Hello, all. It’s Wednesday! Which means I’ll be linking up to this weekly fabulous What I Ate Wednesday party. It also means we’re half way through the week!
Around 6 this morning, I got up, got on some gear and made my way to the little home gym we have upstairs. It’s so nice to have the same spin bike at home that we have at the gym, so I know what my usual tension and RPM will be. It was a doozy of a workout.
After my workout, with a little stretching too (I’m getting a bit better at this), I made my way downstairs for some substantial food.
Breakfast -
Breakfast Cookie: Oatmeal, almond milk, protein powder, hemp seeds, almond butter, strawberries, 1/2 banana)
Lunch -
Roasted kabocha squash, coconut butter, and on the side roasted chickpeas (cooked in a smidgen of coconut oil and curry powder sprinklings)
Snack -

Kashi cinnamon harvest cereal, strawberries, and almond milk
Dinner -
Homemade italian style chili with a secret ingredient. Avocado slices on the side.
I’ll post the recipe later. So delicious!
Snack -
Most likely a single serving muffin, with some coconut flour frosting, and almond butter to top it off. The usual. I probably don’t even need to mention it anymore. No picture, since lighting sucks at night.
Maybe one of these days, I’ll take a picture to show you.
Overall, a pretty decent day of eats. It’s still a bit of a stressful time over here, so excuse the shorter posts, but while I’m working on a few things just bare with me for the moment.

Your eats look delicious – especially the breakfast ‘cookie’ and the kabocha! I’m obsessed with roasted kabocha, I’m seriously going to be an oompa loompa (I like it with chocolate and peanut butter, yum)!
Love breakfast cookies – I haven’t made one in a while, I’ll need to do that soon!
I’m not sure yet what snacks/lunch will be, but I’m roasting up a chicken with sweet potatoes and salad for dinner today!
I am excited for the chili recipe. I cannot wait to find out what the secret ingredient is!!
My favorite on-the-go snacks are bananas, apples, almonds, and healthy protein bars.

My favorite snack lately is hard boiled eggs with a little Dijon mustard. Weird since up until a few months ago I couldn’t stand them!
It’s still early here on the west coast, so I’m looking forward to my yogurt bowl breakfast with Cinnamon Crumble Kashi Go Lean! Crisp cereal. It’s my new favorite.

Ah, I have been wanting to try kabocha squash after seeing it on lots of posts and of course the last time I was at whole foods they didnt have it.
My favorite snacks on the go are hard boiled eggs!
I have some guesses as to the secret ingredient in that chili… But I’ll keep my mouth zipped for now. When you do the big reveal I’ll definitely let you know if I was right. Haha.

Things are stressful? Eeep! I’ve totally had my head out of the blog world for the past week and a half so I’m not all too sure what’s going on, but I hope things are okay! <3
And noooooo more on-the-go snacks! After all that travelling and having to deal with bars/cookies/crackers/portable snacks, all I want is to be able to sit at home and enjoy a yogurt mess or something equally as delicious.
I may or may not have licked the screen today when I saw your food photos.

Sorry to hear times continue to be stressful for you, Lisa. I’m sure nobody would grieve it if you took a few days of from blogging in case you need to. While I enjoy reading your posts I wouldn’t want you to feel even more stressed out by writing them.
One good thing I ate today was my very first – vegan or not – French Toast. Definitely one to repeat.

Isn’t that cinnamon harvest cereal delicious? Definitely one of my favorites in the Kashi line! That chili looks wonderful! Can’t wait to see the recipe!
