Hello and good morning!
Hopefully everyone is having a positive day. Everything is looking beautiful in my neck of the woods. Its still feeling like summer, which is weird considering where I live. Fall usually comes early, but not this year!
It’s that time of week again, time to get the party started.
Today started out the same way it usually does.
Spin class was fantastic, I love the energy that the class creates, even if it is at 5:30 in the morning. Followed by a trip to Starbucks for an Americano, and a cup of green juice when I got home.
Breakfast was eaten after my juice was consumed.
Breakfast: 7:30 – A bowl of 2% greek yogurt, with 1/2 a sliced banana, blueberries, cinnamon, stevia, homemade granola (recipe soon!), topped with creamy almond butter.
Two percent is where its at. No more non fat, please.
I decided to make a big to do list today, since I have tons of things to get done, but without having an actual list I for some reason can never get myself to do these things. Weird. I guess I’m just a list lover.
Doing chores make time go by so. slowly. I got started on a few things, got super bored, decided to read instead. And then it was lunch time.
I haven’t been feeling too good recently, migraines are still happening, fatigue, and sore throat. Pretty much my daily life for the past 2 months. I’m hoping its just from stress, anxiety, and lack of sleep combination.
Today my appetite also decided to pull a disappearing act on me, and I was just craving comfort foods.
Lunch: 11:30 – Eggy Oat bran with the other 1/2 banana, 2 tablespoons pumpkin, 1 tablespoon chia seeds, 1/2 cup egg whites, cinnamon, stevia, and peanut flour paste.
With that being said, breakfast for lunch it was. I love breakfast for lunch. Or dinner. Its a winner.
Well, that was a lame rhyme.
On the side I made sure to get some greens in, with a large (un-pictured) salad, filled with spinach, romaine, cucumbers, red peppers, strawberries and a little lemon vinaigrette.
Snack: 3 – Pumpkin Spice Bar and Coconut Butter
My afternoon snack included a little pumpkin bar recipe that turned out into a success, so I will be sharing that with you all either tomorrow or Friday. Can’t decide yet;) Get excited, because these babies are good!
I also made sure to get my coconut butter loving on, and had a side of it to dip the bar into. I seem to really like coconut butter in shot glasses, no idea why.
Now if the Fall weather would come on by, this snack would have felt perfect for the season!
Side note: I honestly don’t understand how people can go all day without snacking and just eat 3 meals, I swear if I don’t eat every few hours I feel like I am dying. Must just be my low blood sugar levels.
Snacking is my jam.
I was at a loss on what to make for dinner. I wanted something fast and easy. Doing chores exhausts me, more than working on my feet for 7 hours does. I don’t know what it is about cleaning/laundry that leaves me wiped out. Anyone else get this too?
Dinner: 5 -
Dinner tonight was a good one…
I just defrosted a brown rice tortilla, topped it with tomato paste, nutritional yeast, spinach, and goat cheese. With an egg omelette on the side. It was slightly ruined, because I am horrible at flipping those darned omelettes, so that went unpictured. You should thank me for that.
Today was actually a bit of a struggle food wise, for instance, I ate carbs for all my meals which I rarely will do. I did it, but I was mentally exhausted by the end of the day after fighting back and forth with my mind. My body won in the end.
And I did want to stick with the theme of having breakfast for all my meals, just because I thought that would be a challenge for me. A silly one, yes. But, still a challenge nonetheless. Since, my ED says “I can’t” have breakfast for each meal, and “must” eat vegetables or fruit at each meal/snack. I wanted to disobey that voice. Next time will actually be breakfast all day:)
You better bet the night will end with another snack, yes I always end the day with a night snack. Most likely a protein muffin tonight.
With toppings of course. I can’t eat things plain.
It just doesn’t seem right to leave something lonely without any delicious toppings.

absolutely! breakfast for dinner is a definite win! in college, my friends and I would make a giant “waffle bar” and get about 5 waffles and a ton of bowls of our favorite toppings! now, my favorite “brinner” food is pancakes!
Oh boy, that sounds awesome! I wish my friends and I did that in college ha ha.
hahaha, I could totally do this “breakfast all day” thing everyday! just my favorite meal and the most amazing foods are totally consumed at breakfast. btw – though I have a huge sweet tooth I love the asian-style more savory breakfast with a lot of veggies and tofu and soup.

I’m actually the opposite – ordinarily I love breakfast for dinner but if I’m feeling ill then I always want savoury foods, and my breakfasty things are usually sweet.
I think the people who go by 3 meals a day usually have much larger meals! Your meals are still on the small side, so I think it’s perfectly normal and fine that you would want/need snacks in between!

I LOVE breakfast anytime of the day! I’m actually hoping to have breakfast for dinner tonight, since I have a later than usual client and making breakfast for dinner takes less than 15 minutes.

I too am a list person – just feel more productive when I can see the tasks I’ve crossed off! Is it just me or does it seem breakfast foods taste even better when consumed for lunch or dinner? Excited for the pumpkin bar recipe!

I love eating breakfast-type meals for lunch and dinner. Shoot. Breakfast is the only time of the day where it is “socially acceptable” to eat dessert, so…. I think every meal should be breakfast
Favorite salad… I’m boring. Lettuce, cucumbers and tuna. Sometimes I add some grapes or shredded carrot for a little flavor “pop.”
I think every meal should be breakfast too. Its too awesome to not be eaten twice a day;)
Breakfast all day is where it’s at! I used to follow all of those silly self-imposed rules like I couldn’t eat breakfast more than once, and dinner had to have vegetables, but these days I often eat breakfast for all 3 meals just because I love it so much. And carbs! Girlll don’t be afraid of those wonderful gems. Our bodies need carbs and a lack of them could lead to fatigue and depression. You’ve been doing so awesome Lisa, I know it’s uncomfortable but it’ll get easier the longer you stick to it! Especially when you see how much better you feel for it

Ick, yes those stupid “food rules” time for me to get rid of them for good! I’ve been feeling the fatigue lately, so I know its time to reintroduce some carbs!

Yep. I’m pretty sure I’d be content with oatmeal at every single meal.
The tortilla pizza looks yum! I don’t understand people who don’t snack either. I am constantly grabbing a handful of something throughout the day. Apples are definitely my go-to snack all year to keep my blood sugar good.

‘Get excited’<- Don't have to tell me twice! All these recipe sneak previews from you get me all riled up:). I actually roasted & pureed up a whole squash, in preparation for making 1 of your pumpkin yummies, these scrumptious bars look like they'd fit the bill.
An' a made your last granola( a few times actually), I'm gonna make this 1 too. Duh.
I go breakfast for lunch, dinner, dessert, snacks, random-breaky-craving, you name it, ill eat breakfast any old time:p. You CAN do breakfast all day Lisa, I believe! I mean, you got the carbs at every meal thing down, didn't you? That is progress. It also means you ate 3 BALANCED meals today, which is so key to being healthy,( I think , anyway), & I know how important your health is to you. Just keep making these strides in your recovery!

I could easily eat breakfast all day. Some of the best foods are breakfast foods! Fruit, yogurt, pancakes, eggs, waffles…yea, I could stretch that into one day.

YES breakfast is the best! I’m glad you worked through your mental stuff–don’t you hate it when you’re “listening to your body” or “giving it what it craves”–which is good! And should be celebrated!–but you end up feeling like crap all day because your mind just totally screws with you?? I’ve been having a lot of those days lately. I hope you feel better! Migraines and fatigue are never fun. Can’t wait for the pumpkin bars!!

Yeah, its definitely a mind struggle! It feels good physically, but emotionally I’m a wreck! I guess it takes a while to get used to!
i think this just shows that you are listening to your body. I crave weird things all the time, it’s okay to just let it go. Feels good to. I mean, i at pb and banana on GF bread 3x already today and eggs and more eggs and more pb. Love that you made coconut butter too.
I’ve been craving eggs like crazy over here! I guess our taste buds are liking the same things:)

Since my breakfast is usually sweet, I don’t often think of it as a lunch or dinner. But thinking about it now, oatmeal seems like a great late night snack/ after dinner dessert…especially now that fall is upon us!

I love eating eggs at any time of the day, so I don’t really consider them breakfast type meals:) As for the salad, I love anything with rucola, avocado, cherry tomatoes, and bread crumbles on top. By the way, that pumpkin spice bar looks amazing.
That’s true! I never usually eat eggs in my breakfast anyways ha ha. Its always in lunches or dinners. I love the idea of having salads with bread crumbles on top! Yum!
I completely understand about being anxious with eating fewer veggies in the day and especially more carb-based stuff. For the record, all of your meals look great, and I could definitely have breakfast for all meals, although I would certainly feel a twinge of discomfort too! Good for you for working through it anyway… we are in this together Lisa, and I know I already said this, but it is nice knowing someone else out there is struggling, yet working against the bad thoughts anyway
Thanks Tessa! Its definitely a tough road. I just know that while my calories increase I won’t be able to load up on veggies. My body just can’t handle that much food at one time ha ha. And I don’t think people would like to hang out with me;)
