Hi friends! Another week of delicious eats to get through. Let’s get the party started.
This morning I rolled out of bed to a painful sight…that was the alarm blaring at 4:57.
I contemplated just skipping my morning spin class, but after much debate I figured there is no use going back to bed while I was up in the mean time.
When we got to spin this morning, sadness came over me as I realized there were no bikes left. Thankfully the instructor wound up finding some extras, because as I was on the treadmill for just the short 3 minutes I was already bored.
Suffice to say, I am not a treadmill fan…at all. It all worked out though:)
Breakfast was a bowl of overnight oat bran.
In the mix; oat bran, egg whites, chia seeds, banana, blueberries and peanut flour paste.
Early morning is definitely my favorite time of day.
I feel much more productive throughout the early hours and it just seems so peaceful.
Tuesday is grocery day, so after picking up a few things at the store and a trip to Starbucks, I made some Lunch.
A simple, yet delicious sandwich.
2 slices ezekiel bread, homemade strawberry jam, and pumpkin seed butter…. I love nut butter, or seed butter in this case.
It’s just so delicious and nutritious. It can’t get much better than enjoying some healthy fats!
On the side, an un-pictured kale salad. Just a bunch of kale, lemon juice, cucumber, and cooked tomato (I hate raw tomatoes).
Nothing too exciting to see.
I’ve been going through a few weeks of intense stomach aches, so have been keeping most of my meals stomach friendly, for easier digestion. I miss the veggies, but for now this is making me feel better!
After completing some much needed things, I decided to take advantage of the gorgeous weather and get outside for a little walk.

Afternoon snacks included: a protein muffin, coconut flour frosting and an apple on the side!
My baking urge took over and I got to work on a few things…more on that later, well if they turn out!
For Dinner, I whipped up a bowl of roasted broccoli slaw with nutritional yeast and coconut oil and socca cooked in more coconut oil, avocado in a shot glass for finishing touches!
Now on the agenda is to catch up on Dexter! I just love this show.
And later a snack before bed!

Favorite nut butter is chunky peanut butter – I’m a purist. Least favorite cardio is the elliptical. I think it’s SO boring.
Ha ha. I like to use my shot glasses by not putting shots in them
Oh man, I used to be an elliptical junkie, now I hate the thing too!
Gotta say, I’m definitely not a cardio fan either – I did spin 2 years ago pretty religiously but I haven’t gotten back into it. Maybe I’ll try again soon. We’ll see. My favorite way to get cardio in is by zumba or walking. Or elliptical, I guess, but only if I’m also reading during it otherwise it’s too boring. And I LOVE your nut butter love here – my favorite is roasted almond butter. Always loved it and always will. I’ve been adventurous with my nut butters lately though. I can’t eat them too much though because I tend to gain weight when I do. Damn self control. But I think PB is my least favorite of all nut butters I’ve tried.
I wish I was more coordinated then I think I’d like zoomba. But, I’m much too clumsy for that ha ha. I’m the same with PB, definitely my least favourite! All though, I loooove peanut flour!

I love almond butter and peanut butter – can’t pick between the two! I guess I like almond butter on its own but prefer flavoured peanut butters (pb & co)
Least favourite cardio is the rowing machine… I hate it so much ugh!

I’ve actually never tried the PB&Co! Such a shame for a food blogger;) ha ha. They don’t sell it here, so I guess I’ll have to survive without it! I actually like the rowing machine, but probably because I used to row!

A couple of years ago I never thought I’d meet a form of cardio that I didn’t like…until I was injured from running and had to swim. Ugh, there is just nothing about swimming I can bring myself to like – the chlorine, goggles digging into your skull, inconsiderate overly fast or slow lane-users, the (lack of) hygiene, the sheer amount of time it takes out of your day. I missed being able to just lace up my shoes and run. I do love spinning too, but not on the same level as running!
I adore Sunbutter and Skippy Natural PB (both creamy and crunchy) – I can’t choose between the two.

Ha ha. Funny, I used to be a swimmer so I actually really enjoy swimming! I’m sure the way I feel about running is the way you feel about swimming!
group fitness cardio is so so much better than treadmill, agreed! glad she got you a bike. Now, about this pumpkin seed butter. did you make it? YUM!

Hmm… If I could eat nut butter my favorite type would definitely be pecan. So creamy, drippy, smooth and sweet. It’s my favorite because you don’t even have to add salt or sugar to make it taste good! Second and third on the list would be almond butter and sunbutter.

Favorite nut butter? Probably cashew butter because itz so decadent. I also really love sunflower seed butter (seed – not a nut!)

I love spin so much more than running! I’m not a huge cardio fan but do love some strength training! Love all your meals as always! That protein muffin looks awesome!

Peanut butter is my favourite nut butter by a MIILLLE hah and I love running the most, but put me on a treadmill and I last approx. 4 minutes.
Ohh treadmills give me the heebie jeebies! (can’t believe I just typed that ha ha)

Ugh I’m not a fan of the treadmill either. Walking is probably my favorite form of cardio, and I’ve been fortunate enough to be able to do it outside all spring/summer, but now that the weather is turning nasty I’m kind of afraid that I’m going to have to move it inside soon, and I really have no idea how I’m going to make it through on the ‘mill. Not a fan. I’m definitely a fan of nut butter, though
Roasted almond is probably my favorite.
I love walking too! I’m starting to get more into it, realizing I don’t need to go super intense all the time! Yah that’s the only sucky part about Winter, is the bad weather and not so good for walks!
I’ve also been having intense stomach aches! Wow.. nice to see I’m not alone… must be the weather lol I hate the treadmill.. I’d rather run outside and get frost bite in the winter than run on the treadmill

You know, my favorite nut butter is still plain, old-fashioned peanut butter! I love the natural, unsalted TJ’s peanut butter. It tastes so sweet from the natural taste of the nuts!
I wish we had a TJ’s here! Sadly, I won’t know how that stuff tastes ha ha. I think I’ll live though!
That photo of the colorful trees is beautiful!! I’m loving all of the bright colors around here lately too. My favorite nut butter would probably have to be good ol’ fashioned natural peanut butter, but I go in phases with roasted almond butter too. I’ll get bored with pretty much any kind of cardio if I do too much of it too often. I like to switch things up between walking, running, spinning, circuits, and the elliptical!
The brightness is just so pretty! Yep, switching it up always helps a lot. I definitely get bored if I don’t do that often. Although, I’m pretty good with consistently sticking to spin classes!

Yep! I’ll definitely share it! I just mix 1/3 cup garbanzo bean flour with 1/3 cup water until all the lumps are gone and heat up a mini skillet on medium with 1 teaspoon coconut oil and just cook it up until it’s cooked! Super simple!!

I’m a big fan of peanut butter! I’d have to say my least fave cardio is biking. I always think I am going to have a great time on the bike but I just hate every moment of it. Unless I am going downhill…haven’t tried spin classes though, that might change my mind.
Spin is quite a bit different from bike riding. You get the fun music and the class environment makes it fly by!
I much prefer group cardio! or running outside. I have trouble on a treadmill or ellipical– i get bored! Favorite nut butter- raw almond butter. Favorite seed butter- sunflower!! I can’t get enough sunflower seed butter right now!
Agreed. Group cardio is a much better time! I’m really enjoying sunflower seed butter too, I’m surprised because I thought I didn’t like it before!
My least favourite type of cardio is actually biking/spinning – I’m just not a fan! 10 minutes in my butt is aching way too much :-p

Ahh I can’t believe how early you get up! I get up at 6 am and I’m fine with it, but before 5 is a little TOO early for me haha.
My least favourite form of cardio is the Stair Master… I can’t last more than 5 minutes on that thing. It makes me feel so out of shape.
Ha ha. I’ve always been an early riser! I think it’s from when I was a swimmer and always had to wake up for early practice. Oh yah, stair master can be killer!

For favorite cardio, I’m torn between running (outside!) and spin. I guess I like running best when the weather is nice outside… and I love spin year round. Never gets old

It tastes just like the almond joy candy bar, but in nut butter form.
I really love Artisana cashew butter right now, it’s naturally sweet and so creamy. I hope your digestive issues get better. I know how frustrating it can be.
