Good Morning! I hope everyone has recovered from their weekends and are welcoming this Monday with open arms. Or maybe just with some Breakfast and a big cup of coffee will do.
This morning I couldn’t believe my eyes when I woke up and saw that it was 7:30. That means I got 9 hours of sleep!!! Honestly, it’s been a few months since that has happened! Splendid.
Obviously, I shared a photo of my morning Breakfast on Saturday, now let’s get to that wonderful recipe, yes.
Vegan Banana Pancake for One
- 1/3 cup oat flour (ground my oats into flour)
- 1 tablespoon coconut flour
- 1 banana (mashed)
- 1 flax egg (1 tablespoon ground flax + 3 tablespoons warm water)
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/4 teaspoon baking powder
- ~2-4 tablespoons almond milk (start with 2 and add more if they need more moisture)
- 1 teaspoon vanilla extract
- touch of sweetener (for desired sweetness)
Hopefully you already know how to cook a pancake, but you basically mix the dry, mix the wet (after allowing the flax to “gel” for ~5 minutes). Add wet mixture to dry, coat your pan with a tad of oil of choice (I used coconut oil). Finally, cook for about 4-5 minutes per side on low-medium heat.
Top with desired toppings!
I chose fresh blueberries and my favorite almond butter. Yum. Oh man, a delicious vegan pancake for one. I want these again.
This Breakfast was the perfect way to get fuelled up and energized for a quick workout. When it came time to get active, I felt like taking a break from pilates. Today, I scoured the internet for a quick routine I could do at home. My fellow Fitfluential Ambassador, Katie posted this workout and I decided to give it a try.
It felt great to just get moving and get a little activity in. Perfect for the weekend where you just want a quick fitness routine so you can move on and have the rest of the day to do whatever.
Now, let’s recap the rest of the weekend shall we?
Friday was an awesome night. My Mom and I haven’t spent too much time together lately, which is not too good in my books. I love hanging with my Mom, I’m just that cool.
On a skype chat with my lovely friend Heather, she mentioned she attended a Gabrielle Bernstein lecture, obviously I was super jealous;)

On a whim, a few days after our chat, I got this vibe to just check her website. Totally assuming at this time she wouldn’t be coming over to Canada. I’ve come to accept many speakers don’t tour over here, especially in Victoria.
Well, I was super surprised when I saw she’d be having a lecture in Victoria! I was a little too excited about this news and asked my Mom is she’d like to go with me. She, of course agreed.
A few weeks later, they happened to send out a notice saying Danielle Laporte would be speaking as well!
If you know anything about the two women, you’d know that they are two positive, inspiring miracle warriors who spoke so well together, you could just feel the great vibes all around the room.
We arrived at the lecture and I unexpectedly got to meet her and get my book signed. Which in itself, was pure awesomeness –> apparently, this is a word.
Let’s just say the experience in whole was eye opening, motivational, and I learned a ton of good stuff.

I awoke with a beautiful mindset on my shoulders and was ready to start the morning. Nothing is better than having a relaxed morning, being able to appreciate the stillness all around, with a big cup of hot tea to warm up. Sipping and savoring the little moments happening all around me, now that is pretty marvelous.

How great that you were to meet these amazing ladies!! And hanging out with Mom is always perfect, I love spending time with mine too. My daily workout time varies from 45-90 minutes. And at least one day without any workout at all!

I love hanging out with my mom too. During my teenage years we didn’t get along, and when I was suffering from an ED I really pushed her away but now I try to make up for those lost years and I really enjoy spending time with her.
Your pancakes look really good! I usually workout for 45 minutes a day, 5-6 days a week and only strength training

It was so great! Especially because Danielle Laporte was also there, so it was very interesting to hear their two perspectives! It was lots of learning to let go of the ego mind and value ourselves as who we are, let go of guilt, and we did a guided meditation which was very interesting too! Such a good experience. I bet you’d have loved it!
Thanks so much for sharing that recipe. The fact that it is vegan AND it makes the perfect amount for one serving is really great!! Too many pancake recipes exist out there for 4 servings and I definitely should not be eating that many pancakes…even if I might like to!
Oh my gosh, I know it kills me when there’s a huge pancake recipe for like 3-4 people because I hate having leftovers haha.
Ah! How cool!! I love GB- she’s such a beautiful spirit. I get about 30 mins of exercise a day – either a walk, run, yoga, or a HIIT sesh. Whatever I feel like that day.
She is glowing inside and out! So wonderful to see the energy change when she spoke, it was too cool!

9 hours of sleep definitely marvelous! My body seems to refuse to let me get more than 8, no matter how tired I am.
And I am all about the mom-time…I’m looking forward to it when I go home Wednesday night, actually!

9 hours of sleep? Amaaaaazing! I definitely can’t remember the last time that happened to me – I usually end up getting about 6, and my body doesn’t seem to ever want to accept any more. And I love the idea of the little things making the big differences – I’m totally on the same wavelength after this weekend
I’m no expert, but I’m pretty sure that one of the keys to finding happiness is being able to sit and appreciate the random every day things around you. Warm coffee. A ray of sunshine. A good breakfast. Nothing extraordinary, but added together, it makes one heck of a good morning.

That workout sounds great! I typically spend at least an hour a day 6 days a week working out. Some days my workouts are less than an hour and some days they are two hours but I always enjoy them!
