buckwheat breakfast bowl and new addictions

Another marvelous Monday morning is upon us.

I’m kind of not looking forward to getting up early tomorrow, but such is life.

I woke up this morning ready to eat. For some reason, I was feeling super ravenous this morning; good thing I had some breakfast that I prepped the night before.

A few people asked about my buckwheat bowl I made on Wednesday. It’s super simple.

Vegan Buckwheat Bowl

  • 1/4 cup buckwheat flour
  • 1 tablespoon hemp protein powder
  • 1/2 teaspoon stevia
  • 1 teaspoon cinnamon
  • 1/2 tablespoon chia seeds
  • 1/3 cup pumpkin or mashed banana
  • 1/2  cup water/milk (you may need a bit extra-just go by texture)

Mix the dry ingredients (including chia seeds) together, add the pumpkin and milk and lightly spray a microwaveable bowl. Microwave for about 5 minutes.

You could also make this in the oven and bake at 350 for about 35 minutes. Depending on your oven.

I prefer the microwave version, since it’s done a lot faster, but whatever works for you!

Of course, finish off with toppings of your choice! My favorite will always be peanut flour!

This weekend ended up being a nice change of pace for once, since it was pretty relaxing. A much appreciated switch up every now and again, especially since the holidays were pretty eventful.

For lunch I’ve been enjoying my roasted veggie bowls, since it is SO cold here! Although not cold enough for snow, which I’ve been dreaming about. I seriously want those white flakes to come visit so bad. I’m odd. It’s just that whenever there’s a tiny bit of snow over here, basically everything gets cancelled. So that would be kind of cool.

Got a little off track there…this bowl had roasted broccoli slaw, zucchini, turkey burger, quinoa (I’m getting a little sick of quinoa now), nutritional yeast, coconut oil, and a little dill. Avocado on the side.

My parents ended up having a low key weekend too, so I decided it would be a good opportunity to spend some more family time together. It just so happens that my Mom shares the same coffee addiction I have (I guess we know where I get that trait from).

We of course had to make a trip to our favorite coffee place over the weekend. I feel like I haven’t been in so long, since I typically will only go there on the weekends now that I have my handy dandy Verismo. Love that thing.

Coffee is my saving grace. Especially since I’m the worst sleeper ever. I’ll learn eventually.

Amanda also made sure I got hooked on her favorite tea, which means I managed to order some online since I can’t buy any in stores here.

Dang, it’s not like I need another thing to be obsessed with, but alas I have. It’s okay Amanda I’ll forgive you.

Now, I have plans to catch up on Downton Abbey. Well I guess not catch up, but start it up.

Downton Abbey

I’ve been hearing nothing but great things about this show, I thought it would be appropriate to start since it’s at my house right now. Might as well take advantage of having that DVD and watch it.

Confession; I totally thought it was called Downtown Abbey, but then was embarrassed when someone laughed and informed me it’s called Downton Abbey.

I must have been too lazy to correctly read the title all this time.

  4. Oooh I need to make the buckwheat bowl! I bought buckwheat a really long time ago but never knew what to do with it. It always seemed like it had such a strong flavor to it.

    • It definitely has a strong flavour! I recommend adding vanilla extract and a bit more sweetener the first times around so you get used to the flavour! Now I find it SO good though!

  5. I actually just started watching season 1 of Downton last week. I’m about halfway through and I’m really enjoying it! Maggie Smith absolutely makes that show though, she’s hilarious.

  13. I definitely prefer low-key weekends. They are just so much more relaxing and less stressful. Plus, I seem to get a lot more crossed off of my “to-do” list when I am not out and about too much.

    Is it bad that I actually do not like coffee OR tea?? I do, however, like the smell of coffee, though! Does that count? ;)

    • Ah yes, totally agree! Haha, it’s okay some people just don’t like either, I’ll just never understand that fact;) I think liking the smell of coffee can count a tad.

  16. Mwahaha! You can’t hold it against me because that stuff is like happiness in a cup. If it weren’t for that tea, I’d say that I’m a coffee girl hands down, but there’s no way I could start the day without a cup of Cinnamon Spice… so I’m going with both coffee AND tea :P And this is kind of embarrassing, but I totally thought it was DowntowN Abbey as well… I actually didn’t even notice the difference when you typed it, so I’m clearly way out of the loop when it comes to TV shows…

    • I’ve been starting my day with that tea too! Man oh man, how did I not know about it for so long! Haha, yah I thought my Mom was being extremely odd for pronouncing it that way, until I asked why…uh duh because that’s what it’s called;)

  19. Girl coffee is my go to drug as well. The stuff is straight out of heaven. amen. Though tea is a nice afternoon pick me up when I need sleep that night.

    We like to spend our Saturdays out and about and usually most of Sunday lounging around, maybe go for a run, grab bagels just very relaxed stuff.

  24. Eeee! I’m so excited you’ve jumped on the Downton Abbey bandwagon! Let us know what you think! Oh, and I called it “Downtown” the entire first season, and nobody ever corrected me. It wasn’t until I heard an interview with the actors on TV that I realized I’d been mispronouncing it (and sounding like an oblivious American) for months. Haha! I still need to catch up on last night’s episode (there was no way I was going to miss Tina Fey and Amy Poehler in the Golden Globes!).

    Your buckwheat bake looks like a a super comforting breakfast for a chilly morning. I’ve never tried cooking with buckwheat flour, but I might need to buy some so I can make this. Until then, I’m thinking oat flour might be a good substitute?

    The cinnamon spice tea sounds like one I’d love! I’m still obsessed with banana nut bread, but I should probably start mixing up the routine to prevent burnout.

    • I LOVE it so far! Haha, that’s so hilarious. I would’ve done the same thing if I didn’t ask my Mom why she was pronouncing it weird, nope just me. They were the best hosts together! They should really just host everything from now on. Oat flour would probably be a good substitute! Maybe add an extra tablespoon because buckwheat flour absorbs quite a bit of liquid! Banana nut bread and this tea definitely tops my favorite teas! Love you!
