Green Dough + Burgers

Hello, beautiful people!

Happy Thursday!

This morning was met with a busier start. After eating breakfast, I quickly headed off to Starbucks to grab a much needed coffee. I’ve been enjoying the simple things in life. The weather, family, friends, and wonderful summer foods at the store. I’ve also been making sure to rest more and get less stressed about these simple things.

(It’s all so true)

Oh so wonderful.

For dinner, I enjoyed a wonderful new turkey burger recipe.

I picked up some ground turkey at the store earlier this week since it was on sale, and decided today I finally make something with it.

Almond-Coconut Crusted Turkey Burgers

  • 420 grams (or 1 pound) extra lean ground turkey,
  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • pinch of salt
  • 1 tablespoon coconut oil
  • 1/4 cup egg whites.

Mix together the flours and salt.
Form the ground turkey into 4 separate burgers.
Coat the formed burgers in the coconut/almond mixture.

Heat coconut oil over medium heat and cook the burgers in a pan for 6-7 minutes on each side, until cooked throughout.
Finished.

Turkey burgers are a big staple over here for protein options. The flour combos went really well together and definitely gave the turkey burgers some much needed flavour.

I ate the burgers alongside a huge pile of my favourite roasted veggies and some goat cheese. Nothing you haven’t seen before.

Backtracking to the afternoon, I had a craving for some dough. I quickly mixed up a batch of “cookie dough” to enjoy as a snack.

Let’s discuss this for a minute.

Yes, it looks totally bizarre because of the florescent green colour. I swear it is totally delicious. The chickpeas give it its thick texture, with extra protein punch, and the coconut flour and protein powder give it delicious flavouring. Just trust me, its awesome.

Green Cookie Dough (serves 2)

  • 1 cup garbanzo beans
  • 1/2 cup cottage cheese
  • 1-2 cups fresh spinach
  • 2 tablespoons protein powder
  • 1 tablespoon coconut flour
  • 1 teaspoon nutritional yeast
  • 1/4 cup pumpkin
  • 1 teaspoon vanilla extract
  • 20ish drops vanilla stevia + 1 teaspoon stevia granules

Blend everything in a food processor and enjoy. The added spinach was inspired by my green loving friend, Kristin.

I topped mine with a little cashew butter for some healthy fat action. It was all kinds of fabulous.

I don’t know what else I will have planned for the day yet, possibly going out with some friends later. We’ll see what turns up.

What’s you favourite cookie dough recipe? Do you enjoy creating healthy alternatives to your favourite indulgent foods?

Have a wonderful day all!

  1. what a cool way to cook a turkey burger! I just got some rice flour coating to make stuff like that so I can’t wait to try it. Love the green monster!

  2. That is so true, I always read blogs while drinking my coffee :-)

  3. wow that’s so interesting :D I also never thought or heard of a crusted burger before! very creative missy ;)

I love the poster! Coffee and blogs are some of my favourite things too.

  5. Yum! Those turkey burgers sound like they’d be pretty good! I need to try out that dough… I’m a huge fan of Stuft Mama’s doughs, so I’m sure I’d love this one too!

  6. Oh wow those burgers sound divine!! I’ve been obsessed with almond flour lately, so I’ll have to make those! :)

  7. oh wow I never would’ve thought to do that with a turkey burger? did it come out sweet-ish? love the cookie dough recipe too, the real stuff is so good but all the chemicals in it make my stomach freak out haha.

    • Not really that sweet, maybe a little of an added sweetness to it.
Haha, yes definitely real cookie dough makes my stomach flip flop!

  8. I need to try that green cookie dough! Sounds like a really good recipe and I love the ingredients you used! And coconut flour in your turkey burgers…I’m sold! I want one now :)

  9. Mmmm goat cheese! That green stuff looks a little scary but I would give it a try :)

  10. I hear you, a day without coffee and blogs is a sad day!

  11. Love the turkey burgers… coconut flour is a great thing to add! I am sure it adds such a good taste. Green cookie dough looks awesome, too.. I swear you add coconut flour to ANYTHING and it tasts like cookie dough. Even when I add it to greek yogurt, I tell my boyfriend: “omg nick you have to try this, it tastes like cake or cookie dough!!” haha!

    • Yep, coconut flour is like a magical ingredient that makes anything taste delicious!
Haha, same thing with the yogurt+coconut flour. And it gets super thick too, I love it!

  12. Girl you got me hooked on making my own burgers( and lots of other food actually), I adored your last recipe for them , so I will definitely try these. It was only a matter of time before you incorporated coconut flour to your burgers!
You’ll think we have absolutely NOTHING here( oh so true), but I can’t seem to get ground turkey in the shops(WTFrig!), so iv been grinding up my own chicken to make the burgers.

Iv been eating a bowl of dough/batter/dip/whateveryouwanttoallit everyday cuz I’m addicted- l love the stuff ,& iv tried tons of recipes. Lately Chockohlawty blogs creations hold No1 spot in my heart. She kinda uses sweet hummus as the yogurt/milk replacement in overnight oats , sorta. Its literally like a delicious bowl of chewy ,nut buttery dough- but not raw dough , because I don’t like that.
    Xxx

    • Haha, I know right. I think every recipe I make has coconut flour in it.
      Clearly I have a problem.
Wow! That sounds super interesting, I need to go and try that out asap!

  13. Definitely intrigued by those burgers – I love the coconut/almond combo but never thought to try it with turkey!

  14. Some people get grossed out when foods are green but it’s actually the opposite for me- it’s a turn on! haha Looks interesting and delicious

  15. GENIUS! using almond flour to fry your burgers in is freaking fantastically genius – i’m pretty sure im doing that now. i’m bad at frying burgers though because i never know when they cook all the way through and i always end up burning them!

    • I usually end up burning mine as well! Especially because I’m scared they won’t cook through. They still taste good slightly burned though hah

  16. that is so neat!!! BOTH recipes I totally want to try. Way to be creative girl!

  17. I know this is weird coming from the person who made PB & Jeggs… but the chickpea cookie dough is weird to me! I guess I just need to take the plunge and do it…

    • Haha, it definitely was weird to me as well at first. I thought it would taste the worst. The first time was not so successful, but the second attempt seemed to taste super good!

  18. I love Mama Pea’s dough, so I def am going to try this one out!!

  19. Mmm does look sooo weird lol, but I know it tastes good! Anytime you add spinach, well it turns into something the hulk might eat! haha, but again chalk-full of nutrients and obviously you don’t taste the spinach :)

  20. That turkey looks amazing. I can just imagine with the almond and coconut…mmmm! And I love that you put nooch in the dough. I love nooch in sweet stuff. It just adds a little salty-nutty taste. Have a wonderful weekend my dear!

    • It totally brings out the sweeter flavour and I love the nuttier taste to it too!
Have a wonderful weekend as well!xo

  21. Stephanie says:

    You are so creative, Lisa!!
I’m relatively new to your blog, but I always look forward to reading your posts! Yours it definitely a favorite blog of mine at the moment :D
Hmm… now what flavor protein powder did you use in the Green Cookie Dough?

    • Awe! Thank you so much!!
That is so sweet and nice to hear:)
I used sun warrior vanilla! I’m sure any vanilla flavoured protein powder would work though.

  22. I’m so proud of you for focusing on stressing less and just enjoying life. It’s so important. And life is beautiful when you allow it to be!
I’m sooo intrigued by the green cookie dough! I don’t know how you come up with all of these amazing concoctions! I can’t wait to try this one. (:

  23. Stop it with the green cookie dough! I think it’s genius! I would swap Fage for the cottage cheese…definitely trying!

    • Oooh greek yogurt for cottage cheese would rock! Definitely going to do that next time!
I’ve bookmarked your cupcakes to try, they look SO tasty!!

  24. You are so creative in the kitchen girl! Just coming the almond & coconut flavor, that turkey burger has got to be nothing but amazing!! Come cook for me pleaseee!!!
