Healthy Vegan Mint Chocolate Chip Ice Cream

Not only is this recipe sweet, creamy, and tasty; it just so happens to be one of the best chocolate combinations imaginable. Mint and chocolate definitely tie with peanut butter and chocolate as the perfect match.

Therefore, it was time to recreate my favorite ice cream flavor as a kid into a healthy alternative. I mean the only thing better than a cup full of mint chocolate ice cream on a hot day is… nothing, so I just had to make this for you all.

Healthy Vegan Green Mint Chocolate Chip Ice Cream.


  • 1 large banana, frozen
  • 1/2 avocado 2 tablespoons raw cacao nibs
  • 1/2 cup non dairy milk of choice (I used unsweetened almond milk)
  • a few handfuls frozen spinach (just freeze a bag of organic spinach previously)
  • 1/2 teaspoon vanilla extract
  • 4 mint leaves or 1/4 teaspoon mint extract
  • 1/4 teaspoon stevia
  • 1/2 cup ice

Directions: Place all ingredients into a high speed blender or food processor and blend together until smooth.

Makes 1 serving.

Healthy Vegan Mint Chocolate Chip Ice Cream

Notes: feel free to leave the cocoa nibs out of the smoothie and stir them in at the end, so you can enjoy some chocolate in each bite.
Or boost this ice cream by adding some protein powder or anything else you may find delicious.

I promise you can’t taste the spinach in this recipe – scouts honor. If you wish – you could just use green food coloring if you’re completely turned off by the spinach.

Bute, let’s not get it twisted – this isn’t real ice cream. There isn’t any cream or sugar in this so it won’t taste like actual ice cream. It is in fact, a lot better for you than a bowl of processed food. As well as being refreshing and tasty.

It’s a wholesome and nutritious Snack that I just adore because it’s filled with real and simple ingredients. Not only that but it tastes delicious. So good, so ridiculously simple, it makes for perfect Snack to enjoy in the Summer…or anytime.

Now go blend one up yourself and don’t blame me when you get addicted to this healthy treat.

  12. That looks so good! It’s been crazy hot here (humidity is supposed to reach 45 degrees…insane) so I’ve been dipping into my Coconut Bliss daily (note to self: buy more this weekend). This does look awesome though! Mint and chocolate is a fabulous combo, but I’d have to say that chocolate and peanut butter is the best ;-) Favourite ice cream flavour though? Tough one…I’d have to say cookies and cream or chocolate chip cookie dough.

    • Eeek. Sounds too hot! I LOVE coconut bliss, so good! This would probably be even more awesome made with full fat coconut milk – yum.

  15. Can you ever go wrong with the mint + chocolate combo?! It’s one of my favourites – be it in bar form or banana softserve. I bet the addition of avocado makes yours extra rich and creamy.
    Favourit ice cream flavour? That’s a tough one and I’d say it changes depending on which flavours are on offer and what I’m feeling like. Generally, I’m all about fruit flavours like mango but I’ve had some pretty awesome others like Rübli-Kokos (think Carrot-Coconut cake) and peanut butter chocolate, too. Only these aren’t all that popular around here (yet) so hard to be found – even more if we’re talking vegan choices though all of the above mentioned were.

  16. I LOVE recreating things that I loved not only as a child, but even just a few years ago or before I went dairy free!! This looks and sounds delisssshh and perfect for summer days!! I don’t like cream based foods when it’s hot out anyway!

  17. My favorite flavor of ice cream is either cake batter, chocolate chip cookie dough, or chocolate with peanut butter… I think. Lol I like them all! I love re-creating anything whether it’s from childhood or from a restaurant. If it’s a healthier version, even better! I must say I love chocolate on its own, but a little bit of peanut butter never hurts anyone… Unless you have a peanut allergy :D Keep your head up, beauty!

    • Ah, oh no to the allergies! Maybe you could add coconut butter or coconut flour instead of avocado and not sure with the banana…hmm…maybe mango or peach? I’m trying to think what would work there haha.

  26. This summer I’ve really been enjoying Strawberry Shortcake Ice Cream, despite not liking this flavour in a cake form. Usually my go to ice cream flavour is cookie dough, or if it’s soft serve I like the Chocolate Vanilla twist. When I was little I always picked out the “Prettiest” colours rather than the yummiest flavours, so I often left with Cotton Candy, Rainbow or Bubble gum! I’m definitely going to try this as my nighttime snack as I have a frozen banana ready to go.

    • strawberry shortcake ice cream sounds brilliant! I’d love to try that flavor. I’m usually not a strawberry ice cream lover, because of the artificial flavoring – but I’d totally try that.

  33. Would this work in a magic bullet I wonder? And I wonder if/how protein powder could add in…I’m a bit lost because I soon want to start a “no egg and dairy” trial but I’m not a fan of beans or grains, and I do not wish to eat fish/chicken twice per day (once per day is all my stomach can handle I think). So, if I have protein powder at one meal, not sure how to protein and calorie up the next (again: not a fan of beans or grains).

  38. The homemade ice cream looks great, and the best thing is you don’t even need an ice cream maker! I should turn up the central heating and give it a go! Although I’ve never considered avocado in it, that would provide some creaminess!

    My favourite ice cream flavour would have to be this fig and walnut gelato they sell seasonally. Tastes amazing, and worth the whole $6 for the single scoop! Glad I came across this blog!
