Morning everyone! Happy Independence Day to those of you in the US!
Over here, its just a plain ol’ Wednesday…or not quite so plain. It’s time to celebrate What I Ate Wednesday.
My day started off dark, rainy, and early with a spin class. I got home and was super hungry and needed to get ready fast.
Insert putting my face on, breakfasting, and heading to an appointment.
7:30 – Breakfast:
Breakfast was overnight oat bran topped with cashew butter!
And then as I was leaving my appointment to the car, I fell down the stairs. Fun times!
I swear I just wrote about how I fell down stairs, clearly I have a problem keeping stable on my feet.
Whatever, no one was there to see me lying on the floor. No shame.
Lunch came at a later time than usual, thanks to the appointment running later then expected.
12:30 – Lunch:
Roasted kabocha squash with a shot glass filled with coconut butter and a side of greek yogurt.
Yep, more kabocha. I’m in love. My taste buds were begging for that orange squash. What divas.
Later, when I looked into the fridge for something to tame my sweet tooth, I realized I still had some of Ashley’s coconut muffins leftover. So I grabbed one to snack on.
Delicious.
3 – Snack:
Coconut muffin smeared in protein frosting. With a side of un-pictured berries. Thanks for the recipe Ashley, they’re great!
I tried going for a little stroll outside, but the weather wasn’t having any of that. If I hear one more person mention how ridiculous the heat wave is where they are living, I may punch them through the computer. I’d kill for some sunshine over here;)
5 – Dinner:
Socca topped with a little coconut oil and nutritional yeast. With a bowl of roasted zucchini and asparagus, plus a side of avocado mixed with nutritional yeast for dipping.
Scrumptious.

Following dinner, I was craving something banana-y. My computer thinks this is a word, cool beans. (Who came up with this saying by the way, it’s just awful).
So I pulled out the big guns…
8 – Snack:
Banana protein muffin with a mix of teff/brown rice flour, banana, stevia, and egg whites. Eaten with peanut flour paste and coconut cream.
I definitely got my eat clean, sweat dirty day in over here. Healthy = happy.

I hope you’re okay after the stairs incident! I can totally relate! I am the biggest klutz in the world and tend to have issues all the time with falling! I always just burst out laughing because it is so typical!
Haha, it is just the best squash I’ve ever had! Oh yes, everything is totally fine, I’m just clumsy. At least nothing was hurt! Me too, I don’t get embarrassed anymore because I’m so used to it haha
I absolutely love Kabocha Squash but I can never find it anywhere! I don’t think we have any Asian markets around here either – boo.
Aw man that blows! I am always stocking the Asian markets to see if they are carrying them. I look so silly with like 5 squashes at the till. I think people assume I’m a crazy squash lady;)
Love the shot glasses! What a great idea. I used to fall downstairs, upstairs all the time! When I was living in New Brunswick for university the winters were super, super icy. My goodness! I was sore all the time from slipping. Good times.
This morning I had an apple cranberry brown rice bake with kefir, chia seeds and banana on top! Pretty tasty. Morning snack of buckwheat muffin with some almond butter! I should try cashew butter.
Haha, oh man I can relate to when I lived in Calgary. I was always slipping everytime I stept outside.

Your overnight oat bran always looks amazing – do you think there’s anything at all that could be used instead of egg whites to create a similar amount of volume while keeping the recipe vegan? It would be wonderful to try it, I just wouldn’t want to lose the voluminous aspect (and protein!) by leaving the egg whites out but it’s a shame the recipe isn’t vegan (well, for me!)
I thought I was the only one who liked to take the skin off Kabocha Squash – I love the skin but it’s far too harsh for my stomach.
In fact your whole day of food looks delightful to me – I’d be more than happy to eat those meals every day!

Thanks! Hmm…that is a good question! I’m going to try experimenting and seeing if there is a way! I would suggest more chia seeds and liquid, maybe try blending in tofu for more protein and volume. But, I’ll definitely try and experiment!
I definitely remove the skin too! Way too much for my stomach and sometimes it tastes weird..like dirt or something haha.

Love your food. You poor thing for falling down the stairs. I live on the third floor of my apartment and I’m always freaking out that I’m going to crash and tumble down them when I’m carrying stuff. Then I’m like oh man if I break my leg who will help since it is a really small unit and no one is ever there lol
Haha, yeah that would be no good! At least I didn’t hurt myself! That’s the worst if you fall and have to wait until someone comes up the stairs to save you

I tried making socca like a year ago, didn’t like it, and haven’t made it since. But you are making me want to change my ways.
Oh and I wanted to tell you I made your pancake yesterday. LOVE. Seriously could not get over how good it was! It was really dense, filling and yummy- like a banana bread cookie dough pancake or something- topped with cashew butter(a la you) natch. I see many more of these in my future…:).

The weather finally improved today!
I didn’t like socca at first either! And then I had a bag to use up and eventually really liked it when I cooked it in coconut oil and had to top it with avocado or goat cheese!

It’s okay, I fall down a lot too. I live off socca’s. I don’t do oats or gluten so socca’s are like my “bread”.
I totally use them as “bread” as well! Since sometimes the ezekiel bread hurts my stomach, I’m guessing from the gluten. I totally love socca, its so awesome how it gets all bread like even though its just flour and water!
Can you cook for me? Please.

Don’t worry, it’s freezing in my part of the world. It’s my first winter in this town, and I never thought it would get this cold. I’m not complaining though! I much prefer this cooler weather than the sweltering summer.

And the coconut cream is just 2-3 tablespoons coconut flour with 1/4 cup-6 tablespoons almond milk, and stevia! Depends how much you coconut flour you use
