Things I Know

Morning everyone!

I hope everyone is having a great day and is thankful that another week is upon us.

As much as I love how fast these months have gone by, I’ve had little time to actually appreciate the fact that I’m so lucky in my life everyday. For those simple things I take for granted.

Especially when a lot of the world is going through pain and suffering. We all have so much to be grateful for.

All those simple things add up.

Today, I’m honoring those facts.

* brown rice tortilla, tomato paste, oregano, nutritional yeast, sauteed spinach in coconut oil, plain spinach, goat cheese *

I know that my tortilla pizza I made for dinner last night was delicious.

Even if it wasn’t all that gourmet.

Lazy wins, sometimes.

I know that I’m super jealous of everyone who is getting snow right now.

As much as I hate being cold, I dislike rain way more than snow. Yep, I love snow!

Too bad Victoria is lame and we never get any.

I know that in despite of the snowless weather, I’m getting prepared for lots of holiday baking.

Bring on the gingerbread and peppermint flavored goodies!

I know that I’m blessed to have my health and will never take that for granted again.

* isn’t this just the most fun (giant) wine glass? It’s my friends not mine, but I heart it *

I know that as much as eating healthy is important to me, enjoying a glass (or two) of wine every now and again is perfectly healthy.

Obsession isn’t healthy, balance is.


I know that coconut butter is the greatest roasted squash topping ever. Or any topping in general.

No other nut butter can beat its delightful flavour.

I know that Zuzana’s newest workout kicked my booty.

All her workouts are seriously amazing, and all can be completed with minimal equipment and time.

There’s no excuses to not get a good workout in.

I know that David’s Tea cocomint tea is oh, so scrumptious.

A lot of people asked me about this flavour, and I definitely recommend it!

I haven’t tried the other 2 flavours I bought yet, but I’m assuming their equally as good!

The perfect Winter tea for a chilly night.

I know that kale chips make a perfect side dish.

Especially, when they are cooked with nutritional yeast, coconut oil and dill.

I know that today is going to be a good day, and I hope yours is too!

  5. I know i am sore today from my workout yesterday! LOL

    I bake kale chips in the oven as well! Hopefully I get a dehydrator eventually.

    • A little soreness is always good. I love a little bit of that sore feeling, since I’m odd. Oh man, I’d love to get a dehydrator!

  7. You’re more than welcome to some of our snow, girl! We look pretty much like what you had in Calgary right now, and as much as I love the snow, it definitely makes things a little bit more complicated. I ran out of my favorite nut butter a few days ago and haven’t been willing to brave the crazy streets to get more. And I’m pretty sure I have to try that tea… I still haven’t made it through their Fall flavors though, and I have so much tea that I’m not sure I should be buying more!

    • I totally know what you mean! I was lucky that I lived on residence at the time, so it wasn’t a problem to get to class or anything. I just love that weather, but it’s definitely no good for driving!! You definitely have to try the teas! I actually like them better than the Fall flavours! And I loved all of those. Oh man, I have about 13 different teas ha ha. Oops. I guess it’s good I drink it all day long.

    • I can’t believe I’ve never had ginger snaps before! Clearly, I need to fix that this year! Ha ha, I’m the same, as long as I don’t have to drive to work the snow can stay!

    My favorite pizza toppings are spinach, onions, tomatoes, artichokes, and pineapple. I LOVE me some pizza!

  14. I know that you are right, in that we all have so much to greatful for & are blessed. I need reminding of this frequently.
    Also I’m pretty excited by the ginger bread , it has to be one of the most perfect sweet munchies to enjoy in the festive period, ginger is so warming & also good for you. I definitely want to make some.

    I totally agree that Zuzanas workouts are BOMB. She has like this knack for making exercise challenging , yet fun , and speed by. The last one I completed was Zwow 41 which is awesome. I’ve yet to do 42, I’m going to soon though, those strict mountain climbers are freakin hard!

  15. This post is so cute! I love it! I need to try coconut butter: I’ve still been holding out on that one. But I do love me some Kale chips! Nothing better in my opinion. I just toss mine in coconut oil, S&P, but I love the cheesy nacho flavor from Trader Joes!

  16. Hi lovely, I am SO far behind on blogs but am currently a ‘lady of leisure’ (aka unemployed !) so I have plenty of time to catch up :-)

    Your pizza looks so yummy. I know what I will be making for dinner tonight!

    It doesn’t snow in my neck of the woods, sadly. I am definitely a Winter person. Summer has come early here and it is so hot and muggy.

    Something I know is not to worry about not having a job, just to concentrate on applying for as many suitable jobs as I can and knowing that the right job is out there for me.

    I don’t make kale chips as we can’t buy it here which is frustrating. Fav pizza toppings? Good old margarita!

    If you think that coconut butter is the best topping for squash do this…roast an acorn squash with some olive oil for about an hour then drizzle tahini *sesame seed butter* on top. Seriously………this is the BEST THING on earth…my latest obsession!

  20. Davids Tea..where do I buy this decadent treat? I make citrus flavored kale chips, I know it sounds off but when you squeeze grapefruit, lemon and sea salt onto kale its like heaven sent! I know that the holidays are going to be the best yet, since I am hosting every holiday at my home this year :) Love and Shine CourtStar

    • You can buy it online or in stores! But, I know a lot of places in the US don’t have it yet. It seriously is the best tea I’ve ever tried! Oh I think that kale idea sounds so interesting! I’m definitely trying it out next time I make kale chips!

    ohhh my goodness that David’s tea Cocomint Cream sounds delicious!!
    I have 2 very good friends who live in Calgary! Are you still going to school there, or do you go to school in Victoria now? I’ve taken the Ferry to Victoria so many times…it’s such a beautiful city!
