Good morning babes, how is your day going so far?
Last night, I got a glorious 10 hours of sleep last night and it was so needed! Ah, feeling refreshed today.
I awoke with a large craving for coconut, so luckily I had some added into my morning breakfast bowl.
I changed up the usual egg whites oats this morning by using 1/4 cup buckwheat hot cereal, 3 tablespoons coconut flour, chia seeds, egg whites, cinnamon, and peanut flour paste. The coconut flour made it taste cakey. So delicious!!
When I add toppings to oats I always savour those for the last bite.
Next up, my sister and I headed to Starbucks for a little sister chat. It was nice to be able to catch up a bit.
Okay, I really need to buy a coffee maker. I think with all the money I spend on my love I could have bought 17 coffee makers buy now, but I always say I can’t afford one. It just seems like it would be an expensive purchase at one time, even though I spend tons of mula on starbucks. What to do, what to do?
I kind of wish it was okay to have my place smell like coffee, I just love that smell. That would be rad. But then no one would probably come over.
Later on, after the day so quickly passed me by! I made myself a quick and delicious dinner.
Kale chips, roasted cauliflower, chickpeas, served with a side of the best and ripest avocado (I can’t stop eating avocados lately!), also had a small microwaved sweet potato on the side.
These were cooked to my perfection. Love when it turns out that way.

Have you noticed that such a simple statement of the face can make such an impact on the day? You know how some think you “fake it until you make it”, well sometimes that really works. As soon as I put a happy face on my mentality changes for the better. How I present myself on the outside reflects how I am feeling on the inside.

Smiling can be contagious, it can improve your day and maybe even make someone else’s day more bright. Not saying that just by smiling it will be a life changing experience, but you do have the ability to make your day better.

If I wake up in a grumpy mood, something that fills my love tank is to just put on a smile and even go out and buy the persons coffee behind me in the line. You’d be surprised how good it feels to do a good deed, such as this little one.
Some people wake up in the morning and instantly want the day to come to an end, why not celebrate life with such a simple thing. Just a smile from a person can instantly improve my day.

I do the same thing with toppings, haha! But definitely buy a coffee maker. You will end up saving so much money! You don’t even have to buy a really expensive one like a keurig. Just get a regular one, it’s just as good!
It’s so true about the smiling. I usually try to look on the bright side of things too, so that makes it better.
Its so true. I’m just afraid I’ll buy a bad coffee maker and it will be a waste. I really should look into different one’s though and get myself one. I’m glad you always look to the bright side!

i love the roasted cauliflower and kale, some of my favorite foods alive. smiling is contagious, and laughing does the trick as well. my coffee maker was my best 20 buck investment ever.
Really only 20 dollars! Okay, I definitely need to look around! I spend far too much on coffee I’ve determined. Those are some of my favourite foods as well!
SO true! I find that if I wake up on the wrong side of the bed, but fake a smile in the mirror, it really does brighten up my day and get it back on track!
Starbucks should makes candle that smell like their coffee…I have a feeling I know who’d be the first to buy it!

I agree that you should buy a coffee maker already! Maybe it should be on your Christmas list. My dog makes me smile every morning because he licks my face to wake me up.
That’s a great idea! I may put it on my birthday list, since that comes a bit before christmas! You have a keurig right? Are they very expensive, because they always look the best to me! I want a dog so bad for that reason haha

I love Elf too! I watch it probably at least 4 times throughout the holiday. I just never get sick of it. Coconut flour definitely rocks in oats, its so doughy!
You should buy a coffee maker. Ours is a cheaper Coffee Mate one and it’s been kicking for 6 years. It maybe cost $35? I don’t think you have to spend a ton of money to get a good one.

I couldn’t agree more about the “fake it till you make it”.. me and my bestfriend alex always say thats the key in life, lol. It’s so true that if you just smile and force yourself to be in a good mood, more often than not you will find yourself actually IN a good mood.. funny how that works. I used to be such a miserable person until I realized that I had a choice to be that way… so I started to make a conscious effort to be grateful for what I had and appreciate of my live.. it’s made a huge difference for me personally and even self-confidence and self-esteem wise. Great post! and would you believe I have yet to try over night oats? I love coconut flour so I really need to get on this!
It is definitely true. I find when I just try and be happy and look at positives my mind just goes over that way.
I used to wallow in my attitude and complain about everything, but just reversing my thoughts and realizing they don’t define me has been a huge step in improving these and making me a better person all around!

Iv actually never tried coffee- I just knooow I would get totally addicted- but I am sorely tempted to give it a shot! So many people( & you obvs) ,love the stuff , and say it helps get them going. But I already drink WAY too much diet coke, so my caffeine intake would be even worse, and I don’t think my bones would thank me…gah, decisions, decisions:/?
So yeah, anyway, I’v no idea if you should invest in a coffee maker or not( I’m great help, haha). But a daily starbucks does seem like a nice treat, and pretty much part of your life + I imagine the starbs coffee would taste better being made by a barista n’ all, decisions, decisions…:p.

get a coffee maker!!!!! i used to spend SO MUCH $$$$ on coffee. coffee makers are really inexpensive these days. you dont have to get some huge fancy thing. go on amazon and get a cheap thing. even the crappy machines work well. and to satisfy your starbucks in-store void, you can buy the beans there (they will grind them for whatever coffee maker type you have) and you get a free coffee whenever you get a bag of beans. and its so much more green too!! ok? now you have to do it.
I definitely am getting out there and looking for a coffee maker! Especially since I know you are a fellow coffee lover! What type of maker do you have? I want to invest in a keurig, but may have to wait for my birthday to ask for one of those expensive ones! True about being more green as well! Now that you’ve said this, I’ll get right on it;)
we have a hamilton beach one, but honestly, theyre all the same. just get one that makes a decent number of cups. they are so cheap nowadays, you can get them for 25 bucks. seriously. we had a cheap one in nyc that was still programmable and had a re-heat feature and it worked great (we left it in nyc because we didnt want to move cheapo things that we’d be getting in ca for our wedding).

The sun is making me smile! I always forget how coconut flour adds that wonderful extra cake taste to things – I have to start adding it to my breakfast cookies in the morning. So yum!

I could not agree more Lisa! It can make such a difference with a simple mind shift, or even physical action like smiling! I will admit though, sometimes I am honestly too upset and miserable to “fake it until I make it,” those are the tough days for sure…. but most of the time I can turn things around!
I used to really struggle with feeling positive. I did suffer from pretty bad depression at a time, so that was really hard, if not impossible to do. I think once you get things more sorted out with therapy its a lot easier to open up to the idea of being more positive, but it definitely takes work!
I so agree!! Some mornings I have a lot of trouble getting out of bed because sleeping seems easier than facing the stresses of the day. I’ve learned that those are the days when I have to make a conscious effort to find things to celebrate, or do things that make bring me even small bits of pleasure (like treating myself to starbucks instead of brewing my own coffee at home!). it really helps!
ps: I finally had to bite the bullet and buy a coffemaker for my house this year. My dad sat me down and showed me how much i was spending per year buying coffee at the ‘bucks every day, then he showed me how much I would save by buying like a $50 maker and ground coffee…the difference was HUGE!! I got a more expensive maker that you can set to brew automatically in the morning, and then when I get out of the shower my kitchen really does smell heavenly. But like I said, I still treat myself every now and then…there’s nothing like having your favorite barista make your favorite cup just the way you like it
I’ve definitely suffered in those darker times before, and while its definitely hard to get started, once you get used to smiling and thinking more positively it comes more as second nature.
I still love it, I just can’t love it as much as I do now hah

Its just the best smell! When perfume counters put out coffee beans to get rid of the perfumey smell. I always just smell the beans. I’m so cool;)

And you should definitely invest in a coffee pot! I bought a Keurig a few months ago and, even though I still go to Starbucks alllll the time, I use it quite a bit. Plus, they make Starbucks K-Cups, along with tons of other delicious flavored varieties. I’ve definitely already gotten my money’s worth out of it. (:

Awe that is very sweet of the hubby! I can relate to feeling friendless in a new place, its hard to meet new people at our age. At least you have online friends:) That makes it a tad better. Haha, that still sounds delicious! Blended bananas rock, especially with cinnamon. I love that spice.

Just your annoying mom. I love your positive attitude too and I always want you to know that I think you are smart, funny and a beautiful human being. I agree with your blog friends that a lot of what you put together is yummy, creative and healthy. Please, please (I say this to all of you out there too) don’t get stuck in believing that eating healthy food alone makes you healthy. Health is also about balance and flexibility. If you are too sick to work or go to school how is eating healthy working for you. I know that Lisa knows that but I also know that ED is pretty tricky. ED does not want you to change. Look for objective evidence of health in the areas of work, school, friends, relationships, physical (energy , having a period, etc). Is the focus on “eating clean” another way ED uses to trick you? Just wondering….
