Hello and good morning!!
The day started off with a lovely morning spin ride while catching up on Downton Abbey, of course. I look forward to morning rides where I can indulge in this show, almost finished with season 2 now!
Another thing making me smile today, the fact that it’s What I Ate Wednesday. The day where we all get a peek behind the scenes and share the delicious things we’re eating. Getting recipe inspiration from others is something I totally need right now. I’ve been neglecting spending much time in the kitchen, especially since my appetite seems to be missing today.
Moving on to the food portion for today…
Breakfast:
{ Buckwheat bowl with pumpkin, strawberries, and peanut flour topping }
My Sister and I got to spend the day together, so that was lovely. After spin, I made a nice Breakfast and enjoyed it before we headed off to Starbucks to grab some coffee and engage in a little gab fest.
Lunch:
{ Leftover lentil soup made with roasted tomatoes, mixed vegetables, and nutritional yeast }
Soup is exactly what I was craving, I was glad I had some leftover from a few nights ago when I tried out a new lentil soup recipe. I’m kind of loving on soups lately.
This post is going to be a little on the shorter side, I ended up having a very emotional draining day. Nothing I want to discuss at the moment, but I’m just really drained and need to get myself together.
Snack:
On days where my appetite is non existant, smoothies are a pretty good replacement for meals. As long as I fill them up with enough good stuff.
Dinner:
{ Green smoothie in a bowl }
In the mix: a huge handful of frozen spinach, a bit of romaine lettuce, frozen organic strawberries, 1/2 a large avocado, 1 scoop sun warrior (warrior blend), spoonful of almond butter, and about 1/8 teaspoon each of cinnamon, xanthan gum, guar gum, and stevia.
Smoothies have taken over in my kitchen. I’ve had one just about everyday now. Craving Spring weather, has lead me to crave things I’d typically wait to drink in the Spring. That’s fine, it’s fun to pretend.
Now, I’m sipping on a cup of coconut hot chocolate, and will later have a night snack. Not too sure what that will be yet, most likely a something delicious though:)

I’ve been totally loving on soups too! For lunch has been butternut squash soup from trader joes!

I’ve only been up for about 45 minutes so I haven’t eaten yet, but I’m thinking that a pancake breakfast is starting to sound appealing…
Vegan pumpkin fudge – that looks incredible! Yesterday I had brown rice spaghetti with vegan meat crumbles and daiya on top for dinner and it was delcious. I’m all about the soy lattes when I meet up with friends
Lentil soup sounds amazing. I am obsessed with both soup and lentils, so they definitely make for the perfect marriage, in my book

Sorry you’re having a tough and draining day, Lisa. I hope things will look better again soon! Great to hear your favourite show made you smile a bit, though. I’m usually resorting to the little things to brighten up hard days, too.
I actually don’t really drink coffee, so when I go out with girlfriends, I usually get tea even though I don’t really like that either! I’m actually not a huge fan of hot drinks. I’d much rather get some unsweetened iced tea. Now THAT’S my cup of tea

The best thing I ate yesterday was my lunch! I had a sandwich with grilled chicken, fresh mozzarella, and balsamic! hmm so good!
I have to say the best thing I ate was some wasabi rice cakes. yum
I am just eating something sweet as a dessert, Alpro Soya Blackberry Yoghurt with a topping of chopped mixed nuts and milk chocolate chips. So good

Skinny vanilla latte will always be my go to drink at Starbucks<3
Mmmmm soups! I love soups so much. Especially with thick, bread on the side! Or in a bread bowl. Yumm!

I wish I had a bike or treadmill at home so I could watch Mad Men during cardio and make the time fly! Your lentil soup looks so good to me right now. I love lentil soup, but not the watery crap that comes in the cans. It has to be thick and hearty, almost like chili. When I go out for “coffee” with friends it is almost always tea. Sometimes I splurge and get a green tea latte, regular latte or hot chocolate though
YES! I’m so with you on the Mad Men aspect, Devon. And Lisa–I’m so sorry you’re feeling badly! All your eats look yummy though, and I’m sure a gab fest with your sister was well needed!

When I go out with friends I usually order a nonfat latte (with almond milk if they have it) or iced green tea

Your foods look delish, as always. Today, I ate a Sweet Potato-Eggwhite Tortilla I made up, it was really good.
I hardly ever drink coffee, so green tea is my fave. Sometimes also a green chai latte, but they are so sweet, so it’s more like a treat once in a while.
For a second you had me thinking that Starbucks makes coconut hot chocolate! Damn..
I am chomping on quinoa bean salad right now- just hits the spot. i almost always get skinny soy green tea latte if they have (Starbucks is great about this). I hope you feel better friend. Take care

When i go to a coffee shop, I usually order tea because it takes me the longest to drink. Otherwise if I get a coffee or latte, I suck it down in under 2 minutes and then I am just sitting there watching my friend drink hers haha
ahhh yes, the beautiful green smoothie in a bowl. It’s been too long since i’ve had one. I’m due for one! did you make one for you sis?
I’m now wanting a green smoothie!! I think I’ll have to make one this weekend. I always have tea when I go to a coffee shop! I love my tea!

Okay…how have I not yet tried your famous buckwheat bake?! And yes, they ARE famous. I've been seeing them pop up on various blogs and receiving rave reviews. What am I waiting for? I'm especially loving this chocolate version…and those delicious-looking strawberries on top! I splurged and bought some today, which makes me all giddy inside. I can't wait till summer arrives and they're more affordable again!
Best thing(s) I ate today: roasted salmon, avocado and sweet potato for dinner, and a few more squares of Sea Salt Soiree for dessert!

I typically don’t start craving smoothies again until at least April but I think am with you and the reason I am loving them so much already is because I am desperately wishing for spring weather. For now, though, I am content with eating my huge smoothie bowls in front of my portable space heater.
