Wednesday Eats – Mixing It Up

Good Morning! Happy Wednesday!

Specifically, what I ate Wednesday.

First off, thanks for the wonderful comments on yesterdays post. You all have such wisdom and provided me with extra thinking to do!

My body has been weird today, I have been feeling way more hungry lately. Along with the thirst and tiredness I was talking about last week. It’s for sure odd for me to experience.

I’m still eating pretty healthy and focusing on clean foods, just more hungry…and tired…and thirsty. Maybe this has something to do with decreasing exercise and increasing calories? My body possible recovering? Who the heck knows for sure.

With that being said let’s get to my meals.

Breakfast – 7:

After an easier workout, I enjoyed a bowl of overnight buckwheat cereal, with stevia, cinnamon, banana, chia seeds, and topped with peanut flour paste.

These summer days are passing by way too quickly. I can’t believe it’s already August. Crazy talk.

I’m definitely feeling like a grandma over here. The night time has consisted of me looking at the clock, unable to believe its already night time because it’s still light outside.

Summer confuses me. I like that I’m greeted to the rising sun in the morning, but it also makes it harder to go to bed at night. And that’s not so fun when you wake up at 5:30.

Anyways, I ran to Starbucks to pick up a grande americano, per usual. Payed with my gold card, baby.

11:30 – Lunch:

 When lunch rolled around, I was craving some more breakfast for lunch type foods.

I baked a zucchini in a little coconut oil, and added in 1/2 a red pepper filled with 1 egg for some protein. Had with a side of avocado sauce (avocado, nutritional yeast, dill). The egg stuffed pepper was SO good.

I had planned on making this cuter than it looks in the photo. The egg kind of broke open when I cooked it. Oops. At least it was still delicious.

Later, I went out to pick up a few extra groceries and brought a sliced apple along. They make a good snack when you are on the go, they aren’t messy and are small. So, they’re easy to bring along. Win.

Snack – 3:

Strawberries were layered on top after.

Blended cottage cheese, a little greek yogurt, and 1 tablespoon cashew butter. The strawberries add a summery touch to this bowl.

Even though it was scorching hot out, I was craving something warm for dinner. I had an extra spaghetti squash, that was looking like it was on its last leg, so I cooked it up along with some other veggies for a filling dinner.

Dinner – 5:15:

Spaghetti squash, leftover zucchini, spinach, marinara sauce, turkey burger, and goat cheese.

Snack – 8:

A bowl of plain coconut milk ice cream

Okay, I know the coconut ice cream may not seem like a big deal, but for me it is. It’s the first “unclean food” I’ve eaten in…I’ll say 3 years! I do indulge in alcohol sometimes over the weekends, but other than that this is the first food indulgence I’ve experienced.

It felt good to “allow” myself to eat this snack, but I can’t say I felt comfortable the entire time. I was definitely hesitant to even scoop this into my bowl. However, I did it and survived. Who would’ve thought?;)

Right now I’m just trying to go with this hunger, without getting too freaked out over it.

  1. I have to agree, for some reason my hunger as spiked and I have having trouble trying to find what it wants. I hate those random cravings you can’t fulfill.

    • Its so weird to experience the extreme hunger. I’ll just go with it and eat to my hearts content:)

    • Seriously! I’m the same. I had to work until 11 last night, and was yawning right at 8, people probably thought I was being rude, but I get so tired working then!

  3. I say definitely listen to those hunger cues! It is absolutely your body recovering. That happened to me too! ;)

    • I’m definitely trying to appreciate and welcome the hunger! Its been a bit tough this week, but I’m going with it!

  5. love the looks for that egg stuffed pepper! For lunch I usually take leftovers to work. If I’m working from home I eat something a little more fun. :)

  7. I love leftovers. I was planning to take some for lunch today but my BF grabbed it before he left for work :( Onto plan b!

    • Oh no! I hate when that happens. You should put a huge sign over your leftovers saying DON’T TOUCH. Haha, I used to have to do that when I lived at home.

  9. Listening to hunger cues can be soo so hard, it just feels wrong actually! But it is essential to, and I say YES to doing that Lisa! I have been crazy hungry the last few days and I am just trying to take it as a good sign that my body is reacting the way I want it to :) That coconut milk ice cream sounds great too, I will be on the hunt for that

    • Haha, I guess in a sense it does feel wrong to listen to hunger cues because we are so used to turning against them. Let’s just think of it as our metabolisms increasing and our bodies adjusting to the nutrition we are providing them with:) Definitely try the coconut milk ice cream it rocks.

  10. Whenever I’m super hungry, I always up my starchy carbs – potatoes, grains, breads, oats etc! :)

    • That is probably a good idea to add in more grains! I’m sometimes hesitant to reach for them when I’m hungry and tired because of those stupid “carb fears”. No more! We obviously need starchy carbs to thrive.

  11. Oh lady, I totally relate to the hunger right now! And thats ok…it means our bodies are working again! holy shmoly and maybe even our metabolisms are revving trying to repair some damage we may have done!
    The dinner you made is actually one of my favorites :-) I recently started buying the goat cheese medallions at trader joes and they are fabulous for melting.
    The coconut ice cream sounds fabulous and I think I might have to pick some up this weekend! we can eat it together in spirit!

    • Its kind of exciting thinking of our metabolisms finally speeding up again and hopefully reaching a normal level!
      The hunger gets confusing because we want to rebel from it, but now we have to learn to accept it and fuel ourselves. I don’t want to go backwards in this journey!
      I so wish I had a TJ’s over here! All the goodies I see on other bloggers sites makes me totally jealous!;)

  13. YIPPEE!! <- thats what I literally yelped when I saw the ice cream . SO proud girly:).
    (My next thought was that it is just not fair that I can't get coconut milk ice cream * tears*).
    Treats like that are totally okay everyday IMO – especially when your still young ,& definitely don't need to lose an ounce- and all the rest of your eats are always dang clean.
    You have no reason to deny yourself any foods you desire- you hear me ?! Right, glad we've got that straightened out :) .

    I actually consider my own raging hunger a good thing,( metabolism like a well oiled machiiine). So I hope you are managing to honour that hunger as best you can.

    • YAY! Thanks Sarah!! I’m excited for myself that I branched out and accepted the anxiety I felt with eating it.
      I seriously think you should open a shop where you live that has pumpkin and peanut flour and coconut milk ice cream and coconut butter haha…I could go on and on!! And that way you and others could have them:)
      Its true, I don’t need to lose weight and I eat super clean the rest of the time, I deserve to treat myself once in a while!
      Yes, I’m accepting the hunger as my metabolism revving up! xox

  14. i go through phases where i am hungrier one week than others :) i usually just try to go with it… awesome eats!! happy wednesday!

    • Bodies are weird things! I guess it works like that for most people though, especially when we are exercising and changing up our routines! Have a great day!

  15. I think everybody goes through phases where they’re hungrier than normal – this is probably just your body trying to recover, so I definitely recommend you to listen to your hunger signals.

    Awesome on the coconut milk ice cream! I know the first food “indulgence” is a toughy – be proud of yourself!

    • Totally agree. I guess its just the point of recovery I’m in where the hunger is increasing a lot. Thanks Sam!

  16. I love left over and don’t understand people who don’t! I usually put my left overs (whatever they are) on top of a salad and have it for lunch the next day. Or I’m obsessed with these brown rice veggies rolls that my local health food story carries (I have thme probably 4 times a week!)

    • Same here! Leftovers are my life throughout the week haha. I think they taste better the next day!

  17. That has been happening me to too! Still waiting for some good changes!! I’ve been going to bed early too b/c I’ve been feeling exhausted!

    • I’m waiting on the good changes as well Brittany! Hopefully its our bodies way of recovering from these things!
      I so wish I could go to bed early tonight, but I work until 11 and by like 7 I’m yawning at work haha. People must think I’m weird…or rude. I hope not. Its so odd when we get hungrier and more tired. I guess our bodies at a certain point realize how exhausted they are from the past and just recovering them is tiring on the body! Well, that’s what my nutritionist says:) It means we are making good progress!

  18. I’ve been a hungry beast lately too. It’s SO weird and definitely makes me anxious at times, but I’m just trying to focus on listening to my body. I’m proud of you for doing the same. I feel like every day will get a little bit easier…at least I hope so. (:
    And YAY for the ice-cream! That’s a huge step. Since I re-discovered coconut milk and almond milk ice-cream a few weeks ago, I’ve been having a bowl almost every night. It’s delicious and we deserve it!

    • Same here. I think its just a blessing to be able to feel the hunger and nourish myself with food. When others don’t even get them same privilege!
      I think the increased hunger means we’re recovering from past damage and our metabolisms are revving up!
      Seriously, life without coconut milk ice cream is a sad one;) We totally deserve it. We eat super clean most of the time, daily treats are encouraged!

  19. So proud of you for eating the coconut ice cream! Hate to say this, but it’s good you felt uncomfortable. It means your ED didn’t like it and you weakened it a little. It’s just little by little. YOU are winning. :) xo

    • You are for sure right that it is a GOOD thing I felt uncomfortable eating it! I will continue to feel that way and that’s great for beating out the ED!! I need to keep up that mindset and no the anxiety I’m feeling helps to honour my healthy self not the unhealthy one! xo

  20. I’m so proud of you for reaching out of you comfort zone & eating the ice cream girl. What a huge step in recovery. You are just awesome! It must be this week, because I’m seeing that so many bloggers, including myself are ridiculously hungry this week. It’s definitely a cue to all of us that we do need that extra something; rather it be more fruit, or yogurt, or oats.. etc.

    • I’m seeing the hunger trend too! I think when we communicate with others about these things it makes it easier to accept that we are experiencing it as well! And it helps to have a community encouraging you to make the steps. Exactly sometimes we need more substance than more fruit or veggies;)

    I am very proud of you for eating the ice cream,really. You deserve to treat yourself and trust me,some “unclean” eats now and then won’t do any harm,really. ;)

  26. Ahhh! I am in recovery too and have been experiencing the crazy hunger also! So glad everyone else is feeling it too, haha. I think it just means that we’re getting supa healthy ;) I heard that it goes away once your body trusts you again (aka, trusts that you won’t starve it again). Until then, I will nourish my body with nutrients AND pleasure :)

    • Its definitely weird to experience, especially after denying ourselves from hunger before.
      I think its something we all experience, and just means our metabolisms are speeding up! Exactly we need to think of it as out bodies trusting us again, and knowing it will lessen because we are going to provide our body with proper nutrients and calories. I love that “I will nourish my body with nutrients AND pleasure”. Agreed!!
