What I Ate

Good morning, all! Happy Wednesday.

Half way through…Which also means its What I Ate Wednesday time, just makes the day a bit better:)

I had an appointment at 9 and spent a little too much time stretching at the gym, so was running a little behind this morning. Again, didn’t sleep that well last night. I guess it will take a little bit of time to get back to a normal sleep schedule.

I also have been feeling SO thirsty. I’ve been drinking my face off. It’s a tad ridiculous. I have those big water bottle/cooler type things in my place, and have gone through them extra fast the past couple of weeks. No idea why.

Since I had to be out the door earlier, I made sure to have breakfast prepped the night before. While preparing this, I decided to get some multi-tasking in and also cleaned up the kitchen. One chore less to do this afternoon. Don’t think I did the best job though, hard to clean properly while your also mixing and washing things.

7:30 – Breakfast:

My favourite egg white oat bran, with added sliced berries and peanut flour paste. It was kind of outstanding.

After my appointment, my mom and I headed to starbucks for some much needed caffeine. You know how it goes.

BFL, or breakfast for lunch is what was on the menu today. I was craving eggs so cooked up an omelette. It was a sad attempt.

Lunch – 12:

This had 2 eggs, 1 egg white, which I stuffed with a ton of spinach and green peppers. Had alongside a slice of ezekiel bread with homemade blueberry jam. Eggs and fruity jam just goes so well together. One of those weird combos that just works.

Classic and simple.

For some reason, I get super lazy about making lunch. Dinner is a free for all for creativity, but my passion for fun food is definitely not around come noon time. Anyone else?

3 – Snack:

Avocado Pudding. I’ve started to dislike the word pudding, it sounds weird.

  • 1 small or 1/2 large avocado, 1/2 cup almond/coconut milk mix, stevia, 1/2 scoop protein powder, 1/2 tablespoon cacao powder, 1/2 tablespoon coconut oil, 1 cup spinach, and 1 banana all blended.

Tastes so dang good.

Smiles spread across as each spoonful entered my mouth. The avocado, banana, and coconut oil provide a nice smooth texture to the smoothie, and makes it super creamy.

Dinner – 5:

Underneath is my fabulous marinara sauce. Still need to get that recipe up for you all. Its pretty simple though, I’m sill waiting on my camera from my sister so I can get a proper picture of it…

Roasted/burnt broccoli slaw, zucchini, leftover tempeh, and marinara. Dressed up with avocado post picture. Yes, I am now obsessed with avocados.

I’m just about to sit down with some tea and possibly get creative with a new night time snack! We’ll see if I have any inspiration later on.

  3. Looks fabulous as always!!! I am in love with avocados so really need to try that pudding!! Best thing I ate yesterday was a slice of gluten free bread with peanut flour! Haven’t had bread in forever so it was amazing!

  4. As usual, everything looks delicious. Best thing I ate yesterday was broccoli & cheese stuffed tilapia. Simple, but yet so good. It could change after tonight though. Were having omelets stuffed with salmon and other yummyness. :)

    • Thank you! Haha, I have no clue how I do it since they are usually taken with my iphone. I’ve got lazy with taking photos with an actual camera!

  7. I love making breakfast for lunch. I has some quiche filling yesterday because that’s what I was making for dinner. So i guess I have 3 breakfasts :)

    • Three breakfasts sounds way better than two! I think I’d just be happy eating breakfast foods all day long!

  10. totally feel ya on the lack of lunch creativity – I usually just have the same sandwich every day, and then for dinner is when I cook up new stuff! Not sure why, but whatever, it works. And your omelette looks DELICIOUS!

    • I totally eat the same lunch most days. I try and switch up simply for the blog, otherwise people would get slightly bored seeing the same thing everyday;)

  12. Eggs and jam – oddly delicious combination. For breakfast I had two eggs on a piece of toast with havarti cheese and strawberry jam. Perfect combination of savoury and sweet. :-)

    • It for sure is an oddly delicious combo!
      I’ve had it with cheese before too and that is probably even better! People think I’m so odd, but it rocks!

  13. Your food is gorgeous, just like its creator :) .
    Jam and eggs is the jam( I normally chuck some cream cheese in the mix too). Its funny , people in blogland see this combo as pretty normal , and think nothing of it. But in real life(or whatever you want to call it) my friends and fam think this is whacko. Meh, their loss.

    I baked Alexandra@TalesOfAFreckledLifter’s high fibre almond bread in muffin form. I enjoyed one spread with coconut oil and strawberry jam- so yes, that was one of my biggests yums yesterday:).

      Haha. I know my family totally thinks I eat the weirdest things ever and look at me like I’m crazy.
      That bread looks awesome! I’ve been really wanting to make it, good to hear it was awesome:)

    • Its such a good pudding! My wallet is starting to hate me for all the avocados I’ve been buying.

  17. I loooove roasted broccoli slaw. I always let it burn a little… the crispies are the best part! :)

    • The crispies are totally the best part!! I always make sure to broil them for a few minutes. Love the crunch.

    • Its so weird to be so thirsty! I’ll be working and have to run to the back room to drink water, even though I’ve drank so much before.

  20. Avocado pudding is the BEST! I’ve tried several variations, but my absolute favorite is made with coconut milk (the heavier stuff from a can–makes it SO creamy!). I’d love to try it with coconut oil too…or coconut butter. (<—have you had coconut butter? it's life changing!). And I agree with you–"pudding" is an odd word. I'm not sure there's a better replacement for it though!

    The best thing I ate today was a repeat of dinner last night: raspberry-walnut-avocado-goat cheese-chicken salad with homemade raspberry vinaigrette. I think I could eat this meal every night for the rest of the summer and never get tired of it. :)

    • Oh, I’ve so got to try it with coconut milk! That sounds heavenly!!
      I am OBSESSED with coconut butter. I have at least 1 serving a day. It is crack in a jar. Holy yum.
      It totally is life changing haha.
      I need to buy some extra berries to try your vinaigrette, it looks so good!

  21. I know what you mean about being less than creative around noon, I feel ya on that one. Which is why i always have a salad or sandwich, although sometimes I put more of an effort in :) I have not tried avocado pudding, but I am intrigued by this! Hrmm we have none right now, but I am venturing to the grocery store today for some last minute trip prep and I shall look for a nice ripe one to possibly recreate for today! I shall let you know if I do :)

    • Yep, my lunches are usually the same thing daily.
      Definitely try avocado pudding. I know it sounds super weird, I thought so too! But, its delicious.
