Happy Wednesday! The fact that it’s the middle of the week is making me smile. Another reason to smile? It’s What I Ate Wednesday.
Today started bright and early, like it usually does. Up and at my spin class for 5:30.
Spin class has definitely gained popularity this year! I remember this time last year, there were probably, at most, 10 of us. And now we have to get there super early to make sure we get a bike for class.
Of course, it’s a good thing that people are getting involved in spin class, but I always dislike having to get there even earlier now.
After spin, my Mom and I went to Starbucks to treat ourselves to a coffee, typical. We are both Starbucks addicts.
When I arrived home, it was time for Breakfast.
Breakfast
This bowl had ground buckwheat cereal, 1/4 cup egg whites, 1 tablespoon chia seeds, 1 tablespoon ground flax, cinnamon, stevia, pumpkin and banana.
I was having a little craving for some tanginess to my morning bowl, so I scooped in some greek yogurt to satisfy my craving. Topped with peanut flour to finish it off.
I didn’t have time to stretch much after class, so I made sure to get my foam roller out and do some stretching in the living room. It was sort of challenging, and stretching hurts like heck when you avoid it.
However, I know I need to be stretching more often, you know, so I don’t get injured.
Lunch
Post stretching, I baked up some tempeh, cauliflower, broccoli slaw, nutritional yeast, curry powder, coconut oil and served that on top of some pre cooked quinoa. And goat cheese, which melts all over the hot veggies.
Yum.
I finished this up quickly, since I had to go to my acupuncture appointment. Have you ever gone to acupuncture?
I have to say, it has helped me SO much in dealing with my anxiety and stress levels. I love it.
Which may be kind of weird to say, I digress.
In between the hours of Lunch and Dinner, I was actually pretty hungry. Which doesn’t happen often on workout days.
I went with it.
I snacked on an apple, and then a few hours later snacked on a pumpkin protein bar with more pumpkin seed butter. 
Snacks
Clearly, I’m obsessed with this stuff. It’s awesome.
Oh yes, the pumpkin bars and pumpkin seed butter go oh so well together.
And helped tide me over until Dinner time.
I’m glad I had prepped my chopped veggies ahead of time, since I was having a major migraine.
Dinner
I just threw in some spinach and zucchini in the oven to roast and while that was baking away, I cooked up some socca to round out the meal. Topped with some extra coconut oil and nutritional yeast, and hidden mashed avocado in a shot glass.
Now, I’m sipping on tea and getting ready to finish the rest of the best movie ever, which I started watching Sunday, but for some reason didn’t finish?
Before bed, I will always snack again before hitting the hay. That’s a weird saying.
With that, I’m off.

I need to stretch WAY more! I’m hungriest right when I get home from school (work) around 4:30.
I stretch after my workouts, but it’s pretty halfassed – I need to put a bit more effort into it!

I have no idea where the ‘hit the hay’ expression comes from either… but I’m curious so I’ll probably end up Googling it
When it comes to stretching… ehhh… I’m not the greatest at being consistent. Usually I end up being in kind of a hurry after my workouts, so I skip on the stretching, but I do a lot of stretching in general at random points throughout the day, so I hope that’s enough? And I’m definitely the most hungry in the afternoon. The hours between lunch and dinner just seem like one big snack fest.
Yay for more stretching! I’ve been stretching every day for the past three months and have seen so much improvement in my strength, flexibility, and muscle tone.
I feel like I’m most hungry 2-3 hours before dinner too! Love-ah you.
MM goat cheese is so good, especially melted like that.
I think I am most hungry around 3 PM. I usually have an apple and peanut butter at that time to get me through my post work workout and until dinner.
Stretching is so important after a workout although I wish I did it more than I do.

Seeing that goat cheese in your dinner reminded me that I’ve had your mac n cheese balls on my ‘to make list’ for entirely too long. So that settles it, I’m making them tommorow.
And you hit me with this huge socca craving,oy! I read your blog in the morning- and I swear ,the majority of the time your posts decide what I’m going to want to eat the rest of the day. I just <3 all your food:D.

ok I’m opposite of you – whenever I take a spin class (esp. the 60 min. one as opposed to the 45 min.) I am ravenous the entire day!
Urgh I probably should stretch a lot more…I just forget. Not good I know! I’m most hungry between lunch and dinner and always have to have snacks to tide me over. I’m obsessed with nutritional yeast, I sprinkle it on all my salads and chillis. Your food looks very good
I love acupuncture! I went all the time this summer and it was fabulous. Hopefully I can get back into it, but at school I haven’t found a place that I like as much, or where I’ve felt as strong a connection to the doc. I’m glad you’re enjoying it!

OMG… I love acupuncture! It makes me so relaxed!! I’m always STARVING at night. It is terrible..
I used to get acupuncture as a kid, it depends on how good the practitioner is, but for me it definitely worked. Anxiety is the pits!
I love spin but I hate it if I miss a bike, so frustrating! And I’m not prepared enough ever to get there early! Your food loOks so good!

Yes, I am a HUGE advocate for stretching! You know, I’ve been a trainer for 10 years but the first 4-5 I would stress the importance of stretching but not do it enough myself. My body paid for it!! Now that I do yoga 3x a week my hips have been happier
