Granola Pancakes

Wow, Wednesday already? This week is flying by. Must be that holiday Monday that happened. This week is already full of changes and hopefully future rewards, and I’m ready to get this September starting off on the right foot.

Another Wednesday, another new month, which means another day of eats.

Again, I’ve been failing miserably on my more sleep goal. Oops.

I did manage to still get up and go to spin class. I made sure to purchase a heart rate monitor, so I can be aware of my heart rate during class and make sure I don’t push it too much.

Breakfast – 7:30:

Breakfast was a granola pancake.

  • 2 tablespoons coconut flour
  • 2 tablespoons brown rice flour
  • 1/4 cup egg whites
  • 1/4 cup banana (melted, and mashed)
  • ~1/4 cup almond milk
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • stevia
  • 1/4 cup granola
  • handful of frozen blueberries.

Mixed it all together, minus the granola, then folded the granola in. Cooked in a big pan with about a teaspoon of coconut oil.

You can also add a little almond milk to the batter, if it’s needed to thin out.

Topped this off with some creamy almond butter. Yummy.

Anyone else find it super weird to wake up early and instead of being light it’s super dark out? Looks like fall is coming soon!

Lunch – 12:

Lunch include socca with a side of roasted zucchini and aspragus.

The socca was simply made with 1/2 cup garbanzo bean flour, 1/2 cup water, and cooked in a teaspoon of coconut oil.

After, I added a little extra coconut oil and nutritional yeast, so it made a “cheesy” like sauce.

Also a side of avocado in a shot glass.

Snack – 3:30:

For a snack I decided to try out a new recipe, it wasn’t bad, but it wasn’t as good as I hoped…it also crumbled a little too much and is clearly not blog worthy yet.

I’ll have to work on this one!

And yah, I happen to think the green colour is cool;)

I had this alongside leftover greek yogurt and a few strawberries and blueberries.

Oh goodness, I just realized how excited I am for Starbucks’ red holiday cups to return!! I wonder when they get those in?

I’m pretty sure last year they started giving them out early, so hopefully the same goes for this year.

I think I’m getting a little too ahead of myself over here.

Dinner – 6:

After I did all my “housekeeping” chores for the day, I whipped up something fast…

Just a simple slice of toasted ezekiel bread with avocado an egg, and a side of kale “chips”.

Easy, but tasty.

Now I’m drinking a cup of chocolate coconut butter milk.

This was fantastic.

I simply heated up a cup of almond milk and 1 tablespoon of raw cacao bliss, for about 1 minute and 40 seconds in the microwave.

It created a warm coconut-ty, yet chocolatey beverage. One of the best combinations out there.

  4. Can’t wait to find out the recipe to that glob of green goodness haha :) . My favorite easy dinner would have to be any salad, or even gnocchi with some vegetables overtop. So simple and delicious!

      I definitely love easy salad dinners too, I’ve actually never had gnocchi before, now I want to try it though!

  7. Okay, you’re making me get ahead of myself, too. I just got REALLY excited for the red cups. I know so many people have already ordered their pumpkin spice latte’s but being that it is 95 degrees out, I just can’t do it yet.

  8. I am on recipe idea overload from this post! I want to try that chocolate coconut drink it sounds amazing! I love how simply you made the socca too! I have a bag of garbanzo bean flour I’ve putting off using because I’m not quite sure what to do with it yet! this may have to happen!

    • Its definitely a keeper! I suggest trying it:)
      Socca is so easy once you use it, I swear! I thought it would be more difficult, but its not at all!

  9. Yum!! Favorite easy dinner has to be in the crockpot… Just throw in a bunch of stuff and wah-lah itz there when you get home! Plus, leftovers. :) :)

    My favourite easy dinner is scrambled eggs with toast and steamed broccoli. Easy, healthy, and ready in 5 minutes!

    • They are a good combo together! I thought it may be weird but I actually really liked it ha ha.
      I have to agree on the eggs + veggie combo for an easy dinner!

    • You for sure need to check it out! Its really good.
      I think on hulu they stream it, or on the ctv website. Actually, I bet it you google it you could find a lot out there!
      They just started on season 2.

  13. My favorite easy dinner is grilled chicken and veggies. Sometimes rice, unsalted green beans or baby carrots also make an appearance.

    That granola pancake recipe is so unique! LOVE IT.

    • Ha ha, I think I’ve created a monster for my coconut love.
      Nope, no oats. Just granola instead of the oats:)

  15. YES I’m excited for the holiday cups! I think I get more excited about the actual cup than the new drinks IN the cups…

    My fav easy dinner is probably pancakes + scrambled eggs. I never thin out my pancakes, though – I like ‘em fat and tall:)

    • Ha ha. Same here, my heart instantly gets happier when I receive a red cup. How lame do I sound, haha? Embarrassing.
      I like my pancakes fat too! No flimsy ones over here!

  16. I was just thinking to myself when I woke up this morning that it’s a whole heck of a lot darker outside than it was a month ago. I love the whole cozy Fall atmosphere, but I’m definitely going to miss the summer when the sun starts to set at 4:30! And speaking of cozy, that cup of cacao bliss almond milk sounds divine! I love the flavor of that stuff, and can only imagine how delicious it would be all warm and melty. Oh, and don’t worry… you’re not the only one excited for the seasonal coffee cups ;)

    • I know, so crazy how that happens! Makes me sad, but also so excited for fall! I just love all the different seasons thought, so I never mind when a new one starts!
      Oh gosh, the cacao bliss is amazing! I can’t believe I was “fearful” of it before. Ick!

  17. Choc coconut butter milk? Um, major YUM! The kale chips look fab too. I am so curious as to what that green thing is haha! I’m guessing it involves spinach? Avocado? I feel like we’re twins with our dairy-and-fruit pairings of cottage cheese or Greek yogurt! I just used up the last of my Oikos the other day!

    • Yes I know right, the best hot chocolate ever created I’m thinking!
      Ha ha. Yes, it involves spinach. I like to bake them in my bars, because I’m odd like that;)
      I love Oikos, the 2% is the only one I can eat now, since 0% tastes like turd now ha ha.

  19. When I saw that picture of a granola pancake on here, right after you came back from the HLS, I immediately gravitated to my kitchen (in a trance) . I NEEDED a granola pancake in my life. So I set to work! And ya know what? My pancake recipe was very similar to yours. I guess because I’m constantly making your recipes, I’m actually starting to think a little like you , mine was topped with AB too. Yay:)! ( Well, I didn’t come up with a crumbly, green blob for a snack quite yet, but I’m sure it’s coming:p). And P.S the pancake was delicious.

    All the rest of your eats are looking mighty fine. You hit me with thee biggest avocado n’ fried egg toast craving, ill be having some of that later for sure, yeee! I’m having positive thoughts about it already- see , your post from yesterday is already taking effect, (in all seriousness though, yesterdays post was powerful for me, I really enjoyed it).

    I’ve STILL never drank a tea or coffee, so I’m pretty indifferent to the starbucks cups. Although I do appreciate their prettiness.

  20. The pancakes look incredible!!! I hate when I make things with high hopes for the blog, and I just fail miserably. happened this afternoon actually. really wanted swordfish I had in the freezer, I cooked it, and then it just turned me off. I can’t even post about it w/o wanting to gag, ha.

    • I only have the strap, so I can look at it while I’m attending spin class, but I do fine it VERY helpful since I’m not supposed to go over a “specific zone” right now! Now I need to get the watch, I think its pretty useful for progress! My mom has one and says its changed her fitness routine completely.

    • I just have the strap, not the actual monitor! Should’ve made that more clear. Since the bikes at spin tell us our HR when we wear the strap. I’m hoping to get the monitor part for my birthday though! I’ve been dying to get one!

Umm that hot chocolate sounds like a winning combination, I will have to try it when it gets a bit colder!

    • Ha ha. I have a serious problem. Its probably an odd thing.
      Yes! I’m happy I’ve ventured to the whole egg! Its still hard sometimes, but its easier each time I eat one!

  34. Mmm…I’m craving hot chocolate now! That sounds delicious. It has been rainy and gloomy all day in LA today so a cup of hot cocoa would be so fitting. And I can’t believe how much shorter the days are already- I don’t like it! I love my sunshine. (:

  36. Eeek! I still need to enter your coconut oil giveaway! I was so excited when I saw your post about it on Instagram, and then somehow, some way neglected to hop on over here that night! There’s no way I’m going to miss out on that delicious action! ;)

    I am so glad to know that somebody else is equally as excited as I am about the red cups! I love them. For some reason, my drink always tastes better when it’s coming from the seasonal cups (maybe because it’s colder outside and warm beverages are always better during the winter? hmmm ;) )

    The granola pancakes look FABULOUS! I definitely want to give those a try! While I was cleaning out my kitchen cabinets yesterday (this was long overdue), I realized I have eight different types of granola! This is mainly because I’ve collected lots of little sample packets (HLS, my gym etc), but it also means that there are lots of granola pancake adventures in my future.

    • Right, the red cups are the BEST part! I will squeel in happiness when I come across them! They totally taste better from red cups. I think they should get halloween type cups for fall, just so we can have more fun action. Is it lame I actually e-mailed them with that idea ha ha. Gosh, I’m weird.
      Oh yes, definitely try the granola pancakes! Especially if you have extra granola on hand:)
