Morning!
Yesterday, I took a much needed nap. I woke up with a throbbing headache, and needed some extra sleep. This new sleep schedule isn’t working out so well thus far. I’m still staying up way too late. Oopsy.
*beautiful sunrise a few days ago. I love waking up to a beautiful sky!*
I’m not even kidding when I say I have been having nightmares about peacocks the past 2 nights in a row. Some may find this random, in fact reading that makes me sound totally ridiculous.
We brought up peacocks after spin class the other day while stretching, and now I can’t stop have dreams about them! Fun.
I actually have a HUGE fear of peacocks, like I am insanely afraid of them and think they are the scariest animal ever created.
Anyways, moving on to more normal things…
Before my siesta yesterday, I decided to try out a new protein bar recipe to have for later. I didn’t want to fire up the oven and also didn’t want to make a whole bunch of bars in one sitting. So, I made a little creation and hoped for the best.
Exciting and breaking news, it was delicious! And some fun extra tidbits, these are gluten and sugar free and also vegan!
No Bake Single Protein Bars
- 1/4 cup oats (I used bob’s red mill, gluten free)
- 2 tablespoons protein powder (about 1 scoop, I used vanilla sun warrior)
- 1 tablespoon coconut flour
- 1/2 tablespoon coconut oil
- 1 tablespoon pumpkin puree (or applesauce, banana, etc.)
- 3 tablespoons almond milk
- a dash of cinnamon and stevia
- 1/8 teaspoon salt (to bring out the sweetness)
Melt the coconut oil in a bowl, add the dry ingredients and incorporate together.
Next, add in the pumpkin and almond milk and stir to combine.
Once it’s all mixed together, shape into bar form and place it on some tinfoil or plastic wrap.
Place in the refrigerator for at least 20 minutes, more if possible.
It was so filling and delicious. Has no funky ingredients and is bigger than your average protein bar.

Breakfast was a delicious combo of some of my favourite things. So good and simple!
*I toasted up 2 slices of bread and spread on side with strawberry goat cheese (recipe below) and the other half had an egg mixed with 1/4 cup egg whites with added spinach after the picture.*
Some jammin’ recipes happenings over here today, clearly. Goat cheese is just the greatest.
I’ve been neglecting this item for some time since rediscovering avocado, but I needed a bit of variety added in once again.
Strawberry Goat Cheese
- 1/2 cup goat cheese, creamy
- 12 strawberries, medium sized
- 1/4 teaspoon stevia
- 1/2 teaspoon vanilla extract
This is super easy, I don’t even think it can classify as a recipe.
First, microwave the strawberries for about 30 seconds, so that they become more mixable.
Next, I simply took the goat cheese, strawberries, vanilla extract, and stevia and mashed them all together with a fork until they were combined.
Chill before serving.
So dang yummy! I know this beautiful diva agrees with me.
Two of my favourite things coming together!
I’m now mad at my grocery store for not having more berries. Don’t they know I love strawberries and want them daily?;) I guess I need to find a new fruit to become obsessed with for now.
Off to grab a coffee and then get my hair did!
Are you afraid of any ridiculous animals as well? Please make me feel less like a loser…
Any fun plans for the weekend?
Have an amazing and fun filled Friday!

I haven’t had goat cheese in so long. No one in my family likes it so i never had it growing up. But i tried it once and kind of love it. The texture is way better than most cheese. I may have to find me some…
I agree the texture of goat cheese is far better than any other!
Omg everything looks so good! That’s so random about the peacocks. haha
Haha, I know. Such a random fear! I’ve been scared of them since I was like two. I’m an oddball.
A protein bar and strawberry goat cheese!!! Bookmarking this post and making these recipes ASAP! Looks fabulous! I have the strangest dreams too! I totally understand!
SO good! Dreams are such weird things! I always wonder if they really mean something.
I’m so making that protein bar. Is there anything I can substitute for the coconut flour?
Yep! You could use protein powder or any other type of flour you’d like!
What an freakin’ awesome recipe, girl! I just printed this
Happy Friday!!
Thanks!:)
mmm goat cheese is so good. I would totally love that! Simple recipes are my favorite.
Happy Friday Lisa!!
Goat cheese is one of the greatest things. Best cheese ever.
Umm, try ALL animals. Seriously they freak me out- you can never tell what they’re thinking , what they’re going to do next, if they’ll mall your face off…
Yah! I love your recipe posts:), I will be trying both of these in due course. I got this spreadable goats cheese because of you and I love it, wish I’d tried it sooner( is the non spreadable type good too?). I can’t wait to berry-ify it and have it with fried eggs* excited*!
Xxx
Haha, I actually feel the same way about most animals! And bugs too. Ick hate those things!
Goat cheese is so wonderfully creamy and lovely. I actually don’t really know about the non spreadable one! I don’t really like that cheese texture so have actually not tried it, but I’m assuming they must taste the same
I’m terrified of spiders…but I don’t think that counts as a ridiculous animal!
That strawberry goat cheese looks amazing! I’d love to try a version with blueberries.
Yeah, spiders freak me out a lot too. I guess that’s pretty normal though!
Blueberries would be delicious in this as well!
I love that your protein bar is single serving. I make everything that way. That is super funny about peacocks, but they are pretty large, intimidating birds.
Same here! I hate making things in big batches because I never want the same thing daily.
As long as I can remember I’ve always hated peacocks. They skeeve me out haha.
YOUR STRAWBERRY GOAT CHEESE IS GENIUS!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! omg i can’t wait to make that – i wonder if it would be alright with frozen berries .. mmmmm
Its SO delicious! Yep, frozen berries work! I just tried it out using them! You just need to heat them up in the microwave for about 30 seconds longer!
yumyumyumyum you are so right–goat cheese is the BEST. I always buy flavored kinds from the farmers market, but I would love to try to make my own! I’ll definitely be trying out your strawberry blend. Love that sunrise too! Mornings are the best
Have a wonderful weekend lovely
I’ve never tried the flavoured kinds because they are so much more expensive here hah. Now I don’t need to;)
Goat cheese is a more recent discovery of mine and yep… it is indeed the BEST! I have never even attempted to make my own before, but how about i do that now eh? Great idea Lisa, thanks for your great recipes as always!
I never would’ve thought I’d love goat cheese, but its by far my favourite cheese!
haa no seriously, peacocks are CREEPY. I don’t know what it is about them but I just can’t be around them. Peacocks and goats. yep. Lol anyway, I love these recipes!! Especially the bar, I make my own bars and almost always get bored of the flavor after eating like 6 out of the 12 bars…*sigh* this is a good solution! and OMG GOAT CHEESE…..with strawberries….it’s like strawberry cream cheese but better! I love it!
They are totally freaky! Glad someone else agrees with me:)
Yep! SO tasty! It definitely is a bit like strawberry cream cheese, but I prefer goat cheese. So its better;)
Awe girl, you poor thing. I hope you start having normal & happy dreams soon :] Ohh that strawberry goat cheese sounds delicious. Thank goodness goat cheese is popular in this country & it will not be a problem finding some for the recipe
Have a great weekend! No fun plans here, we’ve been having sandstorms. Boo!
Haha I know, I just can’t get in with any good sleeps recently. Hopefully its just a phase!
Wahoo for goat cheese being popular!
Yum, goat cheese is the best!
It definitely is!
I love anything no bake!! It makes life so much easier. And I have yet to try goat cheese but I have only heard good things from the blog world and my friends always rave about it. So I guess I need to get on the bandwagon and try it!! Hope you have a great weekend, no big plans for me just house sitting, studying and watching my family puppy!
Agreed!
You have to try goats cheese. Its seriously tasty.
That protein bar looks delish!! I have been having weird dreams too… I took melatonin last night and that took care of it!
Oh, that’s weird the melatonin helped with the dreams! May need to consider that soon.
how did you know that goat cheese is a favorite of mine? wow, i am saving this. Great recipes this week Lisa. Hope you are enjoying your rest time too!
Thanks Lindsay! Goat cheese seems to be a popular thing! Its so dang yummy.
That goat cheese spread looks amazing! That would taste so good on some sort of chocolate breakfast bake.
I was thinking the same, but wasn’t sure if it would be weird or not! I may just try that in tomorrows breakfast!
these bars look amazing sweetie xo
Oh my goodness…those protein bars look amazing! Making them asap.
And that’s too funny that you’re afraid of peacocks! I’m not really afraid of any animals but (like i’ve mentioned in a few posts) I’m deathly afraid of breaking my nose. I have nightmares about it constantly. It’s horrible! haha
I hope you’re having a beautiful weekend, love!
Haha, I know random!
Oh my goodness that’s so funny about being afraid of breaking your nose! I wonder why;) I guess just one of those random things most of us are blessed with
Oh my gosh, THAT GOAT CHEESE! I always mash up goat cheese and berries in my salads, but making a spread is pure genius, Lisa! This is definitely happening once I’m home. I think I’m going to try it with raspberries; I’ll let you know how it turns out! <3
I love the individual protein bar idea too; it seems like whenever I make a huge batch of something, I get tired of it long before I'm finished with it. Plus, your recipe contains a bunch of ingredients I love!
I hope your peacock dreams have subsided!
The only animals I'm crazy afraid of are rats! Those tails….*shiver.* :-p
Hope you're having a wonderful weekend! xoxo <3
Thanks Sara! Its definitely a new favourite! Its like goat cheese sweet heaven!
I’m the same way with protein bars, I never finish them because I get sick of them after a few days haha. So the individual style works well for me.
I’m sorry you haven’t been sleeping well recently. I pray that gets better for you. It really makes a difference for me when I get enough sleep.
Wow! Your food looks delicious in this post. I love the single serving protein bar and strawberry goat cheese recipes. Thank you for sharing them!
My worst animal fear is spiders. It’s not that weird but it’s kind of silly. Especially because I don’t live around any dangerous or biting spiders. I try to put on a brave face around them because I don’t want my daughter to pick up on my fear.
My exciting weekend plan is going to a new church this morning. My husband and I have been sporadically looking for a church since we became Christians in 2010. I have a good feeling about this one.
Thanks! The sleep thing is getting a tad better, but still not great.
I definitely relate to the spider thing, they freak me out big time! I don’t know why haha since they aren’t dangerous here either!
Hope you had a great weekend! And had a great church experience!!
I adore goat cheese, and the combination of it with strawberries sounds too good to be true… I really need to look out for some goat cheese now, thanks for this awesome idea,Lisa!
Definitely be on the lookout for goat cheese, this is a keeper:)
No problemo!
Peacocks ARE scary!! I live in SW Florida, right across the street from the beach, but a 5-6 min drive inland is an area (beautiful really, & with huuuge houses) known for being a peacock haven. I had a friend back in highschool who lived there with his parents at the time. I also had a white car. The first (&last) time i was over there, a bunch of us went out on the boat from noon-6ish?.. Doesn’t really matter. However, Upon leaving that evening, I walked down the driveway towards my car and was greeted by the most disgusting site imaginable, which stopped me dead in my tracks – it looked like a massive flock of pterodactyls had shat all over my car, and ONLY my car (the only white car in the driveway.. Hmm..) anyway, I was confused, horrified, baffled as to what had happened and I was even looking at. There were even tiny animal bones in.. The stuff.. (i know, gross-tmi-sorry!) Back to the point, I was told that it was peacock poop. Needless to say, it was a mess I prefer to stay away from forever.
Right! They are totally freaky!!! That is so creepy! Oh man. I just despise them.
Ick that is so gross! Animal bones, freaky.
Once I went home from school and there were peacocks at my front door! Seriously. I flipped my lid and made my dad come home and shoo them away haha. It was so weird that they are my biggest fear and they were at the front door! My mom had to clean up their poop and yep its DISGUSTING! She said she gagged the whole time
Such a great idea to make a single serve protein bar! Thanks for the recipe(: I can’t wait to make it, and I’m thinking of putting almond butter instead of the coconut oil, oh and maybe adding some brown rice cereal!
