Single-Serve Coconut Banana Oat Bake

Vegan Coconut Banana Oatmeal.

Single-Serve Coconut Banana Oat Bake

  • 1/2 cup oatmeal
  • 1 tablespoon protein powder
  • 1 tablespoon coconut flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon stevia
  • 1/8 teaspoon baking powder
  • 1/2 banana (mashed)
  • 1/4 cup coconut milk (full-fat)
  • 3/4 cup water

Mix all ingredient together and pour into a lightly greased baking dish and bake for ~30 minutes at 350º.

On a final note, I’m getting minor surgery this week so I’ll be taking a bit of time off of the blog (but I have some wonderful guest posters lined up!) It’s also something I’d rather not discuss on the blog, but if you have questions you can shoot me an e-mail.

Do you like coconut? What’s your favorite form; butter, oil, milk, flour, flakes? I like all form, except the flakes.

  3. I need that shampoo & conditioner! It sounds awesome. My hairdresser used an argan/hemp oil blend in my hair recently that smelled like the vanilla brown sugar stuff from Bath & Body works.
    Green tea lattes and Bulletproof coffee are my fav “fancy” drinks. I do a “lady” version of the BP coffee though – 1T unsalted butter + 1T coconut oil, blended until frothy with organic coffee. It is LIFE CHANGING. It’s sooooo incredibly delicious. It’s like drinking liquid gold! And it makes you feel amazing from the healthy fats.

  5. Congrats on officially becoming a pilates instructor!! Thats amazing! I love coconut in all forms (except water, weirdly enough) but i think the flakes might actually be my favorite :) i love them on froyo, cupcakes, you name it. your new cappuccino sounds delicious. my drink of the past year has been nonfat mistos, but i love a good capp.

  6. Woo! Congrats on passing your exam, love! That’s awesome :D And I’ve always been intrigued by barre exercises, so I think it’s neat that you’re looking into that as well.

    Couldn’t help but laugh when you mentioned that you hated coconut flakes but loved the butter/oil – it’s the same for me. I think it’s a texture thing, to be honest. Coconut flakes just make me feel like I’m chewing on wood shavings or something. NOT pleasant. And you know I’m all about the cappuccinos! I heart them ridiculously, but it’s hard to get a good one. I may have to try making one at home, but that means investing in a frother… Definitely need to look into that one.

      Haha, yes! It must be the texture of the flakes, since I just despise them. Ick, I can’t even swallow them without gagging. Not cool ;)
      I’d suggest investing in the frother, since it’s totally up or down whether the Starbucks will make a good one!

    I just discovered who Kris Carr is, and although I’ve never read her books, I love her website and blog!

    I like coconut in all forms. Except the flour, kind of. I just don’t know how to use it, so it frustrates me haha.

      Her blog and website definitely rock too! Her book is pretty interesting! Not something I’d do full force, but really great recipes!
      Oh man, coconut flour is so frustrating at first, but once you find a good recipe I swear it’s a keeper haha.

    I will be in Boston in June and will meet up with Danielle (CleanFoodCreativeFitness) for a Barre class. Never did it before and so excited to try it! Do you know any good online trainings or DVD’s for Barre?

      Oh gosh, so jealous you two will be taking a barre class together! It’s SO fun!
      There are some pretty good online things. Physique 57 is the pretty classic stuff, otherwise there’s pure barre fitness DVD’, the booty barre DVD’s, and the exhale core fusion DVD’s also are great!

  9. Yay for your new juicer – that will be fun! I love decaf lattes with vanilla almond milk. I suppose I really should know this – what does bone dry cappuccino mean? I’m so curious!! I love shredded coconut in my oatmeal. And my favorite health related book is definitely The Kind Diet. Changed my life!

    • Bone dry just means that it’s all foam and no milk! I had to google it when they told me haha. I was like what the heck is bone dry. So don’t worry that you didn’t know that;)
      I still haven’t read the Kind Diet! I really need to get on that.

    • Thanks Carly! I’m just recovering from surgery now, but I’m planning to start teaching after recovery, and then I also want to expand my knowledge with barre certification and personal training just so I know more about everything and I can give the best to my clients!
      Oh goodness Carly, you need to try coconut butter! Ha, I swear it’s life changing. SO good.

  13. I’ve been loving coconut lately, especially in baked goods! I’ve always been a fan of coconut pie which is always made at Thanksgiving. Something to look forward to each year :) Congratulations on the Pilates certification! Go girl! My favorite “fancy” coffee drink is probably the Pumpkin Spice Lattes at the holidays. I just love them. I hope everything with your surgery goes well! Praying for you!

    Favourite way to enjoy coconut…tough one. I do like coconut butter, but only with certain things, like sweet potatoes! I think I actually like flaked coconut best, it makes an awesome topping for pretty much everything.

    I’m definitely with you on loving coconut butter lately. I can’t get enough! So good and creamy! I’m loving cherries lately as they are in season around here and out of this world amazing! I eat way too many but oh well!

      Coconut butter is just the best. I think I may eat it each and everyday! And yes, cherries! I’ve been loving frozen cherries too! In green smoothies they are the best.

Congratulations on your Pilates certification — that’s awesome! :) I’m also a Starbucks addict, and although I’m trying to save some moolah by having coffee at home these days, I have a policy of getting one Starbucks drink per week. This usually happens on Saturday mornings, and I get one of my go-to fancy drinks: a skinny hazelnut latte or a nonfat caramel macchiatto. Delish!
