Why hello there Wednesday, we meet again. Time for the usual foodie fun.
I tried to mix things up more this week, but I’m such a creature of habit I can’t help myself from returning from the old favorites.
My day started off bright and early with a not so new workout, spin class. Even though I go twice a week, I love that each class is different from the last. Intervals are the best.
This morning I realized just how cold it has gotten over here now, ick. I guess that just means I get to load up on coffee and my favorite teas. Fine by me.
I returned from spin starving so breakfast was had as soon as I walked in the door.
Breakfast -
Pumpkin oat bran always tastes amazing in the morning, plus it’s ready as soon as I’m home….so they’re back once again.
Hey, if it works it works.
Since I dropped my bottle of molasses over the weekend, I made my way over to the store bright and early to get there before the crazy later morning crowds arrive. And made sure to stop for coffee as well!

It was perfect timing, the store just happened to be dead. I picked up a few necessities and came home to get my baking on.
I also picked up 5 kabocha squash I found at the store. They re-stocked so that was a pretty pleasant surprise.
Yep, I’m cool like that.
I got home and did a little work before breaking into my next meal.
Lunch -
I decided I wanted to make some sort of pizza, but didn’t have any tortillas or crust. Easy enough to fix.
I simply made my own from 2 tablespoons ground flax, 1 tablespoon coconut flour and 1 egg, which I fried up in a smidgen of coconut oil.
Topped with tomato paste, spinach, roasted brussels and goat cheese. Baked in the oven for about 10 minutes until the cheese was melted.
For last minute making, it was delicious.
Later, I whipped up a snack…
Snack -
Pumpkin coconut frosty. Oh my, I forgot how superbly amazing this snack is.
Even though I was freezing after it was well worth the pain. I realized I have an absurd amount of canned pumpkin and coconut milk, so I had to get to work on using those up.
I had some time to kill, so I quickly met a friend for coffee at Starbucks. Double coffee day don’t mind if I do.
When I got home, I wanted something fast. This meal came together in no time.
Dinner -
Socca, coconut oil, nutritional yeast, broccoli slaw, fresh dill, crushed red pepper and avocado.
I’m socca-obsessed these days.
Clearly, I had a burning issue in the kitchen tonight. Oops. I always forget that I have things on the stove or in the oven and leave them in too long.
This meal was nothing to rave about, but it did the trick.
I’m writing this after dinner, but I already know what I’ll be snacking on later…the usual
Evening Snack -
Protein muffin, coconut cream, and un-pictured peanut flour paste (it was far too ugly to photograph).
Now, to catch up on Dexter from Sunday with a cup of one of my new favorites; cocomint tea.

Everything looks stellar! And I’m so glad to see that I’m not the only one still using pumpkin. I figured that everyone would just stop right after Thanksgiving. Glad I was wrong!

My favorite “odd” combo (not really sure if it’s odd) is tuna a grapes. I just love the taste of them together!

I took a spin class on Monday after a long hiatus! It was fun, but I didn’t like the music that this instructor used
I need high energy music when I spin, and she used more jazz/rock type of music, oh well a workout is a workout I suppose!

I hate when that happens in spin classes! It has happened plenty of time, but I always just try to remain in a good mindset and just get through the class anyways.
Looks tasty, coconut is delicious even with just the unsweetened shredded kind.

My favorite odd food combination is putting potato chips in a sandwich. You don’t really taste them in there, but I love that crunch!

I agree, it has gotten really cold during the last days. My favourite tea is called “Sweet chili” tea and has lots of cinnamon, liquorice, cocoa shells and other spices. Herbal and spice teas are the only ones I really enjoy.

Cold? Brrrrrr… tell me about it. I’m seriously thinking that I need to start changing up my breakfast to something warm because it’s getting a little too cold for yogurt and cereal around these parts. At least I still have my hot teas/coffee though
And speaking of tea, I’ve seriously been drinking like 6+ cups of it a day – it’s getting a bit ridiculous. I haven’t tried any of the new holiday teas from David’s, but my favorite tea for years has been Hot Cinnamon Spice from Harney & Sons. It sucks because I have to buy it online, but it’s definitely worth the hassle.
Especially being in Edmonton! Ha, I can imagine how cold it is there. Hopefully you can add in oatmeal soon! Teas and coffee saves the day! I drink a ridiculous amount as well, it’s insane. I’ve got to try the cinnamon spice!! Especially if you rave about it, I trust your tea opinion.
That pizza lunch sounds so fabulous! I love me some pizza. The slaw looks wonderful too – anything burnt is OK by me. Though a couple days ago I left a roll under the broiler that I was trying to crisp up. Instead I burnt it past the point where even I could eat it. That is saying a lot. Gotta love a double coffee day! For me that seems to lead to double double coffee days and you get the picture…
I always broil things to the point where they are lightly burnt. It takes a lot of burning for me to throw food out too ha. It happens a little more than I’d like to admit. Oops.

I made something kinda (vaguely:p) like a less cold version of your frosty today actually. Just blended pureed butternut squash-(my pumpkin alternative), cottage cheese, vanilla sunwarrior , stevia+ cinnamon/ginger/nutmeg. Turned out like a wonderful mousse type thing.

Favourite tea at the moment is Ginger and Lemon Pu’erh! I’m addicted! Gorgeous pics and yummy eats, I haven’t had Socca in too long!
I love that tea as well! Especially when my stomach is sore. Ginger is a miracle for that.
Props to you for thinking of an alternative pizza crust and yum! May be a silly question, but what is socca?! One strange combo that I love is mustard + salsa or tomato sauce on salads!

I’m kinda a tea nut! I’m a chai girl and genreally a loose leaf tea person – but right now I’m really loving celestial seasonings ‘sugar cookie sleigh ride’. Lordie is good!

I have all kinds of weird food combos…. lol! I have been drinking so much tea lately its silly. I’m loving my David’s Teas that Meg sent me. We need one of those here!!! I have got to make some socca here soon. You make it look so good!

I wish I liked the hills more, I always dread them. I’m much more of a sprint lover.
Whenever I try to mix things up I always revert back to my favorites as well. Whatever works I guess! I have been really into socca lately too, it is so good and so easy to make!

Yay someone who shares a passion for kabocha squash! The other day I roasted some acorn squash to try and add a bit of “variety” but I didn’t like it and the next day I roasted up a whole kabocha just to make up for it
I eat so much of it that my mom has actually been telling me that my nose is turning a bit orange…..but its soooo yummy I don’t think I could stop eating it even if I tried!
Ha ha! My Mom says the same! I can’t help that I love the stuff! I try other squash but there really is no comparison!

how exciting! (i just found your blog!).. i love kabocha squash too but i actually was born in japan, and in japan they count it as 91 calories per 100g raw!! (higher than a sweet potato!) not 40 like all of the north american sites suggest!.. now every time i eat it i get confused because that’s such a huge difference!.. i grew a bunch in my parents’ garden this past summer so i’m still working on eating up my stash!

I live in abbotsford! my mother was born in victoria though so i frequent there a lot!..
), dry them, then next spring soak them in a little water over night and plant them.. just make sure to water them every day and you’re good to go! .. for some reason they do really well with our climate here!
