Hello all! How was everyones weekend?
It still continues for us over in Canada land, since it’s Family Day. Yes, this is a very random holiday, but at least we get an extra day off:)
I hope all of you who got a plethora of snow are keeping safe and sound. No snow over here. Sad. Actually, over the weekend we had almost spring weather, it was so very pretty.
Let’s focus on the marvelous things I’ve been doing and making the past few days.
This weekend was pretty spectacular in the dream department. Waking up with a clear mind and a beautiful day ahead is just the perfect way to start the weekend off right. Enjoying a sleep filled night has been so pleasant after suffering from those pestering sleep problems I’ve grown accustomed to.
It’s been a little weird though, I’ve gotten a good 7-9 hours of sleep the past 4 days!!!! Yet, I seem to be running on coffee. I’ve never felt so exhausted during the day.
Odd.
Before the weekend got kicked off, I stopped by Starbucks to pick up some much needed caffeine. Anything below 0 cups and I simply don’t function a notch above lazy.
No matter how tired I am, I’ll always be able to make a delicious Breakfast…
A huge bowl of oat bran with almond butter.
Banana Coconut Oat Bran
- 1/2 cup oat bran
- 1 cup water
- 2 tablespoons coconut flour (SO good)
- 1/2 banana
- 1 tablespoon ground chia seed
- a pinch of stevia
Cooked up the night before in a sauce pan, and in the morning added the finishing touches: strawberries and almond butter. It was seriously like dessert in a bowl. The coconut flour brought out such a tropical taste.
Usually people are making “faux oatmeal” with just coconut flour and no oat bran, but I like to combine the two to make an ultimate bowl;)

The couch was getting a little too much action, so I agreed to meet my friend for more coffee. Yes, I sometimes go to Starbucks twice a day. When you’re looking insanely tired, red lips really distract from that fact. They are the perfect accessory for tired eyes.
Before more caffeine action, my hunger had to be satisfied.
Roasted kabocha plus coconut butter.
Nothing new here.
Did I mention the fact that this Spring I’m going to plant my own squashes?! So excited for this! Hopefully they will turn out, but I kind of have a black thumb so probably not, but I might as well try, right?
After coffee, it felt right to have some chocolate before I made Dinner.
This chocolate is delicious. I’ve been loving my consumption of chocolate and ever since introducing it regularly, I’m no longer plagued with a side of guilt. Sure, it wasn’t easy at first, but now I’ve gotten so used to it, it’s less anxiety inducing each time.
Sunday, I decided to completely unplug from the computer and enjoyed one of my ultimate favorite movies, once again. Breakfast at Tiffany’s.
I can watch this over and over and never get sick of it, Audrey Hepburn is amazing.

Unplugging for a day sounds great, but unfortunately lately all my work for University is online or in need of a computer. But then again there’s only just over 5 weeks until the end of semester, so there will probably be days where I don’t open my laptop then.

I can’t stop going to Costa lately. I enjoy Iced Soya Latte’s all year round, not just in the warmer months.

That’s so awesome that you’re going to grow your own squash! I planted a vegetable garden last year, but I didn’t plant squash because I was going to be back at school by the time it was ready, since you don’t pick it until the fall.
I definitely want to try growing some when I have my own permanent house though! I would take over my whole yard with kabocha plants haha.
Haha, yes it’s today! It’s so random that ours is this week…no clue why they’d do that.

Never planted our own squash before, but we are planning on doing a garden again this year. Last year was not successful, but in the past we’ve grown tomatoes, onions, lettuce, carrots, corn, etc.
Oh that’s so cool! Hopefully this year will be successful in the growing department!
B.C. finally got family day, but it’s a week earlier than the rest of the country. Not 100% sure why they did that!
And my dad planted butternuts a few years ago, it was pretty awesome having a pretty much unlimited supply in the backyard

haha he just retired this year, so I can guarantee you that there is going to be a massive vegetable garden at my parents this year. I’ll let you know if I hear any good advice :-p
We’ve had weather in the 50s lately so spring is on itz way!! Plus it was light outside when I got back to my house after the gym and that is VERY welcomed!!

Ah, I love how it’s finally getting light outside now when I get out at 4 or 5! I hated that it was pitch black by that time in Winter hah.
I almost had a heart attack when I read it was Family Day – first your green grass and NOW you have a long weekend before the rest of us?!

How lucky are you! I am quite jealous that you get an extra day off, ESPECIALLY a Monday. Think of us all here in the States today while we are at work!

Haha, yah in BC it’s today for some reason?! Isn’t that bizarre, I have no idea why they did this! It’s the first year we have Family Day so who knows? Ha. So random!
I was listening to the radio and caught the tail end of a conversation where Christy Clark (Premier) talked about having Family Day today in BC because British Columbians voted that it be the second as opposed to third week in February.
It’s so random! Ha, it always confuses me when holidays are on different days in different places. Oh well, at least we have it this year!

I’ve never had oat bran cooked that way….I need to give that a try. I would love to plant some kabocha squash!! I actually have some for lunch today. It is so hard to find around here, it would be great just to go out to the garden and pick some!!

Yum! Growing your own vegetables is so fun! We’ve had the worst luck with gardens at our house now but hopefully our next house we’ll do better. I made some Paleo Brownie Bites that included coconut flour and they were delicious! Definitely one of my favorite coconut flour recipes!
I’m really hoping these will work out! Apparently they grow pretty well out here, so as long as I don’t do something to destroy them which just might happen;)

I seriously had to do a double take when you said that today was Family Day, because I had to go in to work! But apparently BC celebrates it for the first time this year? And on the 11th instead of the 18th, which is when we celebrate it here in Alberta.
Something from my weekend? I didn’t have my daily cappuccino yesterday… and oh MAN was I feeling it. Do NOT try to go a day without coffee… learn from my mistake. And I’ve never tried adding coconut flour to oatmeal before! But now that you mention it… I really want to give it a try!

The only sign of spring is the fact it’s doing a rain/snow mixture around these parts which means Spring is peaking its head through the clouds
I’ve never found a good recipe for coconut flour. I really want to bake something with it but I never find anything which sounds good. I used to make “cookie dough” balls with it, but that’s about it!
Also, I definitely agree the more you incorporate things like chocolate into your day – the less stressful/guilty you get in the future. I think it’s more of mind/matter.

It’s so true that once we do something regularly that previously was so scary (for me that’s a glass of wine each night, or a snack after dinner) and then we see that nothing happened as a result…well it’s just such a great feeling. Getting over the initial hump of doing it enough times to convince yourself it’s really no big deal is so hard. But once you’re over that mountain it’s a downhill ride (in a good way) to use my spin terminology.

Yay for extra hours of sleep! I got some more in spending this weekend at my parents’ in the countryside. The feeling of feeling truly “fresh” and energized after a good night’s sleep can’t beaten!
Good idea to plant your own kabocha. My mum has been doing it for me for the past years as kabocha is very hard to find around here and homegrown squash tastes a million times better than storebought

Instead of trying to whip up “healthy” desserts with Greek yogurt and egg whites, which always taste rubbery, I just eat some good chocolate and that’s enough. My chocolate consumption has been high lately too. It’s all these February specials!
