What I Ate Wednesday

Hellooo to all the friendly faces out there! Put on a smile, since we’re already half way through the week. There’s a ton I have to get done today, so let’s get straight to the What I Ate Wednesday party.

Since things have been more on the go this week, simple meals have been the name of the game. Although, that’s usually my style anyways. I just don’t have the patience to wait long for meals…unless I’m baking!

By now, we probably don’t even need to guess what’s for Breakfast these days.

What I Ate Wednesday

Morning friends!

My morning tea couldn’t come soon enough this morning, as I had a rather sleepless night. Somehow, I even managed to sleep in until about 6:15, but otherwise I was tossing and turning most of the night.

What I Ate Wednesday

Good news, I’m feeling MUCH better after my “off” day on Monday. Honestly, I think it was just being super tired from the early mornings and late nights over the weekend, a little too much exercise, and lack of food. It happens, but I’m back on track now and feeling much more refreshed!

The day started out with a nice meditation and stretching routine. It feels so nice to stretch each morning, since the weekend left me feeling incredibly sore. On to other good things, like What I Ate Wednesday.

It ended up being a pretty random day of eats, since I was busy with a bunch of different appointments to attend.

First up was the best part of the day; Breakfast.

What I Ate Wednesday

Hello and a very happy Wednesday to you! Thanks for all the helpful and compassionate comments on yesterdays post. It’s always hard to admit things, but it feels even better to get them those thoughts off your chest. Let’s move on to the food, seeing as it’s What I Ate Wednesday, after all.

Admittedly, it’s a bit odd waking up and not starting the day off with a workout. On the plus side, I get to attempt to sleep in a bit and have an even more leisurely morning. Even though I didn’t get my fitness in, I’m still making sure to start the day off with a little stretching. Got to keep those muscles moving a tad.

What I Ate Wednesday

Morning all! Hope everyone is having a great Wednesday!

It’s definitely tough to make a strong comeback after such tragic news hits everyone so hard, but we must be strong for those who can’t be throughout this period of time. Hopefully you’re sharing your positive energy with others who deeply need it right now.

Of course, with it being What I Ate Wednesday, today is all about the food.

After I got up, I rolled out my matt and got my pilates workout on. It felt nice to get moving first thing in the morning. It’s always my preferred time of day to work out. Probably since I get up super early, it seems to fit in well with my schedule.

Breakfast -

buckwheat bake

{ Buckwheat bowl with added strawberries on top. }

Immediately after my workout, is always meal time. I don’t understand how some people can get by with no food in the morning.

Except, I used to be one of those people. In high school, I went through a phase where I never ate in the morning, not sure how that happened for all those years. But, I wasn’t the healthiest back then.

Lunch -

sweet potato chili

Nothing too crazy over here for Lunch, I made some sweet potato and turkey chili over the weekend and had some leftovers, so this chili was an obvious choice. It’s all I could need in a chili. Complex carbs, healthy fats, and protein to boot. With a little more avocado on top, it was the perfect meal to fuel me for the afternoon.

Even if it was super sunny and hot outside, chili is a perfectly acceptable option.

Snack -

dark chocolate

Once home again, I got hit with a chocolate craving. Good thing I just stocked up on some lovely dark chocolate at the store. Unfortunately, I still can’t find my beloved dark chocolate with sea salt, so dragoba dark chocolate will have to do for now.

apple

After, I dug into an apple for some added snack-age.

One of my little quirks, has to be that I don’t like putting that much effort into my night routine. When I come home, or if I’m out all day, the last thing I want to do is be in the kitchen for hours preparing food for that night or the next day, which is really why I need to start prepping one day per week.

Instead of working hard in the kitchen, I simply went back to my roots and make some Breakfast for Dinner. An all-time favorite meal for me.

Taking a cue from my lovely friend Amanda, I made a bowl of sweet and savory oat bran for Dinner time. As weird as it sounds, it totally works together!

Dinner -

sweet and savory oat bran

{ Oat bran, a bit of coconut/almond milk, banana, a little ground white chia seeds, and topped with raw cashew butter and mashed avocado. }

Right now I seem to be really into Breakfast all day. When the stomach woes happen, I know that carb and fruit filled meals are going to be my friend over vegetables. It’s just how it is.

And now, I’m off to dig into my nightly snack, as it’s calling my name.

Nighttime Snack -

muffin top

{ Muffin top, coconut flour “frosting”, and almond butter too - Not visually appealing in the slightest, but it’s mighty delicious! }

 My bed it also calling out to me, but Lola doesn’t seem to be tired at the moment. Time to run laps around the house, which will hopeful tucker her out a bit.

Happy Wednesday!

Favorite type of chocolate?

Do you prefer to exercise in the morning or later in the day?

What’s your favorite Breakfast for Dinner meal? Since I don’t eat eggs, oats or toast will be a clear winner for me.

Have a wonderful day!

What I Ate Wednesday

Hello and Happy Wednesday! I hope everyone’s having a beautiful day! The week is flying by! I still feel like it’s Monday, but it clearly is not. Which I’m mighty thankful for.

Now, let’s get the What I Ate Wednesday party started. It’s almost the best day of the weekend…behind Thursday, Friday, and Saturday;)

Since I can’t seem to get up any later than 4:30 these days, I’ve been taking the chance to getting my workouts in bright and early. Well, it’s not really bright at that time, but it sure is early.

cinnamon spice tea

Over here, the gyms don’t open until 5:3o, so I’m forever grateful I have enough equipment at home to get my workouts in. This way I also don’t have to deal with all the sickness, germs, and people at this time;)

One pilates workout later, and I was ready for a cup of tea. Followed by my leisurely tea drinking, I take the puppy out again, wash a few dishes, and prep my Breakfast to eat.

Breakfast -

coconut banana oat bran

{ Oat bran, banana, cinnamon, stevia, coconut flour, and coconut butter }

When I looked at my fruit bowl last night, I saw a perfectly ripe banana and knew it had to go in my Breakfast this morning.

Can anyone even argue the fact that banana and coconut are a combo meant to be. So good.

It’s been crazy with rain over here, so no enjoying the Spring time sun for me, but somehow the morning ended up passing by pretty fast. Probably due to all the puppy training. Next thing I knew, I was hungry again. After a quick trip to Starbucks for some much needed coffee, I made a quick meal.

Lunch -

quinoa bowl

{ Quinoa cooked in veggie broth, a huge handful of spinach, mixed with nutritional yeast, and half an avocado on top. }

Somehow, I ended up doing a little prep work Sunday (yay for progress) and had some extra quinoa on hand, which made this meal possible.

Isn’t it crazy how fast laundry seems to pile up? I swear I just did it, but yet again I had a huge load of laundry and chores to complete. Chores are the worst, but necessary. Cleaning always has the power to wake up my appetite, even more so than exercise. Odd.

Snack -

pumpkin cookie dough

{ Pumpkin “cookie dough” }

This lovely bowl had a mix of oats, pumpkin, coconut flour, almond milk, and a little almond butter.

It’s been a while since I really craved a big bowl of veggies for Dinner, but since the craving hit I decided to go for it.

Dinner -

IMG_0667

A bowl of homemade tomato sauce with some extra steamed zucchini and cauliflower (I actually had it without a reaction-good news I suppose).

On the side I had roasted parsnips that were baked in coconut oil, a little pink himalayan sea salt, and rosemary. One of my favorites.

Now, I’m sipping on some tea, reading a few blogs, and writing this post before relaxing a bit before bed.

Some deliciousness always follows at the end of the day. It will probably be the same old thing. Muffin, coconut flour frosting, and nut butter. I’m in a super rut with this nighttime Snack, but since it keeps me full until the morning, I’ll most likely stick with it until I’m sick of it.

And one more thing, thanks for the comments on yesterdays post! You all have great tips too!

Are you a fan of coconut? If you haven’t tried coconut butter, I insist you try it.

What are your favorite flavor combinations?

What time do you usually wake up at on week days?

Have a great day!

What I Ate Wednesday

Well, it’s the first week of April. I still can’t believe how fast time flies by.

This month gets me so excited, since it’s the return of all things berry! My favorite fruits may just me in the berry category, I’m sure I could eat a huge amount in one sitting. This month also welcomes the return of smoothies (which you all know I’m obsessed with right now), fresh cold salads, and ice cold beverages.

Let’s get to that What I Ate Wednesday party, yes? Make sure to check out some of the other posts and get inspired with some new ideas for your routine.

What I Ate Wednesday

Hello and happy Wednesday!

Sorry, I missed out on a post yesterday. A litte break was needed, just with everything with the new pup and just getting out more in general. Anyways, that’s another topic for another day. Of course, I had to make a return for one of my favorite days of posting; What I Ate Wednesday. Let’s get straight to the eats.

Shortly after waking up, I went upstairs to get my spin on. Usual Tuesday happenings over here.

Another usual, of course, is Breakfast! Always a plus of the day.

What I Ate Wednesday

Hello, all. It’s Wednesday! Which means I’ll be linking up to this weekly fabulous What I Ate Wednesday party. It also means we’re half way through the week!

Around 6 this morning, I got up, got on some gear and made my way to the little home gym we have upstairs. It’s so nice to have the same spin bike at home that we have at the gym, so I know what my usual tension and RPM will be. It was a doozy of a workout.

After my workout, with a little stretching too (I’m getting a bit better at this), I made my way downstairs for some substantial food.
