Protein-y Eats and Easy Dinners

Good morning Monday!

Hope your weekend was pleasant!

As much fun as the weekends are, I enjoy Mondays because they are a fresh start to the new week. Tuesdays on the other hand are not my favourite.

The weekend was filled with gorgeous weather (well on Saturday), fantastic friends, and delicious coffees. Things fun times are made of.

Craving something with a little crunch, I went with toast this morning.

And had this masterpiece to eat.

Ezekiel toast topped with protein frosting and the easiest homemade blueberry jam.

Just mix frozen blueberries in a microwave safe bowl, heat for 1 minute, allow to cool a little before mixing with stevia and a tad of lemon juice.

Who watched the Bachelorette last night?! I was happy with her choice, but felt so bad for her and Arie when they went through that super duper awkward breakup.

I also got my package filled with marvelous coconut butter. There is nothing more divine than this stuff. I highly recommend you pick some up if you see it in the store. Its heavenly, truly! Especially since its the type of butter that doesn’t get stuck to the roof of your mouth when you eat it. If you know what I mean? No, maybe…well this is awkward.

The weather looked like it would be okay, and I wanted to do some light activity, a walk seemed to be fitting. Wouldn’t it be likely that as soon as I stepped out the door it started raining. If you know anything about me, I don’t do rain. Not my thing…so back inside I went.

Before my attempted walk , I had made a snack of yogurt, berries, and raw cashew butter. The strawberry obsession is still going strong.

I came back and caught up on Big Brother, this season hasn’t been too great so far, but I have high hopes considering I usually love that show every year. Dang, I wish Rachel was back. That girl is just hysterical.

To warm my soul for dinner, I ate a serving of broccoli slaw, spaghetti squash, turkey burger, and marinara. I ate it along side 1/2 an avocado.

I have an abundance of spaghetti squash right now, I bought a few and then my parents brought me home a few, so now I’ve got to use them up. At least they last for a while!

I felt the need to represent, so have my pre-ordered shirt all ready. I’m pretty excited about the pink colour! If you didn’t notice I like pink.

    • It is SO awesome! Me too, I just love the pink colour of them of course. I love to be obnoxious with the bright colours at the gym

  4. I still have yet to try coconut butter.. and your toast with protein frosting looks good! I am sure it makes it so much more filling with the protein. I totally stayed up for the bachelorette – I love her and Jef! Do we know what he does? I really see them working out.. or I’m just a cheese-ball and want it to because I feel like I “know them”.. LOL

    • Yeah, definitely makes the toast more filling with added protein that way!
      I swear you need to find coconut butter, its so dang delicious.
      Haha, I know I feel the same way about their relationship!

  7. TOtally loving your breakfast, I love easy eats like that. I have a spaghetti squash sitting on the counter– will today be the day I finally make it for the first time? Maybe…. ;)

  9. i don’t work right now and I’m going back to school in September, so for the next six weeks I don’t have anything against Mondays whatsoever. :-)

      I’m thinking of leaving my job for something better, so I’m pretty sure I’ll be in the same boat!

  10. Mmm, I love making jams like that- especially good for topping oats I think.
    I would have been sooo excited getting coconut butter in the mail( getting packages feels just like xmas to me)! I have tried coconut butter although I can’t buy it here *sniff*, and agreed, it is devine, truly:). Especially good for topping oats I think… Wait, I already said that.

    Oy, its raining here too, BIG time:/. I got comletely drenched whilst riding my bike to go somewhere this morning. My trousers( I suppose you’d call them pants?)Were all stuck to my legs, eww.

    • I can’t believe I’ve never tried jam on oats! Why have I not…haha, I need to fix this asap!
      Totally agree about getting packages! I squeal like a little child when I receive them!
      Oh boo for not being able to buy it there. You are missing out on some good foods! I actually usually order mine from iherb because its super expensive here!
      Ick, I hate when pants do that when they get wet! Awful feeling.

    • I definitely agree! Its devastating when unfortunate preventable events occur like this. Makes my heart hurt so much.

  15. I make jam the same way, only I just call it melted fruit. LOL! If you have the lemon or orange flavored stevia, that’s really good with berries too!

  16. Loving your eats! Such TV drama last night! I knew it would be Jef but man did I feel sad for Arie. He seems okay now though. Are you watching Bachelor Pad tonight? I totally am. No shame. ;)

    • Oh you know I’ll be watching Bachelor Pad :) So excited.
      I felt bad for him too, its hard not to when he gets crushed that way!

      I think it could actually taste good in just about anything.

  18. I could not agree more with that last bit you wrote and the shootings in Colorado, just so awful :(
    On a happier note, I do enjoy coconut butter but not as much as others seem to! It’s more of a once-in-awhile thing for me… but a delightful choice when Im in the mood! I still need to watch the final full episode, although of course I do know what happens, and yep, I agree with the awkwardness that it was!

  19. I said the same thing about Monday’s in my post this morning! I love them. It’s a brand new start and the possibilities are endless.
    I literally laughed out loud at your rain comment, by the way! I can’t stand rain. One of the many reasons I love LA- it only rains a few times a year!

    • I think I need to move to LA. I’d love those rainless years. I swear it rains here almost everyday. Its terrible;)

  21. I love Mondays too! It’s always good to start a new week. I’ve always hated Tuesdays because I had 8:00am chemistry labs for a million years…it’s been a year since I graduated but somehow I still automatically hate Tuesdays haha. Someday I’ll get over it :-P And OMG coconut butter! I haven’t ever tried that stuff, there’s no place that sells Artisana near me…maybe I’ll break down and order it, because I really want to try it (and ya i know what you mean, peanut butter sticks to the roof of your mouth! had that issue since I was a kid haha!)

    • Haha. Totally agree on Tuesday’s! It used to be my worst class day, and now the hatred has just stuck since then. Too funny.
      Oh goodness, you have got to try it out! I can’t get it in very many stores, or its very expensive so I order it online at iherb. So much cheaper there!

  22. We are tv twins. I definitely was rooting for Jeff. He is just adorable. And Big Brother is one of my favorite summer shows! I hope it starts to get a little bit better too though. Fingers crossed!
