Happy Wednesday all!
Let’s get the foodie fun started.
This morning started bright and early, I woke up at 5 to attend spin class. When I arrived no employees showed up at the gym to open up. There were about 20 of us just waiting outside for an employee to show up. A little frustrating, but at 6 someone finally came in.
I tried not getting too annoyed, but its hard not to when you are up at 5… and technically you didn’t have to be;)
Even though it was a late start, spin was still awesome! I’ve been using spin as my second “therapy” these days.
I came home and was super hungry so made my way right to my bowl of overnight pumpkin buckwheat.
Breakfast -
1/3 cup buckwheat cereal, 1/2 cup pumpkin, 1/2 cup egg whites, 2 teaspoons chia seeds, 1 teaspoon hemp seeds, stevia, cinnamon, topped with a few blueberries and cashew butter.
Delicious.
Drinks happened a little while later. If only it was a glass of wine, however it only seemed appropriate that at 10 in the morning it was coffee instead.
Starbucks once again, with a little sprinkling of pumpkin pie spice for a Fall touch.
I don’t know what has happened, but I’m starting to really hate the taste of eggs again. I love my egg whites, but for some reason the yolk thing is really starting to creep my taste buds out.
This seems to happen time and time again. I love eggs, then I get burnt out and hate them. I guess I’m in the hate phase now! Too bad.
Lunch included my last attempt to re-like eggs. Major fail.
Lunch -
2 pieces toasted ezekiel, half topped with sunflower butter, the other half with an egg. And a side of roasted zucchini slices and broccoli slaw with avocado in a shot glass.
After a [finally] successful grocery store trip (things were sold old like crazy last time I attempted to grocery shop), I came home and assembled a delicious snack.
I topped this concoction with a little cinnamon “sugar” (made with a pinch of cinnamon, pumpkin pie spice and stevia), which made it extra special.
Snack -
Coconut Protein Pudding was on the menu.
- 3/4 cup pumpkin puree
- stevia
- 3 tablespoons peanut flour
- 2 tablespoons coconut flour
- 1/2 tablespoon coconut oil
- a dash of almond milk (if needed)
I’ve been trying to catch up on e-mails and some work from home today. Also some must needed laundry. When are they going to come along with an invention that can do all that folding for me?
Then maybe I’d actually like doing laundry a little more. Everyone agreed?
Later, I remembered I was supposed to get my blood taken, so had to do that. Ick, okay this might actually be worse than laundry. Not fun at all.
I got home and was pretty hungry, so just heated up some leftovers I had in the fridge.
Dinner -
Almond-coconut crusted tempeh, marinara, along with the rest of my roasted veggies that didn’t make it into lunch, all topped with a massive amount of cooked spaghetti squash.
I’m now sipping on some pumpkin chai tea, while awaiting New Girl and the Mindy Project to come on.
Then have plans to dig into my late night snack.
Has anyone seen the Mindy Project yet? I love it so far.

As always, I love all your coconut and pumpkiny foodie choices! When I see something creamy and made with coconut, I think, “that looks like a Lisa food!”
The other morning I put too much pumpkin in my bowl of oatmeal, and it was too soupy and not sweet enough. Since then, I’m turned off to pumpkin oats. wahhh. I still love pumpkin everything else though, so life keeps on moving:)
Ha ha. Love that! Ohh, I’ve done that with pumpkin oats before and made it too watery, it does take a while to get back into loving them after something like that! At least you can get your pumpkin fill else where;)
I definitely go through love/ hate things with food. At the moment im totally off oats- I had them way too much if that is possible. And I’m obsessed with peanut butter. I would be bummed to if the gym opened late and I had woken up early. Good of you to just roll with it it is so easy to get worked up.
I’ve had that happen to me before as well! In fact, I barely eat oatmeal. I’m always eating buckwheat or oat bran usually. I’m weird and have actually never liked peanut butter, its too savory tasting for me or something…clearly I have a sweet tooth;)

Ha ha. So wish we lived closer!! I miss you! Oh man, I just got off my egg loving phase, the only way I can eat them if they are super cooked, like almost burnt. So I’d just rather skip them for now hha.
I tend to over-eat a certain kind of food then get sick of it. Happens all the time. I should learn to have more natural variety I think rather than being forced into it because I’ve over-done something. Love all your foods! Looks so yummy.
I think it happens to me at least once a week ha ha. I definitely need to learn the variety part, but I just can’t help it when I love all the food during that certain phase;)

I thought you’d like that protein pudding! I mean it has pumpkin, coconut flour, and peanut flour. All the best things ever! Ha ha. Same with me and eggs. They were all I were eating as protein for lunch and I just got super sick of them.

Its such a great show! Although I miss her on the Office now! I know, I’m kind of impressed I waited as well ha ha. I guess I Just didn’t want to drive home after all that waiting.
I go through serious food phases. I will have one thing multiple times a day for about a month. Then, suddenly, I switch and eat ANOTHER thing multiple times a day. “Burn out” is the perfect term to describe it. When I was younger my whole family would go through phases together. Take breakfast for example. Bowls of cereal, Belgium waffles, pancakes, pop-tarts, toaster strudels, egg sandwiches, bagels and cream cheese, cream of wheat… They were all on a rotational basis where we would eat just one thing for breakfast for a few weeks. Then shift.
No new foodie items sadly.
I’m definitely the same way! Oh that’s funny. I never thought of my family going through food phases, but its totally true they definitely did as well!
I love coconut everything! I used to be so scared of it because of the fat content – I’m glad that’s over!

I used to be super afraid of the fat content in coconut as well. SO glad I got over the low fat thing, that was just awful. Since coconut is one of my favorite foods now! Thank you Shreya!
does the coconut oil and flour really make it taste like coconut? I hate the taste of coconut but obviously I want to try some paleo options but it seems like alot of recipes have that in it!
I find if you use a coconut oil that is refined you don’t have the same coconut taste you get with other oils. I mean, the unrefined it still a really light coconut-y taste. But, if you hate coconut then that’s probably still not great ha ha. Its definitely a popular oil in paleo. I actually find the oil doesn’t taste like coconut, its just very light and slightly sweet tasting.
Love all the healthy meals and you know I love the pumpkin recipe! I’ve never seen the mindy project but have been hearing such great things about it I think I’m going to have to check it out!

I have never seen the Mindy Project yet but I have it on my DVR. I am going to have to watch it and catch up! Have you ever tried making chocolate protein pudding? I am not the biggest fan of coconut but you got me thinking that I might be able to use your recipe with chocolate. Thoughts?
Oh yes, you have to watch it! Its pretty good! Oh yes, you could definitely make it with chocolate or cocoa powder instead! I just can’t have chocolate since I suffer from migraines! I’d definitely give it a try!

Okay, I have a big bowl of spaghetti squash waiting for me at home–AND I have some tempeh. You may have just decided my dinner. (And please let me know when they invent that laundry-folding machine, haha. My LEAST favorite house chore, hands down!)

Oh my lady, I can understand the food aversion. This very same thing happened to me with eggs a few years ago. I remember it exactly. I was getting ready for a hair appointment, so wanted to make a huge egg and cheese sandwich to hold me over since those highlight appts take HOURS. So, I go to take a bite, and I GAG. I seriously ran into my bathroom because I thought I was gonna barf. I have no idea what it was. I can eat eggs now, but I cannot do egg and cheese sandwiches. SO weird when this happens!
All the rest of your food lookin’ awesome. So going to recreate that pudding!
Oh my gosh. Yes, they just make me want to gag now. I’m hoping I get over this aversion soon! Who knows though!
I agree with you on the yolks! I only like then runny. Hard boiled makes me gag. I’ve also burned myself out on foods before (hello, oatmeal).
I just tend to get food obsessions and won’t stop eating them until I’m completely sick of them…oopsy.
This was frightening. I’m totally a food-phase-gal, and I just got on eggs a short while after you. Does that mean I’m on the way to hating eggs too?! I wonder if the coconut phase will end…
Well done for keeping cool about the gym not opening on time- I’m a moody bitch when that happens:p. And I know what you mean about folding laundry, it sucks! When I very 1st moved out of home, I just didn’t do it( yup, I shoved my clothes in bags). Thankfully, iv manned up since then, & even though I despise it , I now fold my laundry. See, I’m growing up.

oh no, not the egg yolk!! IT’s magical. haha, jk. Its easy to get sick of. I’d try mixing eggs with pumpkin and coconut flour and baking in a mug with vanilla stevia. really good.

I go through food phases for sure… I usually eat one food to death and then I get crazy sick of it! I can think of something recent, sweet potatoes. I do enjoy them but yeahhh I need to take a break, the thought of them makes me a bit ill lol. I guess that’s what I get for eating one nearly everyday for the past year

I get sick of foods too! Try mixing your egg with something else to spice it up! The yoke has so much good stuff in it!! I love nutritional yeast in mine.

I go through food phases as well!! –not at the moment however… I am working with a nutritionist right now and pretty much eating the same thing every day.. it will get old quick I’m sure, but for right now its working.

Oh yah, when I was working with a nutritionist I liked eating the same foods everyday for the sake of routine, but it got old quickly ha ha.
That’s kinda bs that employees didn’t show up to the gym at the time they were supposed to. How professional of them….. Anyway I do go through food phases too but mine aren’t extreme. I do love certain foods for periods of time and then I must kinda forget they exist for a while.
I know it kind of sucked, but oh well. Yah my good phases can be either extreme or I simply forget about them for a while.

I usually just stuff my shirts in my drawers because I don’t have the patience to fold anything. Guess what happens next? I end up ironing everything (which takes twice as long)! Haha.
I love that avocado shot…I think Mexican restaurants and bars need to start offering this option on their menus. Tequila? Who needs that?
Your “pudding” sounds amazing! Anything that contains pumpkin + coconut +peanut is a winner in my book. I love making pumpkin coconut flour pancakes and drizzling them with peanut butter or peanut flour. SO good!
I’m a food phaser for sure. I tend to go on and off with eggs too, but I’ve never overdone them to the point where I can’t eat them anymore. I can usually tell when I’m starting to get tired of them (that smell!), so I’ll stay away for a few days. Before I know it, major egg cravings kick back in, and I HAVE to have them again.
