Hi, friends! Hope everyone had a beautiful and marvelous weekend! I didn’t get the chance to post, since it was just too gorgeous out and I didn’t want to miss a minute of this beautiful weather.

So how was everyone’s weekend? Did anyone get up to any crazy Cinco De Mayo events? Mine was definitely on the simple side, but I was perfectly okay with that.

Coffee Talk

Hi friends! And happy Friday! How has the first week into May gone? We had some gorgeous weather which was awesome, but I have a feeling this month may pass a little slow as I have a ton on my to-do list for May! Not that I can complain about that.

The weekend is finally upon us, which means another round of Coffee Talk! Which includes some new obsessions, recipes, and things I’m dying to try this weekend.

Coffee Talk and a Chocolate Cherry Smoothie

It’s Friday, which means we’re in the home stretch for the weekend to start. Hopefully you’ll be greeted with better weather than we’re having in my neck of the woods. Regardless, the weather won’t make or break my weekend.

Enough weather talk, let’s get to this weeks Coffee Talk, or in other words my random thoughts, obsessions, foods, and other things I’m loving lately.

1. My smoothie addiction is still going strong, I know a few of you understand this. Speaking of smoothies, I have a new recipe to share with you!

No joke, I’ve been searching for frozen cherries for years now and just found some at Costco. To say I was excited is an understatement.

Dark Chocolate Cherry Smoothie

  • 1 cup milk of choice (I used unsweetened almond milk)
  • 1 cup frozen cherries
  • 1 tablespoon cacao powder (I use dark chocolate)
  • 1 scoop protein powder
  • 1/4 teaspoon each of guar and xanthan gum (for added thickness)
  • 1 cup ice cubes (about 10)
  • 1 tablespoon coconut butter* (optional, but adds such a nice flavor to the smoothie)

Place all ingredients into a food processor or blender and mix until smooth and creamy. Serve immediately.

2. For the first time, I watched Food Matters.

Not sure what took me so long to finally see this documentary, since I’m clearly health obsessed. Everyone should see this. It’s really a fantastic and well developed documentary.
If you’re interested in the science behind food and how our body processes our food correctly, this is for you! Embarrassingly enough, I found myself talking notes while watching it, since that’s obviously what all normal people do. I’m a little bit of a research-a-holic, so this was perfect for my information obsessed brain.

3. Have you ever tried Zevia before?

I’ve discovered my favorite flavor. Oh goodness, this stuff is top notch. I don’t even like soda, but I love this stuff! Honestly, I only grabbed this can because it was cute, pink, and I’ve never tried them before.
Anything with good packaging, and I’m instantly suckered into it, luckily this tasted good on top of its looks.

4. A lot of you wanted to know where I got this dress from…

Instead of answering e-mails and comments individually, I figured it would be easier to mention it in this post. It’s a “crochet lace scalloped dress” that I bought at the bebe online store. Not sure if it’s still available, but I’ll take a look around and let you know if I see it!

However, even if it’s not available, I highly recommend their store for online shopping. They’re one of the only clothing stores I’ve had success with buying online. The quality of their outfits are really good, so they last quite a while and I find the sizing very decent.

5. These carrot cake luna bars have been popping up in the blog world lately, and I have to admit I’m a little jealous about this fact.

I’ve never actually tried carrot cake before, but from what I hear these bars are amazing.
That being said, I’m almost tempted to create my own healthier version myself.

6. These two Essie colors are the perfect Spring time polish.

Since pastels are all the rage this season, I thought these were very appropriate with the trend. It took me ages to find a pretty color like this. I was up island in Nanaimo a few weeks ago, and happened to randomly come across these.

Pretty sure I squealed when I spotted them. Our nail polish selection here is very slim, and even though I don’t love the staying power of these polishes (I prefer OPI). The colors are much better from Essie than OPI, in my opinion.

7. This made me smile.

 It also reminds me that it grinds my gears when people write “expresso”. No, it’s espresso.

8. One last note, anyone have any quinoa recipes they’d like to send my way?

9. I lied. Just one more thing. I start my pilates teacher training in one week now! Eeee.

At The Moment

First, I have to thank you all for your comments on yesterdays post. It seems a lot of us can relate to living from a planner, and not really doing things “in the moment”. This morning, I was pretty excited that I got the chance to sleep in until 6 AM. Progress people, progress.

There’s not a whole lot happening over here right now, I’ve been feeling a bit off the past few days. Most likely, due to the ungodly early hour wakeup calls. I’m sure those have done a number to my immune system, so I’m just hoping I can keep myself away from getting sick. I’ve been battling a chronic sore throat for the past 2 years or so, so I’ve kind of learnt to live with that one.

Rest assured, we’re not here to chat sickness so with that being stated, let’s move on to some things happening at the moment…

Eating

Breakfast for Lunch, in the form of a Breakfast Cookie. Definitely one of my favorite items, especially since it’s so easy to make and I just love it.

Shockingly enough, I’m not drinking coffee at the moment. In fact, the last beverage I had was a simple iced tea. Over the weekend, I went to David’s Tea and obviously had to pick up a new bag…I got the sweet strawberry and it’s amazing served over ice. Yum.

Making

These curried pumpkin black bean burgers (minus the garlic and replacing the ground flax with ground chia seeds for me). They look incredible.

Wishing

That bad things didn’t happen to good people. Praying and thinking about all of those affected by the terrible event in Boston.

It’s absolutely awful and horrendous that this happened. Let’s not put the focus on those of us who are saddened by this event, but instead focus that energy, prayer, and positive thought, to all the people truly affected.

Coconut milk. Full fat, from the can. It’s the best making hot chocolate from this plus a little almond milk, and then adding in my favorite cacao powder. This stuff is seriously delicious. It’s the perfect combination.

Well, since I just finished a spin workout! I’m currently wearing one of my favorite Lululemon hoodies. Scuba hoodies for the win.

They are so comfy and I love them for lounging around the house. I may or may not own more than 3 of them, yikes.

If not obvious by my sentence above, I just finished a spin workout! I really need to start posting the spin workouts I complete at home, now that I’m no longer going to classes at the gym. Would you like that?

March Favorites

Another month has come and gone. This time of year, things are finally starting to brighten up. Including fashion, foods, and the weather of course.

While I have an appreciation for The Fall and Winter months, I definitely love the Spring and Summertime for the lovely weather we’re greeted with. Especially this week, it’s been unreal. Simple Pleasures

Morning all! Happy Easter Monday! The weekend is still continuing over here, which is a nice treat!

Hopefully everyone had a marvelous weekend. It’s been a little while since we chatted, but I simply needed a little mini vacay from the blog. Instead, I had a weekend filled with some simple pleasures to occupy my time.

I may or may not have started each morning with baked banana oats. They taste so dang delicious after hanging out in the fridge overnight.

My weekend ended up pretty low key. With lots of friends taking finals soon, along with a delightful migraine and sore throat, things remained pretty quiet around here. Although I wasn’t doing anything too memorable, it was still rather enjoyable.

Clearly, I’m super behind on posting this, since you know Valentine’s was basically a month ago. It’s never too late though…

1. Valentines Candy I Love: Shockingly enough, I’m not in love with Valentine’s related candies, since I feel like most of them are in the form of those candy heart messages and gummies and I really, really dislike both those things. I hate when things are overly chewy, ick. It’s a teeth phobia thing I have.

Coffee Talk

Happy March first! This week just flew by before my eyes. How on earth are we already in the third month 0f 2013. That year still looks weird to me, I haven’t even gotten used to writing out 2013. Odd.

Anyways, it’s Friday so let’s get started on some Coffee Talk. By the end of the week, all I want to do is get some confessions, obsessions and all that laid out from this week.

February Favorites

Hello friends, can you even believe the end of February is here! Finally.

February feels like one of those months that drags along forever, even though it’s the shortest. Not sure how that works, my guess is because it lies right in the middle of Spring and Winter. So by this time we’re kind of sick of the cold, just waiting for that Spring air! Ah, I just love Spring time.

Speaking of loves, it’s time for another edition of February favorites, well, monthly favorites to be exact. This month was a short and sweet one, but that didn’t stop me from finding tons of new favorite things. Okay, some aren’t new, but they’re my favorite things in any case.
