Recipe Updates and Happenings

Good Monday morning friends!

Hope you all had a great weekend. Mine was pretty darn good.

Right now, I’m sitting here with a big cup of coffee, a comfy blanket, and planning to get a few errands done after this post gets finished.

This weekend consisted of lots of friend time, little sleep (what’s new), and some celebrating.

I also, finally returned to my workouts. I missed them too much. I found it really hard to go the whole week resting, but I do feel a lot better now. It still sucked mentally though.

We got a spin bike, so it has been nice to have that option at home now too! Especially because the bikes are the same we use in class, so it works out nicely.

For now, I’m still eliminating HIIT from my routine, so pilates has been my saving grace.

I also ate some very delicious food this weekend.

It’s really surprised me how great I’m doing with eliminating all dairy and eggs from my diet. I thought the eggs would be nearly impossible since they were such a staple, but honestly it hasn’t been that bad.

The first few days were the worst, but now since I’m feeling noticeably better I’m so happy with how things are working out!

Some eats from the weekend…

Roasted kabocha squash.

kabocha
This addiction is still going strong.

When kabocha goes out of season, I will be very sad. Even though, I’m pretty sure you can get it year round around here…at least that was the case last year.

Let’s hope it continues this way. Especially because it’s the best squash…I think I may even like it better than pumpkin.

That’s saying a lot.

I also ate lots of vegan pumpkin fudge.

vegan fudge

  • 1 tablespoon almond butter (slightly melted)
  • 1/2 tablespoon coconut oil (liquid)
  • about 10 drops liquid stevia
  • 1/4 cup pumpkin.

Mixed together and thrown in the fridge for about 2 hours, or quickly freeze it for 10-20 minutes.

Yum, it makes the perfect snack.

I’ve been experimenting with some more single serving recipes made (obviously) without dairy and eggs. I’ve had mixed results. Some have turned out miserably…I should say they really just didn’t turn out at all. A few have tasted really good, but still need to look more appealing. Those should happen shortly!

It’s a bit tough to be baking with all vegan ingredients, especially because I can’t work with flaxseeds either. I’m slowly figuring it out though!

It’s been quite a while since I’ve actually posted a recipe, I swear it will happen soon.

I can’t forget about my veggies…

zucchini pasta and vegan cheese sauce

Roasted vegetables, tempeh, with a vegan cheese sauce.

I’ve been making my usual vegan cheese sauce, but can no longer use the same ingredients because of the intolerances I’m facing now.

I simply switched the cashew butter with sunflower seed butter and am happy to report, it’s just as delicious!

I always forget about my sunflower seed butter. I’m not a huge fan of the taste by itself, but mixed into a sauce like this is simply awesome.

Here are some pictures from a few weekends back over the holidays.

I always forget about my digital camera since I use my iphone so often, and I finally remembered to upload them.

Oops.

Me, Auntie E, Sam

{ Me, Aunt, Sister }

Since we only manage to see our whole family maybe once or twice per year, it’s nice to have these photos to look back at and remember.

I miss the family already.

Yes, we have a very small family.

We finally took the Christmas tree down this weekend, which was kind of sad, but necessary.

Now, it’s time to bring on the next season and work on making the present moments awesome.

Are there any particular recipes you’d like me to create? I’m down for any challenge.

What did you do this weekend?

What’s your all time favorite vegetable?

Hope you are all having a marvelous Monday!

  6. What a beautiful family you have Lisa! Your mom, sister, and you are all so beautiful!

Glad you could get to working out again, and yes HITT should be eliminated. No bueno! I know hard to just do light, but SO worth it. I had to only walk for me to get back, so I couldn’t do anything else, just what my body needed.

    Love you!

  7. I’m glad to hear you are making the transition with your food sensitivities. I’m sure it will only get easier the more you adjust to it! And you can still have kabocha squash and pumpkin!!!

  8. You have such a gorgeous family :) . And good for you for cutting all of those things out of your diet. I have to say, I think the Internet makes things like that easier because we can just Google new recipes/substitutions.

  9. Yayyyy rest week! But even more yay for it being over so you can get back to spinning (AT HOME!!) . You and your sissy are so beautiful :)
Glad you’re starting to get into a rhythm of finding new recipes to accommodate your new needs! Happy Monday!
    (And happy Bachelor premiere night!)

  10. The willpower you have to say goodbye to dairy and *eggs* is awesome! I fear I couldn’t live without eggs :) Happy Monday!

  11. I’m currently sitting here with a big mug of coffee too! YUM!
    :)
You and your Sis both have beautiful hair!!! ahhh I love it…and your red dress, you are so pretty!
I’m so happy you were able to rest last week, i’m sure it was a HUGE mental battle, but you decided it would be best for your body and you did…major congrats! I bet you feel a lot better (mentally & physically!)
YEAH for a spin bike at home! sounds so convenient, I do love the bumping beats of class, but getting to hop on when it fits best into YOUR schedule sounds perfect!
ahhh Kabocha! My Sis-(to be)in-Law is Taiwanese, and has gotten me hooked on all sorts of delicious new (to me) veggies, Kabocha being one of my favorites now! it will never go out of season!!! :)
I hope you’ve been having a great Monday!
    xoxo!

  12. I ended up taking down my Christmas decorations this weekend too, and while it was definitely kind of sad, it was also nice to get things back to normal. I feel kind of Scrooge-like for saying it, but I’m ready to get back into a routine after all the holiday craziness. The biggest thing I’ll miss is the holiday cups at Bux ;)

  13. Danielle says:

You have a beautiful family! Good luck on trying out new recipes… I’ve recently cut out a lot of foods from my diet to improve digestion so I understand the challenge. This weekend I returned to Vancouver after a few weeks with my family in Ontario for the holidays!

  14. I missed the flax thing. You can’t have that either? That would be tough. Can you do chia or energ?

  15. I’m impressed that you’ve already taken your tree down! Ours *may* get taken down this weekend when I come home. We’ll see…

  16. Okay, once again, your dresses. Where do you find such gorgeous things??? I never had a problem cutting out dairy and I like I would be fine with eggs too, but tell I can’t have kabocha and my life is meaningless!

  17. I’m so proud of you for resting your body and giving up HIIT! Your body will thank you. You have such a beautiful family girl!!

  18. I can’t find that squash anywhere anymore, so freaking sad!

  19. Feeling physically and mentally good certainly makes giving up certain foods a lot easier. I am happy that things are going well for you in the food department!

My all-time favorite vegetable..that would be a tie between carrots and sweet potatoes. My mom said that I loved and ate these so much when I was a baby that my skin actually started developing an orange tint. Let’s hope that doesn’t happen to me as an adult! ;)

  20. That vegan pumpkin pie fudge looks marvelous!

  21. Hi, I emailed you. I too have sensitivity to eggs and dairy due to excess consumption of them, however I’m still not able to delete them from my diet :( I’m really struggling on how to have a normal day anymore. I’m tired of feeling so crummy but need ideas on sample meal plan days for an inactive person who does not like grains or beans much either. i’m lost. Email if you can/want.
