Green Juice and Cookie Dough

Morning! I was up early once again. Anyone out there get nightmares and then can’t fall back asleep after? I had this dream about all these spiders and when I woke up it was 4 AM, and then I couldn’t fall back asleep. So, I just decided to be proactive and get the started day super early. Fun times.

This post will be super random, so be prepared for that.

To get some more energy, I relied on a morning green drink. I made a “juice” from the following ingredients:

  • 1-2 cups spinach
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 carrot
  • 1 handful kale
  • 1 cup water
  • stevia
  • 1/2 cup ice

I just blended it and didn’t bother to remove the pulp. So it ended up more like a thick juice. How delicious did I just make that sound?;)

I also thought that getting my veggies in mostly from juice will make it easier to add calories without “bulking” up my meals with too many vegetables. Because there is a point where your eating too many veggies and not enough of other nutrients and food groups.

I also attended a fun spin class! I love the energy in these classes, which makes it a bit harder to take it easy while everyone is going hardcore, but I managed alright.

Operation eat more calories has been happening. Still going strong, but must admit it is still really hard to keep up with this process. I just need to keep focusing on the long term goals at hand.

Stress is just getting the best of me at the moment, but I’m going to continue to power through.

It feels like I have a million and one things happening, so I’m trying to stay sane and calm and get things done without putting further stress on my body. That is something I could do without.

Right now I’m working on staying present in the moment, meditating each day, taking a step back from my anxiety and connect with my power.

I start to view things in a more positive light when I just connect with myself and I hold the belief that I deserve a successful outcome in life. I’m keeping my mind set on those beliefs.

In the afternoon, I took a break and enjoyed some “cookie dough”. I left the protein powder out of this mixture, because I wasn’t feeling the protein powder yesterday. So I combined the following:

Pumpkin “Cookie Dough”

  • 3/4 cup pumpkin
  • 2 tablespoon coconut flour
  • 7 drops liquid stevia
  • 1/2 teaspoon vanilla extract
  • 1/4 cup oats

I mixed it all up before hand and left it in the fridge to thicken up a bit. Underneath I hid the peanut flour frosting, so I had some enjoyable bites at the end, instead of the usual eating all around the toppings and saving them for last. This made that process easier;)

Delicious.

I chugged some tea before hand, since there was a little chill in the air and I was getting tired at this point in the day.

Since you asked nicely, here are some interesting things I came across this week.

1. Did you hear the news you can now get waffle wasted?

Forget about eating your waffles, drink those bad boys down instead. Not too sure how I feel about waffle flavoured vodka? I mean, waffle? So, does it taste syrupy or like the actual waffle, because I don’t think I’d like that one bit.

2. Oh, and hear is a fun article on 10 reasons why anxiety isn’t so bad after all. I like it.

3. Watch this video on the Pam Scam, its very interesting and eye opening how companies are allowed to “lie” on nutritional labels!

4. CJ shared this article on one of her posts, and I just wanted to share it as well. It is a really sad, yet true article on pre judgements on people suffering from eating disorders.

  1. Totally loving all your coconut flour recipes!! Keep em coming!! And waffle flavored vodka?? Is this for real?? My fav flavor of vodka is “whipped!” Mix it with some root beer and you’ve got a root beer float!!

    • Isn’t that such a weird flavour! I’ve never seen “whipped” before, but just from that name I can imagine its pretty tasty!!

  7. haha waffle flavored vodka, I’ll pass on that. I love green juice, but I always put an apple in so that it tastes a little sweet. I don’t know if I could drink that concoction above lol a little too healthy sounding for me.

    • I know that vodka doesn’t sounds too dang appealing.
      Ha ha, yah I maybe should’ve added an apple. It tasted really good after the first few sips though.

  9. I have a weird obsession with flavoured vodkas – I’ve had roasted marshmallow, cake vodka, bacon and bubblegum flavours. So I’d be all over a waffle version. :-)

    Outfit is super cute! I may be relying on you to teach me how to dress, I wouldn’t even know how to put an outfit like that together. :-)

  10. Iv never tried green juice, I like the idea of them- a big hit of energizing nutrients. But something sort of turns me off the idea of them. I’m not sure why though, I adooooore vegetables! I feel like if anyone can convince to try them, and like them, you can. Plus I have a bottle of ACV that iv no idea what to do with. So I’d like to give this juice a try. Can you confirm the last ingredient for me? It just sorta says 1/2 cup you silly billy:p.

    Keep going strong with increasing the food. Hopefully all the nourishment will help you keep on top of your epic to-do list & keep the icky overwhelmed feelings at bay. I find getting things done easier when I’m not hungry anyway:).

    • I felt the same with the juice, there was something about it that turned me off from them. But, after the initial shocking sips it did taste pretty dang delicious! Ha ha. Thanks for pointing that out! Duhhh..its ice ha ha.

  11. That waffle vodka sounds kinda good to me actually. I like my man drinks so I’d probably just drink it straight, maybe with a splash of St. Germaine. Hm…the popcorn though, gross haha.
    Keep up your goals, girl! You are inspiring me as usual. I actually have been thinking of you a lot lately because my appetite has gone missing during many a meal time lately and I have been trying to assess how I truly feel and my hunger levels. It’s getting hard and stressful. I often am obsessing over what my mom made for dinner yet I don’t feel physically “hungry enough” to enjoy it. I remember your post about needing more food intake and since I find myself obsessing, I’ve been taking that as meaning I really DO need those calories and it’s been helping me eat when I need to. So thank you!

    • Ha ha. I like man drinks too. Give me a plain vodka and I’m good to go.
      I don’t like sweet drinks much, if ever!
      Yes, obsessions is never a good thing and it is probably a case of not enough nutrients and food. When we aren’t filling ourselves with enough calories, we begin to obsess, focus, and pick a part things that are causing us anxiety. Yay Caitlin, so happy to hear it helped you:) Its helped me to even go back and read my words when things get tough! Which have been happening with this increase in food, but I know its the best for my health!

    Eating enough is VITAL to our success & our health <–if we don't have that, we don't have anything. I am so sad I wasted so many years on worrying too much about how much I ate & how skinny I was. It was such a horrible way to live. Great job trying your best to eat more & LIVE in the moment!   14. Sorry to hear that you’re feeling a little stressed out lately, Lisa. I hate going through periods like that, but sadly they’re unavoidable. It’s really great that you’re sticking to your goal of increasing calories though, especially because undereating causes extra stress on the body and can lead to higher levels of anxiety as well… I know I always tend to feel a lot more stressed out if I’m not eating properly. Big hugs to you. Hope you manage to get a relaxing weekend in :)

    • Thanks Amanda, I definitely know how badly the stress effects my body and that is no good, especially since I’m an anxious person by nature. My job is a little stressful, so this weekend was hard to avoid, but today I’m making sure to have a low-key day:)

  15. love the outfit! I have yet to try green juice. I made myself a peanut butter brittle protein smoothie this morning. It seems like oats keep me much fuller than protein shakes.

    • Oh man that sounds good! Oats definitely keep me more full, I can’t just have smoothies for breakfast. I get hungry after like 30 minutes;)

  16. I was going to comment on so many other things, but I’m too distracted by the waffle booze. I know that’s absolutely disgusting… but OMG I want to try it. I love waffles. Especially the trashy Waffle House kind with chocolate chips.

    • Ha ha. Its one of those things that looks nasty, but you can’t help but look and want to secretly try at the same time;)

  18. I woke up SUPER early yesterday and couldn’t fall back asleep either! I hate when that happens. But, like you, I just made the most of it.
    I’m really glad that you’re focusing on living in the moment and taking life as it comes. I think that’s the most important aspect of finding happiness and health. And, even though it’s difficult, I’m proud of you for sticking with your plan to add calories! It’ll all be worth it.

  19. Love your outfit! Kinda jealous you went to spin it is my favourite but so hard to go now I’ve got kids. I have to admit waffle flavoured alcohol sounds good to me! Haha! Can’t stomach vodka though and I never drink anymore. I’m So old and boring!

    • Ha ha, I am weird and like the taste of plain vodka. I drink like a man.;)
      I can imagine its a lot tougher to get to a class with kiddos involved! Running around with kids all day is enough for me.

  20. I’m so proud of you, Lisa!!! You’re doing all the right things to make sure you’re taking care of YOU, and thats amazing. I know how hard it can be to try to bulk up meals with things besides vegetables, and to remember to eat and what not when you’re stressed and have a lot going on. Those things are difficult for a lot of people I think (not just ED sufferers) so kudos to you for tuning in to that. I think I just threw up a little from seeing popcorn and waffle flavored vodkas haha. GROSS!!! Those are 3 things that all turn my stomach on their own, and putting any together is just a terrible idea! My friend had peanut butter and jelly flavored vodka last weekend and I thought THAT was bad, but those 2 are so much worse! Hope your wine night was fun!! Have a great weekend!

  21. popcorn and waffle flavoured vodka? When I drank in high school I used to drink vodka and I know I would have definitely tried those out! I have a feeling I would have liked the popcorn one because for some odd reason I always thought popcorn jelly bellies were AWESOME.

  22. I read your blog everyday girl but with college I hardly have time to comment. First of all, you look sooo beautiful in this outfit. You are really pretty and I love all the outfits you post. Second, I am a recovered anorexic and I truly understand how hard it is to eat alot of calories, it’s hard to switch from restricting your body to in a way nourishing it beyond what you might think you need. It is a process but believe me you can do it. I suffered from anorexia for 10 years and recovered from it about a yr ago without the help of a therapist, nutritionist, pills etc. I did it all by myself. There were days when I cried my balls out, when I was mad at myself for allowing myself have a second plate of food but slowly the feelings vanished. Today, I am 30 lbs heavier but guess what… It’s mostly all muscle. I eat soooo much yet people think I weigh less and once your realize that weight is just a number, your ed thoughts will no longer be as prevalent. I feel so strong now and most importantly I accept myself for who I am now. After my experience I know strive to help others in need and if you need any type of advice or questions please don’t hesitate to email me:) I will keep you in my prayers!
