Hi there! How are you all doing on this lovely what I ate Wednesday morning?
It’s pretty rainy over here, which isn’t that exciting. I’d much rather be hanging out indoors than doing anything slightly productive during these times.
Waking up was no joke this morning, I had a massive headache but decided to power on through to spin. I felt much better after. And it was an awesome class, we got some new music which included more tunes that I like. So, I was pretty happy getting my spin on this morning.
Today doesn’t include too many veggies, since I’m in serious stomach distress from a few days ago. Although, light on the veggies it was a winner on taste.
Breakfast – overnight oat bran.
In the bowl:
- 1/3 cup oat bran
- 1/3 cup egg whites
- 1/3 cup pumpkin
- 1/2 banana
- cinnamon, stevia
- 1/2 tablespoon each flax and chia seeds
- topped with cashew butter
I had an appointment to get to after, so I quickly made my way out and ended up spending a total of 2 hours at the Doctor. Yikes.
When I returned home I was starving.
Since I didn’t want to wait long, I made a simple sandwich.
I didn’t take a photo, but it was basically this (minus the strawberries)
Lunch -
2 slices ezekiel bread, an egg, spinach, goat cheese, homemade strawberry jam.
It was pretty the jam. I haven’t had bread in a while, so it was a nice change.
To treat myself for heading to spin this morning, I stopped by Starbucks to get caffeinated.
The line was super long, so I did what any ordinary girl would do; have a photo shoot in the car.
I’m sure the people walking past me were super jealous of this. I’m so normal.
I had a few more errands to get to so threw together a snack after I was back at home.
Snack -
A piece of gingerbread I baked yesterday.
The flavor is a hit, but unfortunately is a little too moist (sorry for the word) in the middle.
Will work on fixing that so I can share it with you all soon!
Oh man, I was excited for Dinner this evening. I haven’t had spaghetti squash in far too long!
Dinner -
I roasted that squash up, and loaded on some homemade marinara sauce, homemade turkey burger, and the last of my broccoli slaw.
I think squash should be its own food group. I love each and every one I try.
I guess this was my only meal that was really veggie filled, but that’s okay. Not everyday is going to be filled with tons of veggies and fruits.
I was going to finish the night with some coconut ice cream, but realized I was out.
Snack – sorry for the awful picture
Instead, I made a protein muffin with coconut cream and peanut flour paste.
The coconut and peanut flour together is basically heaven.
Now it’s time to catch up on Dexter from Sunday night, read a little, and get into bed at a decent hour! I’ve got to stop procrastinating on that front.

Geez Lisa your meals always look delicious lol…. Can I move in with you? My favorite squash has to be kabocha, then I would have to say butternut. I like them because they are so sweet and taste great with cinnamon, my favorite spice! When my stomach feels off,I actually don’t avoid veggies because I’m addicted to them , but I do avoid dairy. My favorite iecream flavor has to be just plain old fashion vanilla, I’ll choose the toppings;) By the way, your hair- perfection:).

I definitely avoid most veggies when my stomach feels off. I also avoid apples, because those just seem to make it worse.

Thank you! Yah, apples are weird because they tend to make me nauseas as well! Maybe it’s the sugar or something. Oh no, nothing bad at the Doctor’s it was just a long wait!
I love spaghetti squash and always have it in my apartment ready to be cooked. There are so many things you can do with spaghetti Squah. Second is Butternut Squash mainly because I love butternut squash soup.
As far as ice cream I am a vanilla girl all the way

I do try to avoid veggies when my stomach is off…for some reason they usually make it feel worse.

It’s kind of weird how veggies make us feel worse, I guess because they are so bulky. Ha ha, I feel you I actually prefer plain yogurt over ice cream…most times:)
I definitely avoid veggies whenever my stomach feels off. Actually, I’ve more or less been avoiding veggies in general because they tend to throw my stomach off. I used to eat massive salads and huge bowls of roasted veggies and my stomach just can’t handle it anymore. Unfortunately, that usually means no more squashes too
Kabocha has always been my favorite, and I miss the days where I could roast one up and smother it in melted coconut butter and cinnamon…
Oh no that’s so sad! I feel my stomach has gotten that from certain veggies. Probably due to the same reason!
I hate long doctor’s appointments! Once I waited 2 hours and saw a doc for 15 minutes. Ugh! I love you taking selfies outside Starbucks. I feel like people stare when I take my gym selfies but hey, it’s fine. Like you said they wish that they were normal like us.

That was basically my appointment! It drove me a litte batty! Ha ha. People always look at me odd, but whatever. It was awkward once when my friend saw me take one and texted me after, quite funny actually. It’s okay, take your time love!
oo yesss I always skip veggies when my stomach isn’t feeling right lol I try to convince myself I can live off perfectly fine with just fruit and carbs haha

I love spaghetti squash because it’s so easy to just mix up with other veggies. I’m also a huge fan of delicata though. Favorite ice cream- Luna and Larry’s Coconut Bliss, mint galactica flavor. Yum.
I still haven’t tried delicata, next on my list!

Veggies or not, your meals/snacks are ALWAYS packed with nutritious stuff. Your breakfast gets me everytime, I just loveeeee eggy oatbran so much!
And kabocha has to be The Best squash right? Anyone who thinks otherwise is just, well, wrong:p.

Yummm… That jam + goat cheese + strawberries on your toast looks SO good! My favorite squash is probably butternut squash, but I do love pretty much all of them. As for ice cream? Chocolate chip cookie dough or cookies & cream!

Honestly, I had never even tried spaghetti squash until recently. I had seen so many bloggers eat it and I was intrigued, but intimidated by the size of those things! But it’s my favorite now – especially with turkey meatballs and sauce! Delish!

I’m pretty sure I’ve made that exact sandwich before, same bread and everything! Love the homemade jam and egg together. And don’t worry, my protein muffins never look so pretty in photos either.

Mmm I adore spaghetti squash. Sadly it doesn’t seem to exist in Australia anymore (my Mum used to make it for me when I was a kid. I tried to grow some last year and managed to get one in an entire yard full of tangled plant tendrils-gardening is not my strong point!!) I’m very jealous of everyone who can get it!
I too have IBS (am currently looking into Fructose malabsorption which seems to be the new way to treat IBS). Fruit has always bothered me and I definitely limit the veggies when I’m not well. I do eat potatoes and pumpkin and stuff though. I tend to carb up on bad days. Seems to be the only thing that doesn’t cause too much distress.

I always avoid veggies when my stomach feels off too – I usually end up eating a lot of oatmeal bread, and bland foods!
I haven’t had spaghetti squash in forever! I like it, but I much prefer the sweeter squashes so I always buy those ones instead haha.
Same with me! I just can’t stomach the fiber all the veggies have. Yes, I definitely prefer sweeter squashes ha ha. I have a huge sweet tooth!
