Hello and Happy Monday!
Hope you all had a swell weekend!
It went by far too fast in my opinion.
With all my lovely American friends getting ready to celebrate Thanksgiving this week, I really feel the holiday spirit picking up and I couldn’t be more excited.
Anyways, here are some things that got me excited this weekend. After a workout, I turned on the stove to make some delicious hot pancakes.
Topped with a little greek yogurt and some almond butter.
Thanks to the recommendation from Laura and the recipe from Heather.
Next time you have pancakes on the menu, make these! So delicious!
Perfect Sunday morning fuel. (This is actually a recycled picture, and not of her pancakes, since quite honestly I was too hungover to picture them. Oops.)
I made more of my favorite chili to fuel my night of movie watching on Friday.
I used butternut squash instead of sweet potato, and I think this version is even better! Yum.
Clearly, you need some fuel before sitting on the couch all night.
Going out with friends on Saturday was an obvious highlight.
It ended up very convenient that my dress had pockets. Perfect for holding my ID.

We started talking about the whole 2012 debacle. Anyone else totally forgot about it?
I sense a lot of people are going to go slightly berserk in the next few months.
On a less serious note, I think I need to dye my hair again…possibly go a little blonder.
Random note: Did you all know I used to have (basically) black hair before?
Yes, that has certainly changed a lot.
I saw this lovely gem when I was browsing the web, and I really wish we were drinking these pumpkin pie shots.
Instead we went with a less classy drink.
Let’s be honest, these are absolutely adorable and look amazing!
I think…I’m actually not sure what I make of this, I’m guessing it’s something you either love or hate.
But, I’d be down to try.
Parsnip fries have been making an appearance in some of my meals lately as well.

I cook them the same way I do rutabaga fries.
Just slice them up, toss them in a generous amount of coconut oil, a dash of pink himalayan sea salt and roast them up at 375 for about 40 minutes until crispy.
Perfection.
I basically lived in my gym clothes this weekend.

It was awesome, but possibly gross at the same time.
I completed a workout at home…per usual and had to photograph my bright pink pants, just because I love them so.
I went to Lululemon last week and saw they had purple ones, so I’m pretty sure I’ll be needing a pair shortly.
Well, I’m off to do some meal prepping for the week!

The best thing about my weekend was completing two races in two days! I finished the Rock n’ Roll Miami Beach race and my legs are still burning! Have a great week!

The more I think about it, the more I realize how weird it must be to have all of these American bloggers posting about Thanksgiving when you will not be celebrating it this week. That must be a bit strange??
It’s definitely a little weird. Just because I’ve already had my Thanksgiving! But I don’t mind it too much. Just another reason to look for the little things I’m thankful for!

Thanks Lucie! Workout clothes are just much more comfy than typical everyday work clothes hah. As soon as I get home I always reach for the sweats or PJ’s! That sounds like such a fun Saturday night!

Aw thanks Devon! Yep, squash is just the best tasting veggie out there. It’s an obsession this time of year. Ha ha. Gotta live it up before the world ends

The world ending in 2012 in ridiculous…I was in Mexico last May and we went on a tour of some Mayan ruins. The tour guide ended up explaining that whole debacle and explaining how it wasn’t true at all – the Mayans believe a new era will start in December 2012, but it is not the end of the world.
I’ll try to post one up! I look a lot different, since I was also heavier back then too. It’s weird to look back on my hair changes…I’ve had all different colours! I clearly liked to experiment with them! Oh man, I know right. That’s actually pretty interesting they described all that in your tour. I’m kind of fascinated in it all, but don’t believe it. It’s just crazy how people get SO into it and totally believe it!
Hehe someone just brought up the whole 2012 thing with me the other day, but before that I had completely forgotten about it. I think it’s kind of goofy, to be honest. There’s no way we’ll ever know when the world is going to end, and there’s nothing we can do about it anyways so what’s the point in worrying? Live in the moment each day and enjoy life is what I say
