Dinner Inspiration

Hello, friends!

Can you believe it’s almost the end of September already? And that means only 5 more days until my BIRTHDAY! Crazy times. And this will be the last WIAW of September as well.

The day started out with the usual spin class, where I really noticed how cold the mornings have gotten. All my workout jackets are pretty old at this point, so I’ve been neglecting to wear them to the gym. Bad idea. It was freezing this morning, and I had a few errands to run after spin class.

I was glad to get home and park myself in front of the fireplace for a few minutes, while enjoying the first meal of the day. I had a batch of buckwheat in the fridge overnight, but since it was quite chilly I just warmed it up in the microwave for about 40 seconds. I still prefer them cold, but it was still tasty.

This batch contained: 1/3 cup buckwheat cereal (ground in coffee grinder), 1 cup almond milk, 2 teaspoons chia seeds, 1/2 banana, 1/3 cup pumpkin, cinnamon, stevia, and topped with peanut flour paste and blueberries.

Breakfast – 8:

I got showered and ready and ran more errands. I had to fill up my gas in my car, and it freaking cost me 80 dollars. Eighty. For gas. Ridiculous. I guess it’s not as expensive as it was at the beginning of Summer, but still too much.

I also made my way to the grocery store and realized I forgot my list. I tried to remember what I had written down, but when I got home I realized that was a huge fail and missed at least half the things. Oops.

Some food was next on the agenda.

Lunch – 11:30:

* 2 egg omelette, cooked in a little coconut oil *

I’ve been stuck on eating eggs for lunch for days. I haven’t eaten a “typical” lunch in a long time now. I’m not much of a savory lover when it comes to breakfast, so if this is the only way I’ll get my eggs in for the day, I will happily eat them for Lunch or Dinner.

* with a side of vegetables, roasted in some nutritional yeast and red pepper flakes *

After lunch, I went on a little stroll to see the last remains of Summer.

In between Lunch and Dinner, I became quite hungry yet again. My appetite never fails to let me know when its hungry, which seems to be every 2-3 hours these days. Not that I’m complaining, it’s just weird to feel that hunger again when I’ve been denying its existence for so long.

Snack – 3:

* pumpkin cookie dough with an apple a little later on *

After, I got geared up in my sweats and some really fancy boots and went down to the crawl space to pull out some Halloween decorations. I got totally in the mood to decorate the house. I only managed to bring a few thing up since crawl spaces freak me out for some reason. I guess its the small space.

Now I really want to go to the mall and pick up more Halloween themed fun stuff to decorate with, I’m just that cool.

Dinner is always a lame attempt at me to become creative. I try every now and again to think of something, but by this point I really just could do well with leftovers and call it a day. I decided to ditch that idea, since I was home to make a dinner and attempted to make a lasagna of sorts.

It was a mix of a fail/success. It tasted awesome, but it did not stay together the way I hoped. Oh well, just means I get to try out again:)

Dinner – 5:

* a little deconstructed lasagna casserole that contained leftover zucchini, red pepper, marinara, and a brown rice tortilla *

Of course, I’ll be having a snack before bed tonight. I just usually don’t blog about it since its not that late yet.

Do you tend to eat the same ones over or do you try new recipes? Clearly I need some inspiration

  2. You always take such beautiful photos girl. Question though… is your breakfast on the ground? haha.

    My favorite dinners involve anything dealing with shrimp or salmon. For some reason seafood meals are just so simple, and full of flavor to me :) .

    • Ha ha. No, not on the ground. Well, I guess the bowl is on the ground. I don’t have good light inside, so I have to take my food pictures outside ha ha.
      I wish I liked seafood! Well, I’ve never tried it but for some reason it freaks me out. I’m an oddball.

    My favorite dinners usually involve meat, veggies, and nuts– for some reason I crave cashews like a beast at dinnertime haha

  4. I love eggs any time of day too! I am such a creature of habit and once I find a meal I love I tend to repeat it over and over again until I’m sick of it! Love all your veggie packed meals but your snacks are always my favorite! So creative!

  5. I’ve had eggs for lunch literally for the past few weeks. I cannot get enough! They’re so delicious :) I’m SO lame when it comes to dinner, too. That’s why I usually stick with a salad because I get home from class and I want food nooooow so it’s easy!

    • I’m with you! I can’t believe I used to despise those lovely things!
      So true. If I work during the day, I just want food that instant. I have no patience to wait for anything.

  6. big salads and stir-fries are always good. I like that You can change them up with all different ingredients. Tonight I’m bringing butternut squash soup to my friend’s house and then we’re roasting a chicken together. Should be fun!

  7. I love just combining a bunch of food in a bowl and calling it a day! That has been my go to on my rushed nights.

  8. Your pictures are so pretty :) $80 for gas?! That’s crazy! I know I used to pay $20 max (I have a civic lol) and last week when I got gas it was $42…. def not fun :/

  9. Ugh, gas. I’m so glad I live close enough to walk to school, I’ve literally only been driving once a week (groceries) and it’s been heavenly!

    I could eat eggs for lunch almost everyday. I prefer sweet breakfasts, so eggs at lunch is perfect.

  11. Stir fries are usually my go-to dinners if I can’t think of anything else. I just cook up whatever sort of veggies I have in the fridge, add some cooked chicken, soy sauce, and sunbutter, and then have that with some rice or noodles and I’m good :D That being said, I don’t really switch up my dinners all that often because I’m too lazy to try and come up with new meal ideas, and most of the time I just end up having chicken with veggies and some sort of carbs.

    • It seems like everyone’s all about the stir-fries:)
      I never really switch up dinners either. I try too, but whatever. I usually figure it out.

    I am all about sweet potato fries & turkey burgers. YUMM. Oh and eggs & spinach/cheese. And stir fries are always great.Oh and Mexican salads or burritos. SO tasty!

      Oh yes, sweet potatoes are a great idea for dinner! With a turkey burger too! And I definitely love breakfast for dinner!

  13. Your dinners always look fantastic – if it ain’t broke, don’t fix it! Haha. But I know what you mean about being in a rut. If you’re feeling like trying some Asian recipes, I just posted some on my blog. The ingredients are not common in American supermarkets, but maybe they’re available in Victoria? :)

      OI should definitely try out some Asian inspired recipes, we do have quite a few Asian markets downtown I can check out!

  14. I think your dinner looks pretty good- a lasagne scramble of sorts:).
    All your food always looks amazing to me,(but what happened to carbs with all your meals:/?)

    So iv been roasting & pureeing butternut squashes as a pumpkin replacement, it works out well. And I’m officially ADDICTED to using it in you overnight oatbran( as well as your fab no-bake cookie- gawd, that’s good), iv been having it every.single.day and I don’t see this trend letting up!( I never thought I’d prefer oats cooked in a micro at all!). I completely understand & share your love for it. I want to try it with buckwheat next- i have buckwheat groats, do you think if I grind them up, that will be like what you use?

    I made peanut flour-crusted parsnip fries ,as part of my dinner last night. For me that is creative at dinner time!

    • Your right! This day I didn’t eat enough carbs. Mainly lunch. I just skipped out, which wasn’t smart. I did make it up with nut butter overload. Which actually wasn’t the smartest ha ha. I think I got a little stomach ache from all the nuts.
      Ohhh! Butternut squash sounds fab in oat bran and other recipes to!! Love.
      Yep, I definitely think buckwheat groats would be similar, you may have to ground them for a bit longer though! So they resemble oat bran texture.
      I need to pick up parsnip on my next grocery trip, I love that stuff!

  17. oh gosh- I go through phases of eating the same things and trying new recipes. I’ve done a lot of cooking the past few weeks though!

    BTW- I notice that you never mention a job or school- Do you have a day job or are you in school?

    • I am curious too! You seem to have so much time to prepare all your perfect little meals, which look great by the way :) , take nice pictures of them, go to spin, starbucks, grocery shopping, decorating the house, cook, etc. I just don’t know how you have so much time you super woman:) With school/work I totally do not have so much time to think about food that much, I just eat when I have a little break and get to the grind :)

    • Oh yes, ha ha. I just don’t mention work on the blog. I don’t usually talk about it since I usually work at night so I’m usually at home during the day, or at least most of the day. So at the moment just working part-time for now!

  19. I always go through phases of meals and I do repeat a lot of the same meal ideas!! Its so much easier to just come home after a long day of work and not always have to think up a new experiment! Of course when I have time I love to experiment in the kitchen. But salads are a very typical dinner and lately dippy eggs and roasted veggies are a great, satisfying dinner!

  22. I love that you’ve already pulled out your Halloween decorations! I’m an early decorator too–especially at Christmas! I would start putting up lights the day after Halloween if it were socially acceptable. Haha. And then there’s the music…I start blasting that in early November and don’t stop until late January.

    Eggs are my go-to for every meal. I always eat them for breakfast (with something sweet because I have to have both sweet and savory in the morning), and I’ll often eat them hard-cooked for lunch or in omelet form for dinner! They’re so versatile! And cheap. YEah, I love my eggs.

    Your tortilla lasagna looks and sounds SO good! My favorite dinners are salads (usually with salmon or chicken) or stir-fries. Lately, I’ve been obsessed with tofu, which is funny because it’s literally been years since I’ve had it! I’m loving it baked or pan-fried with garlic and olive oil! xoxo <3

    • Ha ha. Just partly put them out, I’m not too ahead of the game yet. Oh, so with you on Christmas decorating! I can’t wait for the music! I just got overly excited for that ha ha.
      Yeah, eggs are definitely the thing I rely on most for a fast and nutritious meal!
      Oh that’s funny with tofu. I haven’t had it in forever. I wish I could, but I suffer from migraines so no tofu for me unfortunately!

  23. I love how you arranged the blueberries in your breakfast – cute! I notice that I tend to make a recipe once a week for a few weeks when I find something I like – partly because I like it, partly because I don’t think of anything else. I’ve been trying to be better at using all the cookbooks I have and trying new things!

    • Ha ha. Thanks. I’m a little nerdy with arranging that stuff;)
      Yep. I definitely do that too with my meals! I should purchase some more cookbooks! I barely have any at the moment.

  24. Your breakfasts always leave me drooling Lisa, and so neatly arranged as well! The blueberries are a perfect addition if you ask me :) My hunger has been on and off lately… one day not so much and the next I am a bottomless pit all day! The days that I am not as hungry are more challenging, but oh well, I have to of course eat the correct amounts anyway.
    I most definitely eat the same things over and over again… it’s not a rut for me though, it’s stuff I honestly enjoy and eat until I am sick of it. Kabocha squash for example :)

  25. i am an “egginista” (loove eggs) too and call it a meal when i dontn have much in the fridge. i grew up on a c hicken farm and used to hate eggs.. i guess because they were around all the time but didnt get to appreciate the fine quality of them until i had left home and had to “buy” them in the supermarket for the first time!

    • I love that. An “egginista”.
      Our neighbour sells fresh eggs and they are SO amazing! I can imagine its quite the difference from going from fresh to buying at the supermarket!

  26. I totes could eat the same meals every day [with a little variation] and be perfectly happy :P Aka creature of habit… Why fix it if it ain’t broke?! I’ve been trying to switch it up more often, especially at dinner, because I can only imagine my husband’s taste buds are getting bored [although he says otherwise, haha]!
