Hello and Happy Friday!

Thanks for all your comments on yesterdays post! Even though they weren’t all positive. Let’s just remember, I’m doing this for myself. My nutritionist and doctor know about these changes and I think that’s the most important part.

I don’t know what my BMI is, but my Doctor seems to think I’m doing fine right now.

I know I have a blog, so I’m open to comments like this and I honestly don’t mind at all. I just wanted to say my piece. I’ll get back to all comments shortly, but it’s my families last day in town so I’d like to spend as much time with them as possible!

Anyways, let’s get to this weeks confessions.

1. Since I can’t have my favorite protein muffins right now (sad again), I’ve been relying on this pumpkin cookie dough lately.

I always forget how good this is! But, I also miss those wonderful muffins. Anyone have a good single protein muffin that’s vegan and flaxseed-less.

Maybe I’ll just need to go on a cooking spree and figure on out for myself!

2. I’m SO thankful I can have coconut still and that I can reintroduce cacao powder into my diet.

My nightly beverage has been cacao spiked hot coconut milk.

Oh man, I’ve missed this stuff way too much.

3. Roommates stealing your food?

Do I have a solution for you…

I saw this food locker on amazon and thought it was something I so desperately needed my first year of college.

I swear we all stole each others food and it would make me go a little batty. It’s annoying when you go to eat something and it’s gone when you clearly haven’t touched it. I guess that’s what happens when you live with three other girls.

4. This present I got for Christmas.

For Christmas, I received the Starbucks verismo maker and I’m in love.

No more daily Starbucks trips, since I have this beauty. The espresso turns out just as good as Starbucks and this way I’m not spending as much money as I was before.

If you noticed, I have extra Starbucks to-go cups because I’m obsessed with them and won’t drink coffee without them. So I’m always asking for extra cups when I get coffee.

I’m so normal.

5. Making more nut butter.

I went through my first batch of pumpkin seed butter so fast and had yet to replenish it.

I finally got some more pumpkin seeds and made more pumpkin seed butter.

It’s the best. You’ve got to try this seed butter if you haven’t yet!

6. 2013 is the year.

The year where the best movie sequel will come out. Anchorman 2!

Words can’t even describe how excited I am for this wonderful event!

Will Ferrell is simply the best. In everything he does. I think I’ve said that before…

  1. Although I haven’t tried it myself yet, I’ve heard that chia eggs work as a great alternative to flaxeggs/real eggs in baking…worth a shot!

  2. Do your thing , Lisa!! It’s YOUR body and YOUR blog, so just do what is good for YOU!! We all are different and need different things, as long as you feel good, go for it! I can recommend Danielle’s blog (cleanfoodcreativefitness.com) for recipes, they are not all vegan, but she mostly makes suggestions for a vegan version. That coffeemachine rocks!!

  3. Sorry you got some negative comments yesterday! I think it is fabulous you are figuring out what works for your body :) I’ll have to get experimenting on some vegan recipes for you! Totally not planned but I just made gluten and egg free cookies yesterday and I will have to post the recipe for you soon!

    And oh god, that cage – one of the reasons why I could never have roommates.

    • That’s true Sam! Sometimes it can be hard to get those comments anyway though. Haha, I know right. I don’t think I can ever have roommates again!

  7. Hi Lisa~ I am a new reader and have enjoyed reading though some of your old post the last day or so. Back in August you talked about how to know if you are not getting enough calories. I have the same problem and alot of those symptoms you described. Another one big for me that I am trying to figure out is retaining water in stomach and legs. I am curious if you think that not eating enough calories and make you hold on to water or if it is a food intollerance that is causing it?

    Any suggestions?

    • Thanks so much Heather! I’m glad to hear you’re loving the old posts too! Oh yes, when I first increased my calories and started recovering I definitely retained a lot of water in my stomach mostly. It does go away if you just keep up with your calorie intake (don’t restrict, this will make it worse). If it doesn’t go away, I definitely recommend seeing your Doctor! I’d say it is probably from the extra calories and not eating enough previously, but if you suspect an allergy (they can cause bloating, gas, indigestion, constipation, skin issues) I’d go see your Doctor for more info on an allergy test.   8. Do what’s best for you :) I know I get a lot of “hate” from my Aunts/Uncles/Cousins for being vegan but it’s what works best for my body and that’s really all that matters :)

    Protein muffin: 1/4 cup pumpkin, 1/2 tsp baking powder, 1 tbsp chia seeds, 2 tbsp water, 3 tbsp coconut flour — cook for 3 minutes :)

I’ve been so curious about that since I’m at Bux pretty much every day and it gets a little bit expensive… buuuut at the same time, I’m not sure how I’d make my cappuccinos with it, and part of what I love about the whole Bux experience is actually going out and sitting in the coffee shop.

    • Yes, I got it! I was SO excited when I opened it up ha ha. I definitely don’t think the cappuccinos would be the same to be honest. I just like it since I drink americanos, so they can’t be too hard to mess up! I agree, the whole Bux experience is definitely going into the coffee shop! I admit, I’ll still probably go at least 3 x a week haha.

  12. I would love to try that pumpkin seed butter, it looks amazing. I have been way into nut butter recently, and I want to branch out more. In terms of vegan recipes, I am experimenting with making a socca pizza with nutritional yeast, tomato sauce and veggies. Daiya cheese is also amazing on thing like that!

    • Oh yes, I LOVE socca! One of my favorites! I need to try out daiya cheese! Thanks for the suggestion. I miss my goat cheese already! Oh man, I’ve never been more obsessed with nut butters than recently.

  13. Sorry to continue bringing up the personal topic, but I just can’t believe your doctor thinks everything is fine when you yourself said you don’t have your period. That is not fine and in most cases, a clear indication that you’re still underweight. Again, it could literally be just 5 pounds! But I don’t know, it just really peeves me that your doctor thinks you’re fine. I had a doctor who told me the same thing and said “it happens to female runners.” Yeah, because they have low body fat. My gyno wanted to get me off birth control pills that were artificially giving me my period asap so that I could be a normal 24 year old. So…. ugh. Sorry, this’ll hopefully be the last time I bring it up!

    I’m honestly a little surprised my comment garnered so much attention on your last post… I mean, it just goes to show how so many girls out there have the wool over their eyes I guess!

    • It’s okay Jess. I guess it’s hard when your Doctor says you’re fine, but it’s true I guess I’m not because I’m still without a period. Maybe I’ll try bringing it up to her again, because I definitely don’t want my lack of period to cause me problems in the future, like osteoporosis. No worries about the comments!

      • I don’t often comment on blogs but for some reason I feel the need to jump in here because I can relate to a lot of the things you’re talking about. I won’t try to give “advice” necessarily since I don’t know you or your situation well enough, but I can tell you my experience with this type of food sensitivity testing. I got it done to try to address the same symptoms you described (which I’d had for a long time but they had gotten really bad because of under-eating/malnutrition), and I felt better after the initial elimination but that’s kind of where it ended. A year and a half later I’m better than where I was but I still have some problems with digestion/sleep/energy levels/skin.
        The thing is, I am also amenorrheic and I have a feeling a lot of my issues have to do with my hormones not functioning properly, even though none of my doctors have said so. In fact, only one medical professional has ever insisted I eat more and gain weight immediately, I’m guessing because I’m technically in the “normal” bmi range and that is the criteria everyone else used to determine whether I am healthy. That’s the other point I wanted to address- I have been to a ton of doctors, nutritionists, therapists, even naturopaths, and after all that I’ve realized that just because they don’t see a problem doesn’t mean I’m ok. The one person who insisted I gain weight also insisted I get a bone density scan, and I’m glad she did because I found out I already have osteoporosis (I am in my early 20′s, too). Actually I’ll backtrack on the not trying to give advice thing and say if anyone reading this has lost their period for any amount of time, please get a bone density scan. You might be totally fine but it’s good to know where you stand either way, and if there is a problem you’ll want to treat it sooner rather than later.
        Anyway, I didn’t mean to write an essay just now, but I wanted to post this in case anyone who reads here can find it helpful in some way. One last thing I should mention- probiotics and vitamin D have worked well for me, plus avoiding stevia. I didn’t use it much but it really messed up my stomach when I did. I hope you continue to feel better and get some relief from your symptoms!

    • Hey, Jess your comments are interesting. I was never anorexic like “apple a day” ….but am and was low weight and amennorheic for years and now 31 and bascially a mess…would love to know more about your thoughts and learnings Jess. email me if you want.

      • Can’t see your email, but would love to chat! And all I know is my own experiences with anorexia for about 5 years and recovery for the past 1.5 years… am functioning healthily once again, and although I do have body image issues at times (typically when I’m shopping for new clothes), I never ever listen to that voice that tells me to restrict because a) I know it won’t bring me happiness, and b) I can’t stand the feeling of hunger anymore like I used to. But I’m no expert of course, and everyone has different experiences with their EDs and recovery… still though, wouldn’t mind chatting.

    • Thank you Angela! I try and realize everyone is coming from a different place and most people are trying to help. Even if I don’t like a comment, I try and see what they are trying to tell me instead of getting defensive! You are too kind!

  15. Aww man, that food locker sounds awesome! My roomate could have used that since I was always tempted by her food stash. I never had the guts to “borrow” from her though, let alone ask her if I could have a chocolate almond or a seasoned cracker. :P

  16. Oh boy I’m going to feel like major bitchface every time I enjoy one of your delicious recipes from the good’ ole days,( so that’s everyday then). I had your coconut flour cookie today…the guilt:(.
    Accept this mug cake recipe , as my way of apology:
    * mix 3tbsp milk( of choice)+2tbsp H2o+1 tsp chia seeds in a bowl.
    *add 1/4 cup mashed banana or sweet potato( or whatever you want…I know you know the subs for these typa things).
    *then add 1tbsp coconut flour+ 2tbsp of another flour of your choosing( I use millet, but you could maybe try quinoa or something??)+1/4tsp baking powder+1/4tsp of baking soda+ stevia, spices , etc.
    *mix it all up, & microwave in a sprayed/greased mug for about 2 mins.

    It IS good, but not as volumous as the egg white creations…not sure what to do about that!
    I think the PurelyTwins have some individual muffins you could also try.

    Sorry if I butted in , in your comments section yesterday. I just think it is really unnecessary for people to make comments about peoples appearance in regards to their weight- such as that person guessing your BMI from pictures of you, when they don’t even know you, nor is your BMI any of their business. I feel like comments about peoples weight can be triggering to those who have dealt/ are dealing with ED’s.
    But I always totally admire the way you handle criticisms<3.

That’s the thing I’ll miss about the egg white, the lovely voluminous of those wonderful items! Ah well. Oh no, I loved that you spoke up! I agree, it wasn’t really called for to speak about my BMI, especially since I have NO desire to know where I am BMI wise, it makes me super anxious but oh well! It happens every now and again.   17. Oh my gosh, cacoa spiked hot coconut milk sounds absolutely amazing. I need to try that. And I had no idea Anchorman is having a sequel!! That’s awesome. I named my dog Baxter after his dog many years ago haha

  18. Oh my gosh, I NEED a food locker! I live with four guys, and my food goes missing all the time! I’m seriously considering ordering one for my prized posessions (ahem, peanut butter…huge amounts disappear on a regular basis!).

    I’m so excited about your Starbucks Verismo!! Let know how you like it because I’ve been thinking about buying one for myself! My only hesitation is that I kinda sorta really like going to Starbucks every day. There’s something about having someone else make your drink, and then drinking out of a paper cup, that’s so much more satisfying. It sounds like you’ve already found a solution to that problem, though!

    I can’t wait for Anchor Man 2 either. Will Ferrell never fails to make me (almost) pee in my pants. :-p

    • You definitely need the locker! Ha, I can’t even imagine living with so many guys…I’d probably cry if my food went missing…I’m too obsessed with that stuff. I actually really like it! I’m pretty surprised by my love for it actually! I will admit, starbucks drinks are definitely better but the machine is pretty decent itself! It makes me feel a bit better that I only go to starbucks about 3 times a week instead of 7 hah. Oh gosh, I wish we could watch it together! That would be amazing!

  19. “Chocolate covered katie” has vegan single serving muffins (like one muffin = 1 tbsp oil (good) + 3 tbsps of flour (spelt or another one), with baking powder, etc. Very simple.

    I am such a mess,,,seriously email me if you can …basically i think it comes down to being on a “severe restriction” as it is to EXPAND our horizons and eat DIFFERENT things (which a person normally would if they didn’t feel so “rigid” and “attached ” to their routines…like I’ve read your blog for a while and always thought you ate the same, “odd” things over and over :) No offense, you know what I mean…just not “real” food…but just a bowl of squash and no chicken or fish (which very rarely people have allergies to, etc) or these strange muffins :) No offense, again. Just sayin’ that it is less following what a random naturopath tells one to do (which if you pick a different naturopath you’ll get a different response…and sensitivity tests have no scientific support also) BUT more to “drop the eating disordered rigid patterns” and break out of the box.

    • Oh, and another thing is that I have all the time constipation…and that + the no exercise + the late night “binging” = not fun :(

Ha, and I definitely eat the same things over and over. It’s very true. I think a lot of commenters helped open my eyes to realize I need to expand my food choices instead of staying with the same safe foods! I do appreciate the comment. I do like chicken, fish for some reason I’ve never been into! I’ve actually never tried it because I have a weird random fear of fish hah. Maybe I should just try it out though! I definitely think I need to drop the disordered eating, and I’m guessing most of my allergies were caused because I ate those foods WAY too much, like 3 x per day! Variety is the spice to life!

I was wondering why it was replaying so much on Direct TV probably because they want to remind of us all of how much we LOVE the movie so we head out to see it once it premieres! I love the food locker so funny! I have been eating SUGAR…BAD I know but I have stopped and back to my tongue scrapping so I am able to rid of that craving! Have an amazing 2013!
