesome combo! also i have way too many LBDs so BCDs are right up my alley. i bet you will look GREAT in yours! i bought a lot of stuff on thursday too. just wait til you see today’s fashion friday!

    • Yum, those pancakes sound dang good! I used to always cook pancakes with my roomies in college. Oh the good ol’ days ;)

    • Clearly I have a little shopping problem haha, who buys the same dresses in 3 different colour?!
      I used to never like pancakes, I think I OD’d on them in college. Now I’m back to loving them, thank goodness!
