Happy Monday all!

Some exciting news this Monday morning! I still can’t believe the year is almost over.

My weekend was kept pretty low key, but with some fun thrown in there.

Every morning since Friday, I’ve enjoyed playing some Christmas music while sipping my coffee and getting ready for the day.

It’s such a perfect way to wake up celebrating the holiday season.

This weekend I finally attempted to head to the mall and pick up some Christmas gifts for my loved ones.

Unfortunately, it was extremely busy and I just can’t put up with big crowds.

So that was unsuccessful, but there’s still some time to pick out those perfect gifts, not much time but at least two weeks.

I quickly returned from shopping to celebrate a few of my best friends birthdays.

We had a few drinks and went out after. They are such a fantastic bunch, and it’s always a blast when we hang out together.

As always, I enjoyed some great eats this weekend too.

One of my favorite fall vegetables are brussels sprouts and surprisingly I hadn’t picked up a bag of them for quite a while.

I saw them at the store and new they would be eaten this weekend.

After a productive day, I re-fueled with perfectly roasted brussels sprouts and asparagus, with some unattractive looking vegan cheese sauce as well as leftover kabocha squash. Still addicted to that, clearly.

Other eats this weekend included an old favorite; cookie dough balls!

Not sure why I haven’t made these in so long! They’re totally fun to snack on.

Instead of using regular liquid stevia this time around, I used the peppermint flavored. Awesome idea!

On Sunday, I tried a new (to me) workout to see what the hype was all about.

As I said, I’ve been loving pilates more recently. I seem to go through workout phases. I did enjoy crossfit style workouts, but I also want to start incorporating more pilates, yoga, body pump type routines.

I saw that Physique 57 now offers online classes. How awesome, right?

I wanted to try one out, since I’ve been thinking of purchasing the DVD and we don’t have any studios where I live.

I did the routine and not sure what I think about it yet. May have to do another round before I see if I want to purchase it.

The workout incorporated a lot of small pulsing movements, and used light weights with high reps. I was surprised by the burning my muscles were experiencing throughout the exercises. They don’t seem to difficult at first, but near the end it’s more painful.

Some parts were a little corny (as most fitness videos are), but I’m definitely interested in taking some of these types of classes in the future.

If it’s good enough for Kelly Ripa, it’s good enough for me;) I would really like her arms, please.

A New Toy

Time for another addition of What I Ate Wednesday, thanks to the lovely Jenn.

Today started with SPIN. We had a sub today, which was a great change. More my style of music, so I got to jam out to my favourite tunes. I also got to test out my new heart monitor ,which I got for my birthday! I was a little too pumped about using this for class this morning.

I love playing around with new toys like this, and getting everything set up. I’m like a 6 year old. It kind of reminded me of playing with those tamagotchi things. Did anyone else love those? I had about 6 of them.

Just a random tangent for you all…

(I blurred out the calories, because I don’t want any comparisons or anything happening.)

Last week I also had my heart rate zone tested last week, to make sure I know when I’m in my strength or endurance zone. Which I highly recommend doing by the way.

I came home and all of a sudden felt the urge to clean out my closet. Does that ever happen to anyone else? I ended up spending about 30 minutes cleaning out some things before I thought I should probably get some breakfast in.

Breakfast – 8:

I made a batch of granola pancakes for breakfast, that I topped with sun butter. Winner, even though they were slightly burnt.

I probably should have made 2 smaller ones, instead of a giant one.

Later, I got ready and got my coffee on. Awesome, as always.

I had a serious hankering for some socca when I returned home. I decided to roll with it and made a simple socca for lunch.

Lunch – 12:

Socca cooked in coconut oil with a side of kale chips and cauliflower that was roasted in coconut oil, nutritional yeast and a little almond flour. Side of mashed avocado.

One of my favourite simple lunches to have.

Today was the first real day that its felt like Fall with the cooler weather and a slight breeze in the air, so my sister and I decided to go on a little Halloween spree.

We went to Michael’s and picked out a few fun things to decorate the house with.

Including some scented candles. I had a hard time choosing which ones I wanted, but decided with “pumpkin pie” and “fall foliage”.

Snack – 3:

Once home, I snacked on an apple with a few cookie dough balls.

To be honest, these past few days have been really hard for me emotionally, and I really didn’t feel like eating at this time. However, I sucked it up and prepared something anyways. I didn’t picture Dinner, since I wasn’t really in the photographing mood.

Right now I just want to curl up with a good book and a cup of tea, and of course will have a little something more substantial before bed tonight.

Dinner Inspiration

Hello, friends!

Can you believe it’s almost the end of September already? And that means only 5 more days until my BIRTHDAY! Crazy times. And this will be the last WIAW of September as well.

The day started out with the usual spin class, where I really noticed how cold the mornings have gotten. All my workout jackets are pretty old at this point, so I’ve been neglecting to wear them to the gym. Bad idea. It was freezing this morning, and I had a few errands to run after spin class.

I was glad to get home and park myself in front of the fireplace for a few minutes, while enjoying the first meal of the day. I had a batch of buckwheat in the fridge overnight, but since it was quite chilly I just warmed it up in the microwave for about 40 seconds. I still prefer them cold, but it was still tasty.

This batch contained: 1/3 cup buckwheat cereal (ground in coffee grinder), 1 cup almond milk, 2 teaspoons chia seeds, 1/2 banana, 1/3 cup pumpkin, cinnamon, stevia, and topped with peanut flour paste and blueberries.

Breakfast – 8:

I got showered and ready and ran more errands. I had to fill up my gas in my car, and it freaking cost me 80 dollars. Eighty. For gas. Ridiculous. I guess it’s not as expensive as it was at the beginning of Summer, but still too much.

I also made my way to the grocery store and realized I forgot my list. I tried to remember what I had written down, but when I got home I realized that was a huge fail and missed at least half the things. Oops.

Some food was next on the agenda.

Lunch – 11:30:

* 2 egg omelette, cooked in a little coconut oil *

I’ve been stuck on eating eggs for lunch for days. I haven’t eaten a “typical” lunch in a long time now. I’m not much of a savory lover when it comes to breakfast, so if this is the only way I’ll get my eggs in for the day, I will happily eat them for Lunch or Dinner.

After lunch, I went on a little stroll to see the last remains of Summer.

In between Lunch and Dinner, I became quite hungry yet again. My appetite never fails to let me know when its hungry, which seems to be every 2-3 hours these days. Not that I’m complaining, it’s just weird to feel that hunger again when I’ve been denying its existence for so long.

Snack – 3:

After, I got geared up in my sweats and some really fancy boots and went down to the crawl space to pull out some Halloween decorations. I got totally in the mood to decorate the house. I only managed to bring a few thing up since crawl spaces freak me out for some reason. I guess its the small space.

Now I really want to go to the mall and pick up more Halloween themed fun stuff to decorate with, I’m just that cool.

Dinner is always a lame attempt at me to become creative. I try every now and again to think of something, but by this point I really just could do well with leftovers and call it a day. I decided to ditch that idea, since I was home to make a dinner and attempted to make a lasagna of sorts.

It was a mix of a fail/success. It tasted awesome, but it did not stay together the way I hoped. Oh well, just means I get to try out again:)

Dinner – 5:

* a little deconstructed lasagna casserole that contained leftover zucchini, red pepper, marinara, and a brown rice tortilla *

Of course, I’ll be having a snack before bed tonight. I just usually don’t blog about it since its not that late yet.

Green Juice and Cookie Dough

Morning! I was up early once again. Anyone out there get nightmares and then can’t fall back asleep after? I had this dream about all these spiders and when I woke up it was 4 AM, and then I couldn’t fall back asleep. So, I just decided to be proactive and get the started day super early. Fun times.

This post will be super random, so be prepared for that.

To get some more energy, I relied on a morning green drink. I made a “juice” from the following ingredients:

  • 1-2 cups spinach
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 carrot
  • 1 handful kale
  • 1 cup water
  • stevia
  • 1/2 cup ice

I just blended it and didn’t bother to remove the pulp. So it ended up more like a thick juice. How delicious did I just make that sound?;)

I also thought that getting my veggies in mostly from juice will make it easier to add calories without “bulking” up my meals with too many vegetables. Because there is a point where your eating too many veggies and not enough of other nutrients and food groups.

I also attended a fun spin class! I love the energy in these classes, which makes it a bit harder to take it easy while everyone is going hardcore, but I managed alright.

Operation eat more calories has been happening. Still going strong, but must admit it is still really hard to keep up with this process. I just need to keep focusing on the long term goals at hand.

Stress is just getting the best of me at the moment, but I’m going to continue to power through.

It feels like I have a million and one things happening, so I’m trying to stay sane and calm and get things done without putting further stress on my body. That is something I could do without.

Right now I’m working on staying present in the moment, meditating each day, taking a step back from my anxiety and connect with my power.

I start to view things in a more positive light when I just connect with myself and I hold the belief that I deserve a successful outcome in life. I’m keeping my mind set on those beliefs.

In the afternoon, I took a break and enjoyed some “cookie dough”. I left the protein powder out of this mixture, because I wasn’t feeling the protein powder yesterday. So I combined the following:

Pumpkin “Cookie Dough”

  • 3/4 cup pumpkin
  • 2 tablespoon coconut flour
  • 7 drops liquid stevia
  • 1/2 teaspoon vanilla extract
  • 1/4 cup oats

I mixed it all up before hand and left it in the fridge to thicken up a bit. Underneath I hid the peanut flour frosting, so I had some enjoyable bites at the end, instead of the usual eating all around the toppings and saving them for last. This made that process easier;)

Delicious.

I chugged some tea before hand, since there was a little chill in the air and I was getting tired at this point in the day.

Since you asked nicely, here are some interesting things I came across this week.

1. Did you hear the news you can now get waffle wasted?

Forget about eating your waffles, drink those bad boys down instead. Not too sure how I feel about waffle flavoured vodka? I mean, waffle? So, does it taste syrupy or like the actual waffle, because I don’t think I’d like that one bit.

2. Oh, and hear is a fun article on 10 reasons why anxiety isn’t so bad after all. I like it.

3. Watch this video on the Pam Scam, its very interesting and eye opening how companies are allowed to “lie” on nutritional labels!

4. CJ shared this article on one of her posts, and I just wanted to share it as well. It is a really sad, yet true article on pre judgements on people suffering from eating disorders.

Which Do You Love?

Happy Monday!

Good morning! Hope everyone had a great weekend.

I just spend it working, so didn’t get to experience too many exciting things.  I came home last night and just crashed right away. It was SUPER hot over here, I just love the sunshine! I also got far too many bug bites this past weekend, my legs are non stop itchy!! Not the best feeling ever.

We also had the fun experience of watching fellow Victorian, Ryan Cochrane receive his silver medal in the 1500 freestyle! It was such a good race and super exciting to watch!
Its really cool to watch him race, because we actually used to swim together! So, its pretty neat to see him out at the Olympics and actually medal!

Pretty darn amazing. Everyone is super happy for him, of course! What an incredible accomplishment for anyone!

This marvelous morning, I thought I’d complete this fun survey from Katie’s blog!!

Let’s get straight to it…

1. Strength training or cardio?

*one of my favourite workouts, incorporating some fun burpees!*

This is a tough one for my to choose between. I definitely am a spin junky, but I really love crossfit/GPP style workouts that include pushups, goblet squats, walking lunges, and all those fun strength training moves! I love them both equally, although right now my workouts aren’t as intense as I’d like them to be. Fitness is going to be there forever, my bone health, however is not if I don’t take care of it now. The most important thing to me, is being confident in my body and what it does for me daily!

2. Breakfast, lunch, or dinner?

Definitely breakfast. I think this is the clear winner for me. I’d be a happy chick if I could build all of my meals to look like breakfast Breakfast for breakfast, for lunch, and for dinner is a win in my books. Oh and snacks too. I’m basically a classy breakfast snob.

3. Dress up or workout clothes?

My favourite thing is to get all dolled up for the day or night. I like to put effort in my appearance, because it personally makes me feel better about myself and puts me in a more positive light looking my best. I just enjoy girly things. However, if you ever see my at home I’ll be totally decked out in my comfy sweatpants and a t-shirt.

4. Wine or beer?

*homemade vodka lemonades are just about my favourite thing to drink during the summer…fine and winter too.*

Well, since I despise beer, I’d have to go with wine. I definitely enjoy a nice glass of white wine every now and again. If I had the choice of any liquor though, I’d have to say a grey goose cocktail is definitely my favourite. A nice cocktail over the weekend with friends is something I am a-okay with!

5. Peanut butter or almond butter?

Can I choose cashew butter instead? Its so creamy and just yummy. For this one, I’d have to say I prefer almond butter on this one. I actually love peanut flour, but don’t care for the peanut butter taste. I think it’s a bit too savoury tasting? And I hate how sticky it is. Okay, I guess its a texture thing. I’m odd about the textures of foods. Give me almond, cashew, walnut, or coconut butter and I’ll use it all day, everyday!

6. Heels or flats?

*Some of my favourite sparkly heels, I just love these things. They are so pretty.*

I almost never go a day without wearing heels. I’m a little bit of a shorty, so I can definitely rock out the heels. For some reason, I just can’t get with the flats. I used to live in them, but over the past year or so I’ve grown to love my heels. Even at work, while standing for hours I still prefer the heels look, although my feet do hurt by the end of the night. There are some super cute flats out there of course, I just don’t think I pull them off as well.

7. The actual cake or the frosting?

*The cutest cupcakes ever! How adorable are these little bees and flowers! Can’t get enough of these designs. Seriously, I could never have that precision!*

FROSTING!! I never liked cake as a kid and always ate the frosting on my friends cake. I’d always pick the ice cream cake to have at my parties, since I was never a cake gal.

8. Spring, summer, fall, or winter?

*Hot chocolate; made with coconut milk, raw cacao powder, and stevia. Yummmm.*

Oh man, I swear whenever a new season turns over I say that one is my favourite. I love each season for different reasons.
Spring = flowers, light and cool weather, and colourful and fun clothes, Easter.
Fall = pumpkin, leaves blowing, cooler weather, crisp autumn scents, warm meals, my birthday!, Halloween, and Thanksgiving.
Winter = snow, holidays, hot cocoa, family time, cute sweaters, soups, boots, Christmas, and New Years.
Summer = fun dresses, bright colours, smoothies, and salads, and Canada Day.

9. Real animal or stuffed animal?

*My precious kitty, Miley. What a cutie cat is she?*

Real animals! I miss my little cats. (Crazy cat lady over here). I want to get a little kitten or puppy I can play with. I miss that bonding time with animals. And it’s a great excuse to get outdoors and move more!

10.  Bright or light?

*Green cookie dough! I love this snack! Yes, its a little obnoxious looking. But, its delicious!*

Bright, bright baby. I live for the bright clothing and nails right now. Its a joy! And makes everything more visually pleasing, to me. I even like to get a little crazy and eat bright foods. Give me that green cookie dough.

Green Dough + Burgers

Hello, beautiful people!

Happy Thursday!

This morning was met with a busier start. After eating breakfast, I quickly headed off to Starbucks to grab a much needed coffee. I’ve been enjoying the simple things in life. The weather, family, friends, and wonderful summer foods at the store. I’ve also been making sure to rest more and get less stressed about these simple things.

(It’s all so true)

Oh so wonderful.

For dinner, I enjoyed a wonderful new turkey burger recipe.

I picked up some ground turkey at the store earlier this week since it was on sale, and decided today I finally make something with it.

Almond-Coconut Crusted Turkey Burgers

  • 420 grams (or 1 pound) extra lean ground turkey,
  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • pinch of salt
  • 1 tablespoon coconut oil
  • 1/4 cup egg whites.

Mix together the flours and salt.
Form the ground turkey into 4 separate burgers.
Coat the formed burgers in the coconut/almond mixture.



Heat coconut oil over medium heat and cook the burgers in a pan for 6-7 minutes on each side, until cooked throughout.
Finished.

Turkey burgers are a big staple over here for protein options. The flour combos went really well together and definitely gave the turkey burgers some much needed flavour.

I ate the burgers alongside a huge pile of my favourite roasted veggies and some goat cheese. Nothing you haven’t seen before.

Backtracking to the afternoon, I had a craving for some dough. I quickly mixed up a batch of “cookie dough” to enjoy as a snack.

Let’s discuss this for a minute.

Yes, it looks totally bizarre because of the florescent green colour. I swear it is totally delicious. The chickpeas give it its thick texture, with extra protein punch, and the coconut flour and protein powder give it delicious flavouring. Just trust me, its awesome.

Green Cookie Dough (serves 2)

  • 1 cup garbanzo beans
  • 1/2 cup cottage cheese
  • 1-2 cups fresh spinach
  • 2 tablespoons protein powder
  • 1 tablespoon coconut flour
  • 1 teaspoon nutritional yeast
  • 1/4 cup pumpkin
  • 1 teaspoon vanilla extract
  • 20ish drops vanilla stevia + 1 teaspoon stevia granules

Blend everything in a food processor and enjoy. The added spinach was inspired by my green loving friend, Kristin.

I topped mine with a little cashew butter for some healthy fat action. It was all kinds of fabulous.

I don’t know what else I will have planned for the day yet, possibly going out with some friends later. We’ll see what turns up.

WIAW #17

Happy Wednesday!

It’s that time, What I Ate Wednesday once again!

Last night, I managed to get to sleep nice and early and slept a whole eight hours. I don’t think this has happened in months. It feels nice to be a bit more refreshed this morning. Although, my shoulder has a slight pain in it this morning, I guess I did something in my sleep to it?

I put together some breakfast relatively quickly. While I’ve eased up on the exercise this week, I’ve felt more hungry. That’s fine though I just got things together quick and dirty.

Overnight oat bran, banana, nectarine, and cashew butter. I realized I don’t really enjoy nectarines actually, so these were picked off after.

7 – Breakfast:

Usually, when I feel this hunger, I would ignore the pangs and wait for my “breakfast time” to eat. If I’m hungry, I’m going to eat, no more messing with my hunger cues.

After switching up breakfasts lately, my taste buds were demanding oat bran this morning ;)

Grocery shopping did not end up happening yesterday, so while I was up and at ‘em early this morning I drove over to the store to pick up a few things. While at the store I got a killer headache, so just picked up a few things to head home before it got worse.

Weird, I’ve been getting splitting headaches, almost like migraines on and off for the past few months.

11:30 – Lunch:

Ezekiel bread, goat cheese, homemade strawberry jam, egg, and spinach.

I attempted to read a bit, but my head was making it far too difficult to actually absorb any of the book I was reading, so mindless TV it was.

After some lounging and cleaning, I was hungry again.

3 – Snack:

Yesterday, I cooked up a protein muffin so that I could have at some point today.

Served it up alongside some tasty coconut spread (just coconut flour, stevia, a little greek yogurt, and almond milk).

I wandered outside after to soak up some refreshing sunshine and drink tea, while talking with a friend over the phone.

There was also a bowl full of perfectly ripe berries I snacked on.

I seriously have eaten 2 whole pints in about 3 days. I can’t stop eating berries. They are just too darn delicious right now.

For dinner, I decided I wanted something relatively easy, so I just roasted up some pre-cut kabocha squash and had it with a side of coconut butter and a poached egg.

Easy and splendid.

5:30 – Dinner:

I haven’t had a snack yet, as I’m writing this post, but I have plans to have some coconut cookie dough and am looking for a recipe to make tomorrow. I need some new snacks to have on hand.

Since my headache is still not better, I’m just going to take it easy, catch up on Pretty Little Liars:) and head off to bed early again.

It has also been a bit of a mentally exhausting day, so I just want to get to sleep and hopefully feel better in the morning.

June Favourites

Happy Monday!

Wowza, can it really already be July 2!  I can’t believe the year is already more than half over.

Hopefully everyone enjoyed their weekends! And to all my Canadian’s, happy belated Canada Day!

Yesterday, I celebrated Canada Day at a friends house for a little bit, and decided to head home early. I’m just not one for the insane drunken crowds downtown and then having to wait 4 hours for a cab ride home. Yeah, that’s what happened last year. Not the best of times.

Since I am on a budget, I love getting workouts off of Crossfit sites. Some bloggers regularly share their WOD. I enjoy doing these or adjusting them if needed, so I’m able to do them at home.
I’m now in the lookout for some new equipment so I can do these type of workouts more often. Or, hopefully finding a good deal so I can try out an actual box around here.
Speaking of, I really want to try this workout. Perhaps tomorrow?

I started the day off with my favourite breakfast. After changing it up, it was back to my old favourite.

8 – Breakfast:

Overnight oat bran with banana and to top it off a few blueberries and almond butter.

Satisfied, I got ready for the day.

After breakfast, I headed to an appointment and to pick up my daily caffeine.

As I was driving, I noticed the gas prices went down a seriously crazy amount! So incredibly happy about that. I had to make a pit stop. I mean, just a month ago it took 60 dollars to fill my tank half way and when I payed 60 today, it was full. I was pretty excited about that; which makes me a huge nerd, that’s fine though.

12 – Lunch:

Lunch was roasted kabocha squash with a side of coconut butter to dip. I can’t have enough kabocha, it’s the best. I basically ate the entire squash.

3 – Snack:

When I was hungry mid day, I mixed up a bowl of yogurt, a little protein powder, strawberries, and blueberries. Simple and tasty. Berries are definitely in season now, they are tasting ultra special.

I also brewed up a cup of tea to soothe my throat, I’ve been suffering with a sore throat for about a month now. No fun.

Then, I ventured on a short walk outside. The day started out a little muggy, but turned out to be quite lovely by the time the afternoon hit!

5 – Dinner:

For dinner, I wanted to change up my usual roasted broccoli slaw that was getting near its expiration date, so decided to cook it along with spaghetti squash and tempeh, and doctored it up with a cheesy ball, which turned into a sauce for it once it was heated.

Looks disgusting, tastes delicious.

8 – Snack:

 

Before bed, I whipped up a batch of coconut “cookie dough”. I used pumpkin instead of applesauce, replaced the cashew butter with 1/4 cup more pumpkin puree. After the photo shoot it was topped with protein flour paste. I’m addicted to this dough.

I’m not sure if I mentioned this in the first post, but make sure you refrigerate at least a couple hours in advance, so that the oats get soft and develop a more doughy texture.

I’m now tuning into the Bachelorette from Monday night.

WIAW #13

Good Morning Wednesday!

What comes before Part-B? Part-A. Get it? PartAy, like party.
A What I Ate Wednesday Partay, at that. Gosh, I’m so cool I can’t contain it.

I’m finally starting to feel a bit better, so hopefully this cold is finally kicking itself to the curb!

When the craving strikes for overnight oats, there is no turning back. I said last week I’d change it up, but clearly I’m a liar.

7:30 – Breakfast:

*more overnight oat bran topped with copious amounts of cinnamon and cashew butter after*

I was so excited this morning, to look at my schedule and see that I had no appointments or anything today. So I could do whatever the heck I wanted. Unfortunately, the fatigue crept back in, so I’m going to take it easy another day while I can!

I caught up with a friend over the phone and enjoyed the leisurely time I had.

11:30 – Lunch:

A slice of toasted ezekiel with avocado and an egg, with a side of roasted broccoli slaw topped in marinara sauce after.

I was still a tad hungry after, so I had an apple to snack on.

I had a great plan to try out a little yoga, because I thought I could handle it, and then felt like I was about to die. So, stopped with that terrific idea.

Instead of working out, I decided it was a better idea to lay on the couch with my favourite ever heating blanket! That thing makes me feel better instantly. True love.

3 – Snack:

Some while later I made myself a bowl of greek yogurt, cashew butter, and a large amount of fresh strawberries and blueberries.

Next stop was spending my sweet time online shopping. Oh spiralizer, I need you in my life. Okay fine, I don’t need it. I just so badly want one. And about 80 other things I can’t afford to buy right now.

I was a little ravenous today and couldn’t wait long before digging into dinner, luckily I had everything prepped for me to eat.

5 – Dinner:

I had leftover spaghetti squash, a homemade turkey burger, and used Janetha’s faux lasagna to dress it all up (which I found through this post).

I’m just loving spaghetti squash these days.

Then, I caught up on my reading and some other not so super exciting things.

8 – Snack:

I made myself a serving of pumpkin protein cookie dough to have as a snack before bed, which will most likely be served with a peanut flour ball.

Off to catch up on The Bachelorette from Monday night!
