Happy Monday friends!
Hopefully you enjoyed your weekends more than I did. My sore throat finally caught up with me and I ended up feeling awful the entire weekend. You could find me wrapped in a blanket on the couch with a huge cup of tea by my side. Living it up over here.
I was in need of a pick me up, so I went straight for a cookie. Well not quite a real cookie, but it was 7 AM so you can’t blame me for having a breakfast cookie (applesauce instead of banana) instead. It’s safe to say I’m obsessed with these now.
That’s okay, not every weekend can be super exciting, there will be many more opportunities to have more fun another time.
At least there were a few good things about the weekend.
Downton Abbey
Although I managed to spend most of my days attached to the couch, watching this awesome show. I did manage to be a bit productive and do necessary things. Like cleaning, laundry, and all those fun adult things you have to do.
Snacking
Apples drizzled in almond butter post picture.
There’s hardly a day that I go without apples, they’re by far one of my top favorite fruits, it always helped that these honeycrisp apples at the market were perfectly ripened and crisp.
Roasted parsnips in coconut oil and a sprinkling of cinnamon and nutmeg.
These are seriously super addicting. I can’t stop snacking on them.
Mindfulness
Yoga, magazine reading, and writing make myself feel that much better.
Coffee dates
They’re good for the soul, even under the weather. Okay, so technically the coffee was taken to go and enjoyed at home.
I refuse to be seen looking ragged outside of the house. Still, a cup of coffee is much more enjoyed with the presence of another person.
Chocolate
Dark chocolate warms the heart. Ending the day off right with the perfect amount of sweetness.
Satisfying scents
The holidays may be long gone, but I’m still loving the scents of these holiday themed candles. I think they were starting to give me a little headache though…
So, this may not be the most exciting weekend ever, but considering it contained all these things it’s certainly still pretty marvelous. Even though I’m still feeling a little off I sure can’t complain when things could be much worse.

I hardly ever drink coffee, but if, what is maybe once a month, I drink espresso, black. My weekend was wonderful, I enjoyed springtime in Spain for a few days. I hope you feel better soon!!!

Right! I’ve been sick for forever. I finally went to the Doctor and got medicine, feeling much better!

Favourite chocolate? I don’t even know. Generally, I don’t discriminate :-p but anything that give chocolate with either peanut butter, caramel, or salt, or (some of those in combination) is amazing.
I don’t drink coffee, but lately I’ve been drinking my tea with a few drops of vanilla stevia.
Ah! Those chocolate all sound amazing, I can’t believe I avoided it for so long. I’m glad it’s back!:) Vanilla stevia is my favorite to add to tea!
Chocolate is the best! I don’t know if I have a favorite though, I just love it all! Those roasted parsnips look amazing! Your roasted veggies always come out so perfect and make me crave them! Happy Monday Lisa!

Chocolate and coffee are perfect for any kind of illness! I’m not all that picky when it comes to chocolate, but I like my coffee either black or as a cappuccino. Hope you’re feeling better!
I’ve been such a black coffee addict, but I think I should challenge myself, break out of my shell, and try a cappuccino! On my to do list this week:)

Sorry you weren’t feeling well all weekend. Hopefully today is a much better day! My new favorite chocolate is Lily’s Sweets Coconut Chocolate. It’s sweetened with stevia and so good! Lately, I’ve been hooked on my peppermint coffee in the mornings. I add a little coconut milk, cocoa powder and a few drops of peppermint stevia to my coffee. So good! Hope you have a great Monday girl!

Snacking is the best! And both of those snacks are two of my favorite foods. I rarely go a day without eating an apple. I absolutely love roasted parsnips, but normally only eat them with a meal. I will have to start roasting them and eating them for a snack. Sounds like an awfully delicious idea to me!

I hope you start to feel better! I definitely would have avoided the adult things to do if I were sick but I guess if you’re sitting on the couch it’s the best day to do it! My favorite chocolate is definitely anything DARK. I don’t know if I could pick just one brand/flavor. I never had dark chocolate and sea salt, though! :-O

All of these things seem like the perfect way to brighten up a weekend! I sometimes have non-dairy creamer and stevia or honey in my coffee, but I typically like my tea plain and simple. Unless we are talking about my chai tea latte addiction…
