What I Ate Wednesday

Hey all! Hope your week is off to a fantastic start. Mine certainly is!

In fact, it’s time for another round of what I ate Wednesday, this month is about sharing holiday recipes and while I don’t have any holiday recipes to share, it was still a day filled with delicious eats!

This morning started with a lovely spin class.

It definitely felt good this morning, the whole class was full so it was buzzing with energy. Afterwards my Mom and I grabbed a coffee before I had to head out for the morning.

Breakfast - 

Overnight oats with 2% greek yogurt, raw oats, banana, frozen blueberries and ground flaxseed.

Did you realize it’s exactly two weeks until Christmas! Um, I’m not ready in the slightest!

I had to eat super fast, since I had an appointment first thing this morning.

I’m horrible at eating fast, so it wasn’t too successful. I also over estimated how much time I had to leave before my appointment and ended up in quite a frenzy.

I hate being late.

Lunch after a busy morning, was based among leftover items I could find in the frige.

I ended up using the remaining millet I had cooked up a few nights ago and combined that with a bunch of leftover vegetables.

Lunch -

Onto the baking pan went zucchini, tempeh and cauliflower, cooked until browned in coconut oil and dill. I love dill.

I mixed the millet with the rest of the vegetables and to round out the meal, I made a dressing with 1/2 an avocado and about 1 tablespoon of nutritional yeast, thinned with some almond milk. So filling.

After I cleaned up the kitchen, I had a skype date scheduled with some of my favorite ladies. Of course that was a swell part to my day:)

I sipped on a cup of gingerbread tea while we all chatted.

I didn’t have time to stretch after spin today, so I made sure to pull out my foam roller and get to stretching. Ah, so dang painful. I need to stop neglecting the foam roller, so I don’t die in pain everytime I break it out.

Snack - 


I noticed there were some Christmas orange upstairs, so I stole a few to snack on later. I love these.

It’s weird because I hate regular oranges, but love Christmas oranges. Anyone else?

I also grabbed 2 pieces of vegan fudge.

My Dinner was sort of lame, nothing too out of the ordinary.

More socca! I’m highly addicted to this wonderful flour.

Dinner -

Socca, dill kale chips, roasted cauliflower, a little spinach and a ton of nutritional yeast clearly and avocado in the shot glass.

I got a little too excited with my sprinkling I think. I love how the nutritional yeast soaks into the socca since it’s cooked in coconut oil. Totally hit the spot.

Now, I’m about to watch The Mindy Project. Does anyone else adore that show? Mindy is kind of awesome.

I’m off to heat up some of my favorite tea and then finish the day with a snack! I’m thinking coconut milk ice cream sounds decent.

  1. I was really lame when it came to stretching in the past but I realized that it is so good for my body so I strictly take 10 minutes after every workout to stretch. It helps for recovery!! I always try to eat slow but sometimes I am just too hungry…:-) Love the fudge and so excited that I have it at home now too! :-)

  2. I am AWFUL when it comes to remembering to stretching. I’ll tell myself before any work out that i WILL do it afterwards, but it never really happens #FAIL! I also use to eat all my meals super quick, but after reading an article awhile back about how its not the healthiest for you, ive turned into a ridiculously slow eater. Like for an example; it takes me an hour to eat a smoothie Ha Ha.

    • Same here Jessie haha. Yep, I take forever to eat smoothies too, it kind of gets ridiculous if I need to go somewhere. Working on that one!

  3. I love overnight oats. Your lunch looks delicious. I need to get back in the habit of roasting veggies…they’re so good that way!

  4. I am a fast eater, ‘mindfully eating’ and ‘slowly savouring’ meals just doesn’t work for me!

    And also, I am so bad at stretching – my muscles are so tight!

  5. Christmas oranges?! I didn’t even know such a thing existed! Do they taste like navel oranges? or clementines? I’m so intrigued now!!! :D
    My favorite quick breakfast in a rush is a smoothie! You can never go wrong with the deliciousness heehee

    • Well this is embarrassing, I think they’re just clementines, but since they only come out during Christmas I call them Christmas oranges haha. I’ve just called them that since I was a kid! Oh yes, smoothies are saviours!

  6. Two weeks until Christmas?! GAH. I hadn’t even thought that far in advance. The only thing on my mind right now is finishing my classes and going home!

    I am a super fast eater. I used to be slow, but now I’m always done before everyone else. I’ve been trying to lose down and chew more though, because it helps tremendously with my stomach problems. So, I guess it’s a good thing that you eat slow then! :)

    My quick breakfasts this week have just been fruit- usually a humongous banana and apple.

    • I for some reason can’t eat fruit in this morning. I think it’s because of my hypoglycemia, so I need to have protein or else my blood sugar goes crazy. Kind of annoying actually!

  7. Now that you mention it… I just realized that this is the only time of year I eat oranges. And I used it 2x in my WIAW post. I much prefer berries and apples the rest of the year.

  9. If there’s one thing I hate, it’s feeling rushed!!! I usually eat really fast – bad habit! lol

    • I found that a lot of my stomach problems were from eating too fast! It actually helped a lot to slow down…but now I eat too slow somehow haha

  10. Yes! I definitely prefer Christmas oranges over any other – regular oranges are too fibery and tough.
    Fav quick breakfast is an eggrito or over easy eggs! :)

  11. Everything looks great! I have to admit I am a fast eater but definitely try to slow down and be a bit more mindful! I hate being in a rush. Breakfast will either be a protein bar, microwave mug muffin, or eggs scrambled as fast as possible!

    • Its definitely tough to be mindful while eating if we’re in a rush. I think it’s just natural to get in fuel fast. At least it’s something to work on:)

  12. Yum! I’ve only tried socca once, but I loved it!! I made a vegan socca pizza thing with nutritional yeast and it was so good!

  13. I inhale my food, I’m such a fast eater. I really need to work on slowing down a little bit! (probably doesn’t help that I eat the majority of my meals in front of the tv/computer…)

    I finally got a foam roller a month or so ago, but I don’t break it out nearly as often as I should.

  14. I need to work on stretching after workouts! I tend to stretch before (because I am usually early) but after I run out and don’t stretch much!

  15. i love the mindy project! i have 2 eps on the DVR that i need to watch, yayyy. double mindy. when i finish ep 1 i’ll realize i have a 2nd one to watch right after and that’ll rock.
    i suck at eating quickly too! your breakfast looks super yum though. i love my greek yogurt and fruit.
    also lovin that lunch. mmm dill.

  17. I love the clementine oranges that are out this time of year. They are so easy to peel and so delicious! A.k.a they are the perfect snack!

    I tend to eat rather fast (a bad habit, especially for a person with acid reflux), but am trying to get better at this by eating smaller bites and chewing my food more. It can be so difficult to remember to do, though!

    • Yep, they are the best! I find them so much tastier! I had the same problem with my acid reflux and digestive issues, so slowing down has helped a lot.

  18. The times is just flying. I cant believe it is almost christmas. I am a really slow eater, it drives my friends crazy. They are always nagging at me to hurry up;) I am usually okay with stretching after workouts. Mostly because I was a gymnast when I was younger and we had to stretch ALL THE TIME. I could improve though;)

    • Same with me! My Mom is the exact same though, so it must be a genetic thing ;) Your lucky you’re good with stretching! One day it will click in for me that I need to do it, I’m sure!

  19. I’m such a slow eater!!! I hate being in a rush in the mornings. I don’t have any good quick breakfasts. I think they are going to be quick, but I always get behind when I’m rushing!!

  20. Im exactly the same – dont like any other oranges..yet love christmas oranges! Christmas to me means eating a ridiculous amount of clemetines/sweet oranges!

  21. What does socca taste like?

    I eat pretty slowly–unless I am stttarrrvviinng. Like the other night, I just couldn’t help it ;)

    • Good question! It sort of tastes naan like, it’s thick and it’s a bit unflavorful, unless you add some seasonings in. Which makes it a great canvas for basically anything! I forgot to add in unless I’m starving, in that case I can wolf down anything speedy!

    And I’m fully with you on clementines>oranges. I never eat oranges (although I love a mimosa) but love the ease and sweetness of Christmas oranges!

  23. I never remember to stretch before or after…whoops. but wasn’t there something recently about not needing to if you don’t normally do it? Touch wood Ive had no issues so far!
    I will always have breakfast, even if I’m running late. Nothing gets between me and my food haha.
    Soccas are so easy and yummy, good dinner :)

    • Who knows! There’s always such different info out there! It’s like we never know what’s actually true, unless we test it out for ourselves I think! Same here, I don’t get how people skip breakfast. I think I’d die.

  24. I HATE having to eat fast! I’d almost rather not eat at all, than have to shovel my food down & barely get to taste it. I savour my food:).
    And look at you being all creative & changing up breakfast, hehe. It looks delicious! Love when oats go all doughey in greek yogurt, mmmm.
    I find toast to be a good breakfast for rushed day.

    I don’t think it’s possible to get too excited with the nooch sprinkling on socca, that stuff IS incredible. I douse mine in it.
    Waah, I don’t want Christmas to be here so soon! Because, A) I’m not prepared in the slightest, and B) that means Christmas & all its festivities will be over:(.

    • I pretty much feel the same way! It’s weird to be changing up things?! Especially during Winter, who wants overnight oats this time of year haha. Nutritional yeast tastes good in everything I think. In extreme amounts too. :) I’m going to be so sad when all the Christmas time magic is gone!

  25. I love spin! Started my day off today with a great spin class :-) I’ve never thought to put dill on my roasted veggies but I think I would like it! My favorite quick, on the go breakfast is overnight oats. I love that they are all ready to go, nutritious and delicious! Enjoyed some this morning in an empty peanut butter jar :-)

    • I didn’t even think I liked dill until I bought it to try out, now I’m a bit obsessed. Spin is always my favorite way to start the day! So with you on overnight oats. Can you believe I’ve never had oats in a jar before?!
