WIAW #19 – Inspiration From Others

Morning!

Happy Wednesday.

Let’s get the WIAW party started…

Last night, I decided I’d be in the mood for a protein pancake this morning.

I had a bowl of “cookie dough” to have after this mornings spin class.

It was delightful.

Breakfast – 7:30:

I had this breakfast alongside  some fresh blueberries and creamy almond butter.

Then I forced myself to make a packing list for Boston, and realized just how much I need to do before I head off…

Good gracious. Lots of laundry, errands, organizing, packing, and all that jazz.

Next up, I made a quick and delicious lunch made up of major leftovers I need to use up before going away.

Lunch – 12:

I had an extra red pepper that desperately needed using up.

I ended up baking the pepper with  2 eggs inside.

At least this turned out better looking then last time!

Half an avocado and a half a medium baked sweet potato was consumed as well.

Later in the afternoon, I ran some errands and then came back home and caught up on Bachelor Pad…

I just can’t comprehend this show at the moment. No judgements though.

I ended up passing out right before the rose ceremony started, so missed out on all that drama.

Snack – 3:30:

I baked up a batch of Paige’s Healthy Zucchini Bread. I swapped the applesauce for pumpkin and pureed the zucchini beforehand, because I have a weird texture issue and can’t stand zucchini strands in baked goods.

Obviously, this was a clear choice for a snack. I love the butts of breads;)

Since it was lower in fat, I spread some cashew butter on a piece along with some strawberries.

I’m getting very sad about the fact I won’t see these lovely berries for much longer.

Thanks for this recipe Paige, it was delicious!

I’m hoping to take the rest of the slices to Boston for “in case hunger strikes” emergencies. However, I have no idea if I can bring them across the border. Any clue?

Dinner – 5:30:

Now, let’s talk dinner,

Meg recently made some delicious looking tempeh.

I just had to try it out since I picked up that tea earlier this month.

I let all my vegetables and tempeh marinade in this mixture, but didn’t leave it overnight. Just a couple of hours. I also added in some coconut oil so it would make the veggies taste delicious, plus I’m just obsessed with coconut oil.

I baked it up and once finished, topped it with a little nutritional yeast.

This was just awesome!

 After such a super exciting day consisted of laundry, more laundry, cleaning, packing, and more laundry.

I made myself a cup of nut buttered up milk. I used cashew butter and some cacao powder this time.

So dang good.

I’m undecided about what I’ll make before bed, but will most likely be this beauty.

Now, I’m off to catch up on the rest of Bachelor Pad that I happened to miss earlier and get in a good nights rest!

I’m going to have to start adjusting to the time difference between here and Boston. Probably one of the worst things about travelling!

    My lunch was a 2 parter. Had a cantaloupe protein smoothie once I finished my 8 miler, and then a little later had a wrap with hummus, tuna & tomato inside + a clementine.

  5. I LOVE bachelor pad. I have to admit I have watched every season of the bachelor and bachelorette! reality tv is like my guilty pleasure!
    Seriously though, how happy were you when the twins left?! I couldnt stand them anymore!!! there are a few more who need to be eliminated soon, but I am only watching Monday’s episode tonight so I will find out then if they did!!

    • Haha same here! In fact, right as I was getting sucked in I totally watched all the seasons prior! Yikes;)
      I was so psyched when the twins left, they were brutal to watch! Did you recognize them from Jersey Shore?! They were the twins who hooked up with the Situation…oh man, they shouldn’t have been on that show I think

  8. I was getting sad lately thinking about the fact that berries will be gone once summer is gone. :( thank goodness for frozen.. although they usually can’t compare.

    • Thanks Karina! I totally agree, the blog world is filled with tons of deliciousness! I suggest you try it out the nut butter with the warm milk makes it taste outstanding:)

  16. Welp, everything looks delicious as usual. My lunch dessert = sprint2thetables oatmeal cookie dough in a glass, you need to get on that! Banana, coconut flour, flax, nilla protein powder & nooch are involved( all make me think of you), & it makes one delicious, puddding smoothie.

    Speaking of inspiration from others… I think iv made at least 1 of your recipes everyday since discovering your gem of a blog, (today I made socca, nooch mixed with avo, the banana pancake, pb fudge AND your overnight oatbran, sheesh), and I ADORE each one:). Seriously, if you are looking for a recipe tester, can I get 1st dibs on that job?

  19. YAY for HLS! All of the prepping will get done somehow and you’ll have an amazing time. I’m so jealous of all you girlies that are going.
    I feel the same way about having pieces of zucchini in my baked goods. I’ll tolerate it but the texture definitely isn’t my favorite. The bread looks gorgeous (and the butt is always the best part!)

    • I know! For some reason the strands in zucchini bread makes me gag, that’s why I’ve got to process it up first!
