It’s a miracle. I actually got to bed a bit before 10 last night! That may be the lamest statement I could ever make, but coming from an insomniac, I’d say that’s progress.
The fact that’s WIAW helped put a smile on my face.
Anyways, since it’s Tuesday morning it meant I had to be up early to attend spin, so the early bedtime hour was a blessing in disguise.
When the alarm went off at 4:51 (yes, I set my alarm for weird times) I kind of wanted to punch it, but figured that energy would be better spent at spin class. Plus I always feel better after getting my butt moving a little bit.
When I arrived home I was ready to eat.
Breakfast -
I’ve been meaning to take my my new buckwheat bowl on a little test drive and see how it would hold baking instead of microwaving. I was nervous it would be a huge fail, but it was pretty good! I definitely prefer the convenience of the microwave, but I can’t deny things taste a bit better baked.
Since Tuesday is my grocery shopping day, I made my way to the store to stock up once again.
When Lunch came around I wasn’t too hungry, but figured I needed something to keep my energy up.
I’m not one to have a smoothie for a meal replacement.
For one, it’s flipping cold, another I’m always slightly afraid the blended beverage will leave me hungry minutes later.
Lunch -
I whipped out my beloved vitamix and made a lovely smoothie that contained my new protein powder, frozen banana, frozen strawberries, spinach, a handful of oats, and almond butter.
Apparently, I should’ve just stayed in bed this morning after all, because as the day went on I felt progressively worse. Oops.
It kind of feels like my morning was one giant blur, probably because I’m feeling nauseas, but eventually I broke again for some more good food.
Snack -
A bowl of strawberries in coconut milk.
Delicious and easy enough for my stomach to not complain.
When Dinner rolled around, I was feeling less than creative. As the day goes on, I just don’t feel the same inspiration to be creative with my meals.
This means I should really start meal planning at the end of the week…one day.
Lazy brain means oats for Dinner! I’ve tried the savory oats route when I was still eating eggs, but decided I might as well try it out again and see if it could taste as good without them.
It sounds super strange, but it was quite delicious.
Dinner -
In the bowl went oat bran cooked in veggie broth, a huge spoonful of nutritional yeast, spinach, green peas, broccoli, hummus, and a dab of coconut oil to finish it off.
It felt kind of weird eating oats savory, but it’s still mighty delicious and I was getting kind of sick of quinoa anyways.
I feel like today was a little lame in the veggie department, but hey not everyday is going to be perfect.
Snack -
Before bed, is the usual these days: vegan protein muffin with coconut flour frosting and almond butter.

I am sooooo not a smoothie person either! I mean, they taste DELICIOUS, but they do not hold me over at all!
I thought you’d be excited about my sleep haha. After I was complaining about my awful patterns. They usually never hold me over, I was kind of surprised!
I’m always in bed by like 9 and go to sleep around 10. I’m a granny! Haha
I used to do that all the time. Now I just can’t sleep. I miss my granny bedtimes ha.
I’ve always thought savory oats looked kind of (and tasted) gross. But yours actually look edible! Haha. I bet they would be awesome cold. The fridge brings out so many wonderful flavors!
I’m not much of a smoothie person either. Many because I find eating all the food separate to be so much more filing. My favorite kind of smoothie is probably banana + cocoa though. Or banana and pb. Or a pina colada. All good.
I feel the same about the fridge! It really does bring out the flavors more!
I’m so interested in your dinner. I think I might have to try it! I’ve actually never tried savory oats but I think it’s about time. I’ve been hearing about them forever. 10 is my ideal bed time. Anything later and I’m a wreck the whole day following. I need my sleep I guess!

I cannot get into the whole smoothie for a meal thing. I guess I do not feel like I am eating so, therefore, I don’t feel as satisfied. I need the actual act of chewing when I eat!
I know what you’re saying! And yes with the chewing aspect! I only drink smoothies if I feel sick since I just don’t get satisfied without a little crunch.

Right! It just seems better to have an odd time set for alarms, whatever haha. My family totally thinks I eat the weirdest food too! My Sister is always embarrassed haha.
If I have a smoothie, I need something crunchy on top or on the side. It just doesn’t feel like a proper meal/snack if I’m not crunching on something!

Savory oats actually sound pretty great, especially for dinner. A strange combo that I sometimes go with is adding spinach to my pancake mix in the food processor. It’s a great way to get the veggies and you can’t even taste them. Happy WIAW!
Oh yah, I’ve done that with muffins before! It’s cool since you can’t taste the spinach!
I never thought that I’d be big on using smoothies to replace a meal either, but with the right ingredients they’re actually surprisingly satisfying. It’s nice to have something to crunch on alongside, though
And savory oats! I loooove them! I used to eat them all the time before my intolerance, and they’ll probably be coming back now that my stomach is taking better to oats again. I love having them with an egg, marinara sauce, and hummus… suuuuuch a good combo.
Definitely need the crunch on the side!! So glad the oats aren’t bothering you as much! Intolerances are such a bummer! Ahhh, marinara and hummus! Need to try that next time.

I just quit my job, so not working right now, I just workout early to stay on schedule for when I work again haha. I’m odd clearly!

i totally was asleep a little after 10pm last night but thanks to my cough i kept waking up all night and was NOT well rested this morning. good thing i feel better as the day goes on. i have spin on today’s agenda too!
i love weird random bowls for dinner like the one you made. last night i did black beans, pico de gallo, chopped up wheat pasta, ground turkey, tomato sauce, and roasted brussels. def went back for bowl #2.

I eat lots of weird combos – most of my favorite foods probably are! like peas with nut butter and brownies. Chocolate with fried pea snacks and roasted kabocha. Sweet beans with energy bars and dip. Should I continue?

My eyes keep gravitating back towards that amazing bowl of savory oats! I’ve been nervous about trying anything but sweet versions of oatmeal, but this combination sounds incredibly YUM! Hummus, coconut oil and nutritional yeast? Some of my favorite flavors all in one place. Mmmm.
I totally understand the lack of meal prep = lack of creativity thing. I’ve been wanting to be an REAL meal prepper for so long (all of these organized bloggers make me feel so lazy!), but until today, it had just never happened. Since I had the day off from the gym, I spent three hours cooking butternut squash, broccoli, cauliflower, eggs, chicken, quinoa and sweet potatoes. I made a huge mess, and my tupperware is now occupying at least a half of the fridge, but it was worth it (I’m sure my housemates disagree, haha).
One of the weirdest foods I’ve tried was fried grasshopper tacos in Mexico! Not really a combination, but in a way it is because there was guacamole in the corn tortilla, too.

I’m usually not one for smoothies as meals wither, especially during the winter, but I have been craving them like crazy lately for some reason. My solution is to double the size, stick it in a bowl, and pile on the toppings.
I feel like I’ve been craving the same! So weird!
