WIAW #16

Hello darlings! Happy Wednesday to you all!

Can I get a holla for What I Ate Wednesday time? Oh, you are too cool for that? My bad.

I ended up waking up about 20 minutes before my alarm and thought why not just get up and get moving. So, I drove on over to the gym earlier than normal and happened to forget the gym doesn’t open until 5:30.

Is that not so late for a gym to open? I feel like it is…

So I just sat in my car and sang to the lyrics of some songs…most of which I got wrong, until the gym finally opened. I hope no one saw me, because I’m pretty sure I looked quite awesome.;)

All being said, it was a great class! I love every minute of spin.

8 – Breakfast:

I was super hungry after class, so was glad I had pancakes I made the night before in the fridge waiting for me. Greek yogurt on top.

This pancake is totally scrumptious, especially when dipped in coconut butter!

After, I had to attend my therapy session, which went well. I’ll discuss more about this later. Whenever I finish up therapy, I take about 15-20 minutes and just walk around the area where the office is. It’s a very beautiful place, right along the water. I find it really relaxing to just take a break and absorb everything that we had discussed over in our session.

11:30 – Lunch:

For lunch I heated up a leftover turkey burger with roasted cauliflower and asparagus. I had a side of tomato paste mixed with stevia, and a little ball of goat cheese.

Later, I went to the mall and got my passport photos taken. Man, do those pictures blow. I really dislike that you can’t smile. It’s not a great look on anyone.

Once snack time came around, I was craving some simplicity.

3 – Snack:

Ezekiel bread with a coating of almond butter and a side of fresh blueberries.

I quickly ran to the grocery store, as I looked in my fridge and it looked pretty bare.

Naturally, next called for some dinner.

5 – Dinner:

Sorry for the extremely ugly photo…I just roasted up some leftover kale, tempeh, broccoli, and asparagus, with another round of a dressing made with avocado, hummus, and nutritional yeast.

Fresh and delicious.

8 – Snack:

Post dinner noshing included a bowl of coconut pumpkin cookie dough and a side of the Bachelorette.

I’m going to try and get to bed early tonight, since I’ve been staying up far too late the past couple of nights. I can’t wait to snuggle up in bed.

  3. Love the eats Lisa! My favorite meal is breakfast by far! I could eat it at every meal easily! I love the bachelorette and am devastated for Sean! He was my favorite by a mile! I do think her decision made sense for her though, she seems to have more of a connection with Jef and Arie. Now I’m rooting for Jef for her! But if it had been me…Sean all the way :)

    • Oh me too! I adore breakfast, I think I’m addicted to all breakfast foods. I was so sad that Sean went home as well! He is so adorable! I’m totally rooting for Jef now as well:)

    • I’d say those are my two favourite as well! Especially because sometimes my snacks can look a lot like breakfast anyways hah

  6. Those pancakes look delish! And that is kind of late for a gym to open…I think others usually open around 4!

    • That’s what I thought! Definitely weird to not have it open earlier. I don’t know how people who work early could get in a workout.

  7. So not happy about Emily’s choices. She should have gotten rid of Jeff. Sean was my favorite. He’s so hot!

  8. I go for walks after I have therapy too… haha it is necessary to unload my brain for a little while! I want to try that breakfast and with coconut butter, well something like that is ALWAYS good if you ask me :)

    • Yep, totally! I just can’t seem to get in the car and drive right away, especially when unloading on heavier topics. Coconut butter is always a good topping for any food, I’m convinced it could make dirt taste good;)

  9. Passport pictures crack me up. When I went to Israel this past winter, we had a great time making fun of all our pictures – it provided for some solid entertainment on our long flights. Pancakes are the best for breakfast – yours look delicious.

    • They are just not fun haha. I do enjoy sharing all our photos though, its definitely funny to see other people’s pictures. I guess then I don’t feel as bad;)

    No no, 5.3.0 am is not a late opening time for the gym- the only thing people should be doing at that time is sleeping IMHO. Haha, sorry , I’m a night owl NOT a morning person. I can’t imagine getting up at that time ever!

    I’m so happy your therapy is going well Lisa, and you are being pro-active in improving your life. It sound like it’s situated in a lovely place- I <3 taking walks with nice surroundings.

    You knooow I had 1 of your awesome pancakes yesterday as well- your toppings sound scrumptious, mine were too! I mixed cocoa powder, hemp protein, stevia, nilla and coconut oil into a paste- YUM!

      We are opposite, I’m definitely a morning person, have been my entire life, I’m on of those weird ones.
      Oh yum!! That paste sounds delicious! I need to get some more cocoa powder, then I definitely want to try it out!!

    I think my favorite meal is probably my bed-time snack, I always love ending the day with something sweet!

    • I definitely love my bedtime snack as well and breakfast! Both are my favourite. Or if I have kabocha for lunch/dinner, then actually that is my favourite hah

  14. I’m happy to see someone eating tomato paste like I do.
    WELL I knew she would ditch Sean. He’s boring and I don’t think ready for marriage. If she doesn’t pick Jef I might actually cry which I have never done before during this show. I just think they are the best together and he is a freaking doll.

    • I love tomato paste that way! No ketchup over here! I prefer the tomato paste way. I know, I swear if she doesn’t choose Jef I may also be in tears. They are perfect for each other!!

  16. i really really need to get some coconut butter fast! any suggestions on brand???
    and I personally love breakfast. I think I could eat it for every single meal. right now i am OBSESSED with peaches so peaches, greek yogurt, cinnamon, nut butter and some sort of grain is absolutely the way to go :-)
    i might have to switch to coconut butter, however, if I can find some :-)

    • You definitely do! It is honestly the greatest tasting butter spread I have ever had. Yep, breakfast I could so have for every meal as well! It is the greatest. I hope you can find some coconut butter, you will never go back, that is if like coconut hah:)

  18. I love breakfast!! always have! I smiled in my passport pic. I wonder if that is a new thing?? I have to go get my drivers license pic taken… ewwww.

    • Oh weird! I have heard some people can get away with smiling, like if the photographer forgets, but I think its unusual. Unless its a new thing, I have no clue hah. Oh no, I hate driver license pictures as well!

  19. I so know what you mean about passport photos – mine is awful! It was taken in the middle of winter when I was sick and pale, so I seriously look like a zombie haha. :P

    • Haha, I can relate to the pasty thing. But for me everyday of the year I am pale. I seriously never get any darker;) Its sad hah

  20. I’m seriously in love with your meals. They look so delicious. Kale is probably one of my favorite foods…ever. I know how ridiculous that must sound to most people but I just can’t seem to get enough of it! Plus, it’s packed with so many nutrients, how can you go wrong?

    And yay for spin! I’m glad you had such a great class! Getting back into spinning has been one of the best parts of my week. (:

    • Kale rocks! I used to avoid it so much when I was younger, because I thought it looked so weird, so now I’m making up for all I missed. Exactly what I think too!

  21. that red tomato paste looks super interesting! oh and that pancake!!! how nice it is to have breakfast ready for you when you get home from the gym. at the moment i am drinking lots of green smoothies for breakfast so i just stick everythingn in the blender- i used to take much more time and create different things but somehow a green smoothie makes me happiest at the moment :)

    • I love having breakfast as soon as I return, because I am starving by that point! hah. Green smoothies are another favourite of mine! They are especially good in the summer when its just too darn hot for anything else!
