What I Ate Wednesday

Good Morning friends! Happy Wednesday!

This week is already passing by so fast. Not going to lie, this morning was a little rough.

I usually like to spend big holidays doing something low key, but decided last minute to go out instead. Might as well live it up. I’m really glad I made the decision, it was a definitely a fun time.

I was thankful that last night I had prepared breakfast so that I could just roll out of bed and grab something. I couldn’t believe when I looked at the clock this morning and I had slept in until 8. This is so unlike me. I usually wake up naturally around 5 or 6.

Gosh knows I could use the extra sleep though, so I’ll take it.

Let’s get to the usual Wednesday grind.

chia pumpkin banana oat bran

Breakfast was a bowl of oat bran, chia seeds, cinnamon, pumpkin, 1/2 banana, stevia and later topped with peanut flour paste. (recycled picture)

The usual suspects over here, besides the egg whites.

A necessary coffee break followed.

Lunch was a pretty typical over here lately too.

Vegan tempeh masala, with added quinoa. A side of avocado was also present.

Earlier, I prepped a base for a pumpkin frosty to have if I got hungry later, which I did.

I whipped up a batch and ate it alongside my space heater and heating blanket.

I typically never have smoothies or cold drinks in the Winter, since it’s far too cold but it’s so worth it.

Dinners have been simple, fast, and random.

See, I told you I’m obsessed with roasted parsnips.

More avocado and a side salad with a homemade turkey burger.

Delicious, but also extremely random.

Now, I’m attempting to keep myself awake even though I’m so tired.

It just doesn’t seem appropriate to go to sleep at 7…kind of like it feels wrong to sleep in past 10. It just doesn’t make sense in my mind.

  1. I drink cold drinks (smoothies) every.single.day no matter the temperatures outside. I mean that’s what they made blankets & sweatshirts/pants for right?? =)

  4. Itz 20 degrees here and i’m sitting here with a cold smoothie! Haha I don’t know why – was just in the mood this morning! And I’ve never made parsnips!

  5. I’m going to have to try roasted parsnips. They look really good. 7pm bedtime is totally acceptable in my book! The earlier the better for me ;)

  8. Sleeping in till 8?! Gah! I can’t tell you how jealous I am. I went to bed around 2:30 on NYE and still woke up just after 6. It’s like what the heck, body. Sleep! But don’t try to force yourself to stay up if you’re tired, hun. I took a few naps yesterday and it felt fantastic :D

    • I know! I couldn’t believe it! Such an awesome time to wake up. Ha, I feel you, I’m usually like that! Now, I’m back to going to bed late and waking up early. Darn.

  9. I totally drink smoothies all through the winter. I usually end up shivering, but it’s so worth it! I have to say, I always love your little shot glass dippers! They’re so dang cute. Happy new year!

  10. I usually avoid smoothies in the winter too…if I must have one, it’s eaten under a blanket near the space heater.

  11. i need to try roasted parsnips! good for you for going out and living it up. so glad you had fun! i rang in the new year in dream land. i don’t remember what i dreamed about but i was asleep before 11pm. RAGE.

  12. I’m always cold but somehow can’t seem to stop my smoothie breakfast haha I just make sure to not use ice ;) I totally need to try parsnips, they do look delicious

    All of your food looks and sounds great. It seems like you adapted to your dietary changes really well – and quickly, might I add. I bet it’d have taken me a lot longer to do so. Was it hard for you?

    My go to snacks are fruit, soy yoghurt mixed with coconut flour and other randoms such as roasted chickpeas.

    • Thank you! Actually, it wasn’t hard at all for me! Once I saw the papers that clearly showed what I had intolerances to, it just suddenly made sense and became clear that I had to give them up to feel better. I just didn’t want to suffer from the pain, so it was an easy decision! I definitely craved them the first 5 or so days, but I knew it would get easier and it definitely has!

  15. Temperature doesn’t matter to me at all! I could eat ice cream everyday; same with soup :)

    I love your little shot glasses for avocado and coconut butter. Makes everything look so neat. Lol.

    I rang in the new year babysitting… Ya, not quite as exciting as your night out!

    • I can definitely eat soup all year around! Haha, I feel like such a dork when I use them, glad someone appreciates them;)

  16. I can’t stand cold things in the winter!! I FREEZE! Right now, my go to snack is a handful of nuts or a banana with nut butter. Simple yet delicious!

Okay, I’m not vegetaarian like you, so I eat real chicken, moose and fish (simply because my paleo research has shown me those things are GOOD…real food, and you’ll rarely find someone with an allergy to those!)….but anyway, i’m not gonna harp on you about your choices or your calories (or lack there of)…BUT I like that you figured out a system to eliminae the dairy and eggs in a day..I STILL can’t break it :(
    SO…my issue is that i mentally can’t deal with grrains since I don’t exercise..I have no fear of fats (at all ) but grains are a mental block when I’m SO inactive…so I don’t know how to fix that or whatever. I”m SUPER fixated on protein and fat. Oye. I have so much to figure out. Email me anytime if you can or want.

    • I managed to NOT buy greek yogurt….so TWO days without it…but I miss it…BUT I haven’t been able to give up the eggs yet :( I know…its so bad.
      I think I’ll try to stop eating the “eggbeaters” and stick to whole eggs for a bit until I can mentally cope with eliminating them. (typically I eat 2+ whole eggs + multiple beaters in a day)….the tricky thing is i alwyas have yogurt or eggs at breakfast (for protein) so without the yogurt, now I’m drawn to the eggs….and same with lunch, lunch is always eggs cause its a meal that i need protein but not ready for a heavy dinner-type fare such as fish or chicken….and nighttime is awkward too…typically a BIG snack (I tend to “binge’ at night) with yogurt,,,but without the yogurt i find myself adding eggs white puffs to nighttime…but again, its all excess :(

      I am going to start eating some goat cheese, etc though…I’ve never “overdone” that…again, my problem is eating the same things to excess so a good elmination period is necessary…I just need to figure out how to do it :(

    • I’m actually not a vegetarian! I do eat chicken/turkey! It’s very true it’s super rare to have an allergy to meat, which is why I do want to incorporate it more, but I just really hate the taste of meat haha. I think it’s hard to want to eat grains when there is such an anti-grain movement happening, but they are a major food group and I definitely think they are important to consume! Even if you aren’t active right now! They definitely still have a number of health benefits. I don’t think eating eggs is bad at all, I just have the intolerance to them. I know it’s definitely hard to give up if you do it for an allergy/intolerance, but I just realized how icky I was feeling and it was easier for me that way. I just had to throw that all away and be done with it. Maybe you could add in some more animal meat or even lentils or beans at lunch time! Those are also good protein options.   18. Hi, what time do you eat each meal? Im struggling with a lot of things (digestion, underewight, overeating on junk at night, eating the same things for 2 years now and a lot of pain and gut issues). Considering either a whey pure isolate (that is easier to tolerate than other dairy Ive read) OR plant fusion OR PerfectFit Protein OR Lifetime basics.

    I tried hemp before and the taste is kinda gag like. Pure pea isolate simply is a bit too gassy/bloating like.

    • Hey Rachel! I don’t eat meals at specific time everyday but usually breakfast is at 8, lunch at 11:45-12, snack around 3, dinner around 5, and another snack around 8. I feel you on the issues you’re struggling with and wish you the very best! I definitely would try out those protein powder options! Unfortunately I have an intolerance to brown rice too, so I can’t have the perfect fit or lifetime and yes hemp is pretty gross haha. That’s what I’m using now! I didn’t know that the pea protein could cause the bloat/gas that’s too bad, because I was thinking about trying it. It’s tough with all these intolerances to figure it out!
