Good Morning! Happy Monday!

I hope all my fellow Canadian’s enjoyed their Thanksgiving holiday! Celebrate this Thanksgiving Monday holiday off from work and hopefully everyone else had a great weekend!

Nothing better then lounging around on a Sunday morning with a cup off coffee and blog reading. Since it’s our Thanksgiving today, I am more into Fall flavours than ever.

Please don’t get too annoyed that I am Fall and Pumpkin obsessed. I swear it will wear off shortly…or not.

Let’s get to the fun things that have been happening the past few days.

My parents went to the Pumpkin Patch without me and took this picture to show me. How dare they pick up pumpkins without all my wonderful pumpkin knowledge.

Rude.

To make up for their mistake I made myself some pumpkin frosty so I would feel better. I also forced them into going again next weekend, it is on my Fall Bucket List so it’s a must.

Holy moly. I saw Kristin’s post today and knew I needed to try adding the gums (xanthan and guar gum) to my pumpkin frosty recipe.

Yep, it was truly amazing. Extra creamy and delicious!

Kristin you were totally right about adding these little gems in, purely awesome.

Oh boy, this was good stuff. I was very sad to have it come to an end.

So was this dinner I had the other night. I made a quick and easy plant POWER recipe to eat.

Tempeh Masala (serves one)
* vegan and gluten free

  • one serving tempeh (coated with curry spices)
  • 1/2 tablespoon coconut oil
  • one large chopped tomato
  • 3 tablespoons coconut milk (full fat, canned)
  • 1 tablespoon tomato paste
  • 1/2 tablespoon nutritional yeast
  • 1/4 teaspoon curry powder

Preheat the oven to 400 and place 1/2 of the coconut oil onto a baking sheet with the tomato and tempeh and let that bake for about 15-20 minutes.

While baking, place a skillet over medium heat and added the remaining ingredients until heated and the mixture began to thicken a bit.

Then add the tomatoes and tempeh to the sauce until well combined and I served it over quinoa and roasted broccoli slaw. Avocado on the side.

On Saturday, I made sure to extend my birthday and keep celebrating throughout the weekend. I guess now my birthday is officially over.

We celebrated with drinks and tequila shots…which makes for a truly lazy and unproductive Sunday;)

Fun times.

I also made sure to spend some time outside. I’ve been enjoying taking walks and celebrating the gorgeousness in nature and connecting my mind with the beauty of the outdoors. I just adore this time of year and watching the leafs and colours change all around.

To get in the Thanksgiving mood for today, I lit up my favourite pumpkin spice candle and got the ambiance on. It smells so delightful!

Even better because as it was lit I baked up a loaf of vegan pumpkin bread.

Wow, just realized everything in this post is vegan. Coolness.

I still need to try the pumpkin frosty creation… although I can’t say I will add the gums, they wreak havoc on my stomach! :( You are looking gorgeous on Saturday when you celebrated with your friends, glad you went out for your birthday! Heyy now, keep on celebrating your birthday for a bit longer if you want to, I always try to extend mine as much as possible ;)

    • Yah, the gums are definitely not for everyone. I can only manage them about once a week or else my stomach is a mess!

    Today I’m thankful for my legs. I needed to go to the store about a mile n half up the street, and really didn’t want to pay the cab fee so I decided to walk. Thank goodness my legs work & got me there :) haha

      Yes, its such a blessing we even have legs to walk on to get us from place to place when others don’t have that option!

And I’ve just gotta say that you look gorgeous in those pics of you and your friends going out to celebrate :D My weekend has been full of good food and time spent with family… and there’s yet another T-day dinner on the agenda for tonight, so I think I’ll be digesting turkey for the rest of the week :lol:

  11. I am thankful for so much in life but today I am thankful for my job! It’s a holiday (Columbus day) and I do have to work but in the economy I am thankful to have a job even if it is a holiday!

    Your pumpkin frosty looks fabulous! I like the gums but sometimes they upset my stomach so I don’t really use them often. They do work wonders for thickness!

    • Same here with the gums, I definitely have to be careful when using them. Maybe only use them up once or twice a week.

    Sounds like you had a relaxing Sunday – me too! I was just saying on Sara’s blog comments today that I feel a bit left out of the pumpkin loop in the blog world each year since I am not as into it as everyone else. I think it’s because I can’t wait to move somewhere warm! But I’m sure next year you can accompany your parents and help them find a prizewinning pumpkin.

      I know grey goose it totally my jam, but only when I have the mula to buy it!

    Today I am thankful for my family. I’m also thankful for the job opportunity my husband found this morning.

    This weekend I had a picnic lunch with some new friends from church. That was pretty fun! I also had some lovely walks in the warm fall weather with my family!
