What I Ate Wednesday – Peanut Flour

Thanks for all the comments on yesterdays post! You all had such wise thing to say about this ongoing issue a lot of us seem to face on believing others beliefs and really trusting our bodies.

Moving on, it may not be the weekend, but another Wednesday means another great weekly party.

Apparently I was only able to sleep in for a day because I woke up again this morning up and ready at 5. It ended up working out since spin was at 5:20. After spin, I had worked up quite the appetite so I quickly sat down for some food.

Breakfast -

I’m so obsessed with these now. I combined 1/4 cup buckwheat flour, 1 tablespoon hemp protein powder, 1/2 tablespoon chia seeds, and 1/3 cup pumpkin. Cooked and allowed it to cool and thicken overnight in the fridge.

Yum, it comes out so amazing in the morning. Topped off with my favourite peanut flour frosting.

I’ve actually received quite a few questions on how to make the peanut flour frosting. It’s the easiest thing ever.

  • 2 tablespoons peanut flour
  • a little stevia
  • a small pinch of sea salt (I use pink himalayan)
  • about 1 1/2 tablespoons almond milk, often a bit less if I want it thicker.

Sometimes, I’ll even double this recipe to make more.

After breakfast, I had an appointment to get to. It was kind of brutal actually. I ended up being there for 2 and 1/2 hours. Kind of unnecessary but all of that is taken care of, so I won’t have to go back which is nice.

I initially thought I’d only be there for about an hour, so I didn’t pack any snacks which I instantly regretted because I came home starving. Thank goodness I had leftovers in the fridge from earlier in the week.

After returning home, I made a quick cup of coffee before I ate, to satisfy my caffeine craving.

And yes, I did stock up on the holiday cups before they left Starbucks.

I have issues and like drinking out of these cups rather than coffee mugs.

Lunch -

Quinoa salad with zucchini, coconut oil, roasted tomatoes, tomato paste, a little cauliflower, spinach, nutritional yeast, fresh basil, nutritional yeast, and avocado on the side.

It was absolutely freezing here today. Okay, I exaggerate just a tad. It was just super duper rainy. Like insane rain, but it made me want to just curl up inside with a good book and not do anything.

Unfortunately, after I quickly ate, I had another appointment to get to.

My appointment went be really quick, so I was able to get home from the freezing rain and warm myself up with a cup of tea. I got to try out Amanda’s favorite tea and I can so see why. It is truly delicious! Yum.

Now, I’m totally going to have to order some online. Darn addictions to new things. Now I just need to try the sugar cookie tea everyone raves about.

Snack -

I made a new batch of pumpkin protein bars but had to swap out a few of the ingredients, since I’m intolerant to a few of them.

Luckily they were already vegan beforehand, but I still can’t have flaxseeds, brown rice protein, or amaranth flour.

Dinner - 

Since it was rainy out, it made it the perfect night for chili.

I still can’t get enough of this recipe. I make it at least once every two weeks.

I have no plans for tonight, so I think I’m just going to catch up on the Bachelor. Honestly, I’m not too impressed right now. It’s all the same. Crying, sappiness, heartache (I’m sorry but how can you be crying about a guy after 2 hours?) but I’m sure after a few episodes it will get even better, you know once you can actually learn everyone’s name.

Plus Pretty Little Liars returns tonight (yes, I’m actually 22) and it’s kind of an awesome show, so I’m more excited for that.

I’m thinking later I’ll have a vegan protein muffin, coconut flour frosting and some peanut flour again as well.

  1. Your breakfast looks delicious, how did you cook it, just in a pan, or a skillet? Sorry, that’s maybe a stupid question. I am totally an early bird. I pass out latest 10pm but am fresh and bright early the next day and I love these morning hours!!

    • I’ll post how I make it on Monday or maybe this weekend! It’s kind of complicated to explain without a post…I think haha. Not a dumb question!

    I was a night owl all my life, but for the past year or so I’ve transformed into an early bird. I can’t believe I missed it all my life – there’s nothing quite like a nice slow morning!

  4. I don’t watch the Bachelor. I only watch quality tv. You know, like Teen Mom and Jersey Shore haha. I really do like Parenthood actually. I’m definitely a morning person!!

  7. No cable = no Bachelor…or too many other TV shows (at the time of airing, anyways), for that matter! Although I did manage to watch The Walking Dead and Dexter this last fall, both of which are high up on my list of favourite tv shows.

  10. Happy WIAW! Your buckwheat bowl looks tasty! How long do you cook it? On the stove top? I don’t watch the Bachelor. I love Pretty Little Liars too. :-) I am a early bird, I like to get up early in the morning. I always feel like I get more done in the morning.

  11. Why peanut flour? Not exactly REAL food. Full fat nut butter FTW. REAL food.
    How many servings does the chilli make? It doesn’t say on the link.
    Do you buy hormone-free stuff? I can’t find that stuff here, so I can’t find any yummy ground turkey.

    • Very true Tina. I choose peanut flour because I honestly like it better than peanut butter (I’m weird) and because of the higher protein content. I honestly don’t eat much protein (maybe meat once per day) since I can’t have eggs or dairy right now, so it helps get the protein up in my diet! Oh I make the chili for 3 servings but you could make it for 2 or 4 as well! I do buy hormone free turkey! It’s just located at my local health food store as well as a few little markets around town! Oh no, you can’t find any? Hm, I know some places sell it online although I’m not sure which ones. Off to investigate!

  14. Omigosh I absolutely hate appointments that end up going longer than I anticipate. That’s pretty much why I never ever leave home without some kind of snack on me – never know when an emergency will hit, and I kind of fail to function if I get too hungry. And I’m so sorry for introducing you to the wonderful addiction that is Hot Cinnamon Spice. I was kind of hooked the first time I tried it as well, and I end up ordering like a year’s supply at a time :lol:

  15. Have you heard about the new cup thing that Starbucks is promoting? Some stores are now selling low-cost reusable tumblers and offer a 10 cent discount whenever you fill it with coffee. I love how they are going green [er]. Haha.

    I have to wait for Pretty Little Liars to come out on Hulu.. Which is a week after the premiere I think… Can’t wait!

    • Yes! I heard about it! I went to pick up a cup, but they had already sold out! I can’t wait for the new shipment now! I’m SO excited for this season of Pretty Little Liars! It looks like it will be so good!

  18. Both your lunch and dinner in this post look so wonderful to me. I love your shot glass of avocado you always put on the side. That is one shot I can get behind. But maybe I’ll chase it with Grey goose :P
    I ALWAYS regret it when I don’t pack snacks. Always! Sometimes my ED tells me not to pack a snack because I’ll eat it whether I’m “really” hungry or not. I have to tell my mind that the last time that happened was ….well I don’t even remember. I always have a jar of PB in my desk at work as well as a random carby snack, in case of “emergencies” ;) Being starved for meals is no fun. Can never enjoy them and I get a panicky feeling.
    I know SO many people our age who are obsessed with PLL so don’t be embarrassed, haha. I have to say I’ve never even tried watching it!
    LOL at you stocking up on holiday Starbucks cups. You’re too much.

    • Haha! Oh man, I need to start doing that. Yah, I get that ED commentary a lot! I do my best to fight back though! I totally get that panicky feeling as well! Not fun! You have to watch PLL! Seriously, so good. I would be the person to stock up on holiday cups. I’m such a nerd.

    • It’s such a great topping! It’s SO good! Hopefully you can find it, I think I’ll have to restort to ordering online! It’s worth it.
