Snacking Success

Morning everyone! Sadly, the weekend is over.

But, a new week has arrived, which means a fresh start! How was your weekend? Great, I hope.

It’s no secret that I love my overnight egg white oats, so what better way to celebrate a Marvelous Monday morning then with another batch of them.

*overnight oat bran with added hemp seeds, banana, and peanut flour paste on top*

Funny enough, as a child I hated oatmeal, or any sort of healthy item. My parents could not get me to eat anything whole wheat for the life of them, and I hated every vegetable out there, except for frozen peas. Yep, the only veggie I ever ate were frozen peas.

Now, I eat oats or oat bran in some form every single day, I guess its just sort of a habit now. Its just a food I reach to and know it will keep me filled up and thriving for the rest of the day.

My meal was accompanied by coffee. I don’t know what I’d do without my gold card. This is what mornings are made of over here.

I’m getting off to an extremely productive day so far, I’ve already crossed a majority of things off my checklist, which makes me excited that I have the rest of the beautiful afternoon to enjoy the day.

Marvelous Planking….

I’ve been working on being able to hold plank for 5 minutes. Thanks to Lori and Michelle for setting up this challenge. I thought it would be good to have a fitness goal, even if it’s small, just to have something to work towards. I finally got to that 5 minute mark and am now going to try and extend it further!

I’m also hoping to order an equalizer soon, so I can work on pull-ups. I can’t do nearly enough right now.

Marvelous Weather…

And we have a tremendous forecast this week! Yay for summer! You probably really don’t care about the weather where I live for the week, so I’ll stop talking about it.

Marvelous Snacks…

I came up with a new favourite topping for yogurt, oatmeal, dipping veggies/fruits, or using it to top my protein muffins.

Protein Coconut Cream.

I just mixed 1.5 tablespoons each of coconut flour and protein powder, added a teaspoon of coconut oil (you can omit if you’d like), a few drops of liquid stevia, and then mix in about 3-4 tablespoons almond milk until well combined.

I refrigerated it for a few hours after and the coconut oil had given it a nice texture once chilled. It’s splendid tasting.

I also tried making it into bar form, but added in a tablespoon of peanut butter to make it firmer. I forgot to picture is, but this was pretty dang awesome. And makes it a more suitable snack.

Marvelous Nails…

In the afternoon, I went outside to relax and paint my nails a lovely coral colour. OPI, baby.

It always feels good to get outside for a little bit, soak up some vitamin D, and this way I don’t get that nasty nail polish smell permeating through my place the rest of the day.

Marvelous Sunday Dinner…

*roasted broccoli slaw with a dressing made with mashed avocado, nutritional yeast, and hummus, had with an un-pictured homemade goat cheese stuffed turkey burger*

Dinner while basking in the sun, okay that’s a lie. I actually really dislike eating outside because of the bugs that like my food.
Hello bugs, this is my dinner not yours. I don’t want you up in my grill while I’m enjoying my meal. So I sat inside with the screen door closed, this way I could still get a view of the gorgeous outdoors.

Close enough.

  3. Holy crap, it is FREEZING where you live!!! I’m pretty jealous. It’s like 98 degrees here and the humidity makes it feel like 117 ha ha ahh. I didn’t really eat healthy when I was younger either, I ate crap. But I actually ate anything. Any veggie, sushi, and a bunch of stuff that kids usually hate. I was weird. Aaaand, I love pretty little liars.

    Everyday I have a salad for lunch. Usually it’s a veggie one topped with turkey, but some days i’ll add tuna. I know, i know.. pretty crazy! haha.

  5. wow 4 minute plank that’s impressive. I miss oatmeal so much ugh I’m jealous. I cut out grains and dairy 3 weeks ago because my digestive system is sensitive and I feel so much better with out them. However I am just craving comfort foods like oatmeal :-/

    • Oh wowza! Don’t think I could cut out grains for that long! Hopefully it fixes your digestion. I’ve heard people can get an allergic reaction to grains for a while, but after a while without them it can fix the digestive issue! Have a great day!

  6. i’ve been loving that coral color lately! i just got my toes painted coral at my last pedicure, and every piece of clothing that i see coral, i want! :)

    • Same here! Its insane! I instantly see coral and just want it that second haha. Its just such a pretty summer colour!

  7. those are some great snacks, I want to try the coconut flour one but I have yet to buy coconut oil. I need to get on that. Your planks are no joke, I need to get back into planking soon!

    • Definitely try out coconut oil! It is delicious, especially when used in baking! Yah, I completely gave up on planks a while ago, but decided I really could focus more on my abs haha. I love the challenge now!

  8. 5 minute plank?? you go girl!! this is so random, but how do you get your hair so beautiful? I think you need to do a post on how you get your hair to look SO DARN GOOD!!!

    • Thank you! That is so sweet haha. Well, my sister is a hairdresser to be so she definitely teaches me her ways. I just make sure to have my hair washed at least 1 day in advance, so its a tad “dirty” (that sounds gross) and then just section in into 3 different parts and curl it with a thick barrel iron. Maybe I will do a tutorial reading that makes it sound complicated hah

    • Added peanut butter is definitely a great call! Oooh, I’ve been loving avocado so much lately! Its so perfect for the summer as well!

    Okay, so I did your workout you posted in your Fit Fri post- LOVED.IT. I went out to buy skipping ropes on Friday and did it that night at the gym, and then again on Sunday! It was TOUGH and the time flew- my kinda workout- I sweated up a storm.
    You have inspired me to take on my own little fitness challenge( maybe the 5min plank). I sometimes feel a bit aimless in the gym cos I’m not training for a race or anything.

    Oats/oatbran make an appearance at least once a day in my life too- bananas, nut butter, carrots and squash tend ALWAYS show up as well.
    Oy, that dressing on your dinner sounds ahmaaazing! I want to slather some roasted squash in that:).

    • Yay!! So glad you loved it! Its definitely a favourite of mine too!!
      It was definitely a tough one to get through. Try out the 5 minute plank! I totally didn’t think it would be so hard, but it took me a while to get to it.

    • I know what you mean! It ends up all over my fingers when I paint it myself, that is one thing I am no good at haha

    I just started #plankaday yesterday! I don’t do them very often so I can’t hold it that long. Nothin’ like new goals!

    • I’m loving trying to set up goals! I was never a goal person before, but realized I need to set them up. Haha, I agree now that peas are the worst, I can barely stomach them now. Probably because I OD’d on them as a kid;)

  16. Ahhh you’re on the broccoli slaw bandwagon now huh?! I love it. If your grocery store ever sells “rainbow slaw” (mine is right next the broc slaw) GET IT. It’s even better than regular broccoli slaw. Basically it includes a mixture of cabbage and a few other veggies and really makes it tasty awesome!

    and i love that recipe for frosting! It’s been a while since I’ve had any coconut flour. I miss it! Time to bring it back!

    • Oh yess! I’ve been on it for a while now, just didn’t post pics because I was always burning it hah. I just looked for it today and they didn’t have it! But the grocer guy said they usually do, so next time I will get on that one! That does sound pretty awesome.
      Coconut flour rocks. I swear I use it in everything!

      Haha, thank god you watch it too! It is such an awesome show I think!! I so agree on it being too scary for ABC, there are definitely many times when I’ve screamed or jumped haha.
      Yes, I usually put the “frosting” on the bottom of the bowl, and then eat the muffin over top and take a bite of it with each bite of the muffin. Hmm..I don’t even know how to describe the texture haha. Its sort of grainy-ish but also smooth because of the protein powder and oil, but that doesn’t make it sound delicious and I swear it is:)

  18. love that coconut cream! i’ve been mixing coconut oil and protein powder for a low carb protein butter i can use as a dip. so good! i can’t wait to add in some coconut flour, too! :)

    • I’ve done that before with the protein powder and coco oil! It is really tasty, especially with added cocoa powder :) The coconut flour rocks in the mix!

    • Haha. I can’t believe you don’t know! If you register your starbucks card online, you get a star for each purchase and after a while you earn a gold card and it gets you free bday drinks, syrups, refills on teas and coffees, free soy milk, they send you special offers every so often, and every 15 drinks you buy you get one free, there are possibly other ones that I can’t remember now haha.

  21. I can totally relate about the oat bran – I eat a banana every single day in my breakfast because I just love them so much!

    And that protein coconut cream looks awesome! I bet that would taste so good on my morning oatmeal. Mmm. :D

    • Haha I know, I’m sure people get so sick of seeing my same breakfast everyday. Oops, guess I should change it up every now and again;)

  22. Ahh…Congratulations on your 5 minute plank! That is so awesome. I’ve actually never tried to hold a plank for that long. I usually get to 2 or 3 minutes and stop. I’m definitely going to try this for a new challenge!
    And girl, you KNOW I can relate to your Starbucks obsession! haha. My gold card is my lifesaver!

  24. So let’s see, checklist for everyday seems like Starbucks, oatmeal, and nail polish. lol Thank god for summer I guess! I’m having trouble coming up with new things to do too — some days I literally just feel like laying outside reading a book… oh, and then napping!

    • Haha. Or at least some variation of that routine ;)
      I’m hoping I get back to my work schedule soon, or at least sign up for personal training or nutrition classes. Summer can be monotonous at times
