Morning lovely people! This will be my last post for a while, but don’t fret, I’ve hooked you up with some amazing guest posts coming from some of my favorite bloggers so stay tuned!

There’s been this Blog Everyday in May challenge going around lately, and I decided to join in on one day of the fun…it actually looks pretty neat, so maybe I’ll do it another time, since I clearly don’t like following rules of challenges.

What would you say if you had to sell yourself in 10 words or less? For someone who likes to blab and type a lot…this was actually harder than I thought.

Apparently, when I’m stressed out I like to get creative with my food. Maybe because it distracts me from my mind and anxiety. Yes, that’s probably it. I’ve been experimenting more in the kitchen, which means more recipes for you!

I had some pumpkin leftover from yesterday’s Breakfast, and decided I better put it to use before it goes to waste. Enter pumpkin balls. Sounds super appetizing, right? Well, they were in fact.

protein energy bites

Pumpkin Protein Energy Bites (makes about 8-10 balls)

  • 1 tablespoon coconut oil*
  • 1/4 cup almond butter (or nut butter of choice)
  • 1/4 cup oat flour (grind oats into flour)
  • 1/4 cup protein powder
  • 1 tablespoon hemp seeds (ground)
  • 1/3 cup pumpkin
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • pinch of sea salt
  • dash of stevia

First grind the oats and hemp seeds together (if the oats aren’t already in flour form)
*Melt the coconut oil slightly by heating it lightly in the microwave.
Mix the above ingredients in a bowl (dry and then wet) until combined fairly well.
At this point, add desired sweetener and spices to this mixture.
Combine once again, until a doughy consistency is reached. At this point, you’ll want to get in with your hands to make the dough come together.
Form into balls, store in the fridge or freezer, and they’re perfect to grab on the go!

Holy moly these are good. Especially when placed in the freezer for a few hours so they’re the perfect texture.

I’ll also be living on these the next few days….

Smoothies galore. This particular smoothie contained frozen banana, spinach, avocado, chia seeds, sun warrior protein powder, and almond milk.

What I Ate Wednesday

Hello and a very happy Wednesday to you! Thanks for all the helpful and compassionate comments on yesterdays post. It’s always hard to admit things, but it feels even better to get them those thoughts off your chest. Let’s move on to the food, seeing as it’s What I Ate Wednesday, after all.

Admittedly, it’s a bit odd waking up and not starting the day off with a workout. On the plus side, I get to attempt to sleep in a bit and have an even more leisurely morning. Even though I didn’t get my fitness in, I’m still making sure to start the day off with a little stretching. Got to keep those muscles moving a tad.

Hello and happy Wednesday!

Sorry, I missed out on a post yesterday. A litte break was needed, just with everything with the new pup and just getting out more in general. Anyways, that’s another topic for another day. Of course, I had to make a return for one of my favorite days of posting; What I Ate Wednesday. Let’s get straight to the eats.

Shortly after waking up, I went upstairs to get my spin on. Usual Tuesday happenings over here.

That Girl

We all know “that girl”. You know, the girl people project their judgements on. Possibly because she acts in ways you find odd, maybe you wish you had certain attributes or confidence “that girl” has.

We’re human, we sometimes judge others. Though it isn’t the best quality, it certainly happens to the best of us.

Have you ever been that girl who commits the very things you swear drive you crazy? I’m sure we’ve all fallen victim to this, at least at one time. We may not even realize it happening. Call it being a living contradiction, or just being human.

It’s easier to judge others than it is to judge ourselves. Our ego wants to avoid feeling uncomfortable, so we turn to judgement. Who are we to judge when we all in some way are that girl…

what I ate wednesday

This past week has been a rather pleasant week. It kind of feels it should be Friday but alas it’s not. That doesn’t make it any less great though.

After a rough last week, I’ve come through the other side I realize I was being quite ridiculous with it all. I was really vague on why I was feeling this way, but it is good news. Well for me at least, I’m sure others could care less. After a few years of no monthly cycle, it has finally returned.

Enough about that for now, let’s move on to the food. After all, it’s WIAW.

Breakfast -

I returned to my old staple, oat bran. Oat bran, chia seeds, hemp seeds, banana, peanut flour on top.

My naturopath mentioned trying out L-Glutamine to help repair some of the digestive problems I’ve been having so I finally got around to picking some up. Well, I tried it out and ended up feeling kind of weird after it. Not sure why. It was such an odd feeling! Has anyone else experienced this?

Lunch -

Socca, coconut oil, nutritional yeast, zucchini, asparagus, hummus, avocado.

It’s been a while since I’ve had socca and I just so happened to get in a new shipment of garbanzo bean flour from iherb, so of course I had to make socca as part of my Lunch.

Snack -

Oats, protein powder, coconut flour, stevia, and pumpkin.

There was a weaning bowl of pumpkin in my fridge, so I decided to use the rest of it to make one of my favorite pumpkin cookie dough bowls.

Quick, easy, and a satisfying snack before my next meal.

Dinner -

Turkey, zucchini white sweet potato, green beans, dill, and creamy tahini sauce (except I halved it and used sunflower seed butter since I don’t like tahini).

I had plans to try out a new Dinner, but I got home late so I just threw together a mish-mash of left over things I had from the weekend.

Combined for a random, but delicious bowl for Dinner.

My evening snack will be my new vegan muffin with coconut frosting and almond butter to finish it up. The lighting is unfortunate at night, so no pictures for you.

What I Ate Wednesday – Peanut Flour

Morning!

Thanks for all the comments on yesterdays post! You all had such wise thing to say about this ongoing issue a lot of us seem to face on believing others beliefs and really trusting our bodies.

Moving on, it may not be the weekend, but another Wednesday means another great weekly party.

Apparently I was only able to sleep in for a day because I woke up again this morning up and ready at 5. It ended up working out since spin was at 5:20. After spin, I had worked up quite the appetite so I quickly sat down for some food.

Breakfast -

I’m so obsessed with these now. I combined 1/4 cup buckwheat flour, 1 tablespoon hemp protein powder, 1/2 tablespoon chia seeds, and 1/3 cup pumpkin. Cooked and allowed it to cool and thicken overnight in the fridge.

Yum, it comes out so amazing in the morning. Topped off with my favourite peanut flour frosting.

I’ve actually received quite a few questions on how to make the peanut flour frosting. It’s the easiest thing ever.

  • 2 tablespoons peanut flour
  • a little stevia
  • a small pinch of sea salt (I use pink himalayan)
  • about 1 1/2 tablespoons almond milk, often a bit less if I want it thicker.

Sometimes, I’ll even double this recipe to make more.

After breakfast, I had an appointment to get to. It was kind of brutal actually. I ended up being there for 2 and 1/2 hours. Kind of unnecessary but all of that is taken care of, so I won’t have to go back which is nice.

I initially thought I’d only be there for about an hour, so I didn’t pack any snacks which I instantly regretted because I came home starving. Thank goodness I had leftovers in the fridge from earlier in the week.

After returning home, I made a quick cup of coffee before I ate, to satisfy my caffeine craving.

And yes, I did stock up on the holiday cups before they left Starbucks.

I have issues and like drinking out of these cups rather than coffee mugs.

Lunch -

Quinoa salad with zucchini, coconut oil, roasted tomatoes, tomato paste, a little cauliflower, spinach, nutritional yeast, fresh basil, nutritional yeast, and avocado on the side.

It was absolutely freezing here today. Okay, I exaggerate just a tad. It was just super duper rainy. Like insane rain, but it made me want to just curl up inside with a good book and not do anything.

Unfortunately, after I quickly ate, I had another appointment to get to.

My appointment went be really quick, so I was able to get home from the freezing rain and warm myself up with a cup of tea. I got to try out Amanda’s favorite tea and I can so see why. It is truly delicious! Yum.

Now, I’m totally going to have to order some online. Darn addictions to new things. Now I just need to try the sugar cookie tea everyone raves about.

Snack -

I made a new batch of pumpkin protein bars but had to swap out a few of the ingredients, since I’m intolerant to a few of them.

Luckily they were already vegan beforehand, but I still can’t have flaxseeds, brown rice protein, or amaranth flour.

Dinner - 

Since it was rainy out, it made it the perfect night for chili.

I still can’t get enough of this recipe. I make it at least once every two weeks.

I have no plans for tonight, so I think I’m just going to catch up on the Bachelor. Honestly, I’m not too impressed right now. It’s all the same. Crying, sappiness, heartache (I’m sorry but how can you be crying about a guy after 2 hours?) but I’m sure after a few episodes it will get even better, you know once you can actually learn everyone’s name.

Plus Pretty Little Liars returns tonight (yes, I’m actually 22) and it’s kind of an awesome show, so I’m more excited for that.

I’m thinking later I’ll have a vegan protein muffin, coconut flour frosting and some peanut flour again as well.

What I Ate Wednesday

Hey all! Hope your week is off to a fantastic start. Mine certainly is!

In fact, it’s time for another round of what I ate Wednesday, this month is about sharing holiday recipes and while I don’t have any holiday recipes to share, it was still a day filled with delicious eats!

This morning started with a lovely spin class.

It definitely felt good this morning, the whole class was full so it was buzzing with energy. Afterwards my Mom and I grabbed a coffee before I had to head out for the morning.

Breakfast - 

Overnight oats with 2% greek yogurt, raw oats, banana, frozen blueberries and ground flaxseed.

Did you realize it’s exactly two weeks until Christmas! Um, I’m not ready in the slightest!

I had to eat super fast, since I had an appointment first thing this morning.

I’m horrible at eating fast, so it wasn’t too successful. I also over estimated how much time I had to leave before my appointment and ended up in quite a frenzy.

I hate being late.

Lunch after a busy morning, was based among leftover items I could find in the frige.

I ended up using the remaining millet I had cooked up a few nights ago and combined that with a bunch of leftover vegetables.

Lunch -

Onto the baking pan went zucchini, tempeh and cauliflower, cooked until browned in coconut oil and dill. I love dill.

I mixed the millet with the rest of the vegetables and to round out the meal, I made a dressing with 1/2 an avocado and about 1 tablespoon of nutritional yeast, thinned with some almond milk. So filling.

After I cleaned up the kitchen, I had a skype date scheduled with some of my favorite ladies. Of course that was a swell part to my day:)

I sipped on a cup of gingerbread tea while we all chatted.

I didn’t have time to stretch after spin today, so I made sure to pull out my foam roller and get to stretching. Ah, so dang painful. I need to stop neglecting the foam roller, so I don’t die in pain everytime I break it out.

Snack - 


I noticed there were some Christmas orange upstairs, so I stole a few to snack on later. I love these.

It’s weird because I hate regular oranges, but love Christmas oranges. Anyone else?

I also grabbed 2 pieces of vegan fudge.

My Dinner was sort of lame, nothing too out of the ordinary.

More socca! I’m highly addicted to this wonderful flour.

Dinner -

Socca, dill kale chips, roasted cauliflower, a little spinach and a ton of nutritional yeast clearly and avocado in the shot glass.

I got a little too excited with my sprinkling I think. I love how the nutritional yeast soaks into the socca since it’s cooked in coconut oil. Totally hit the spot.

Now, I’m about to watch The Mindy Project. Does anyone else adore that show? Mindy is kind of awesome.

I’m off to heat up some of my favorite tea and then finish the day with a snack! I’m thinking coconut milk ice cream sounds decent.

Friday Confessions

Hello!

I clearly haven’t gotten enough sleep this week because I looked in my freezer this morning and found my wallet? I didn’t even know it was missing.

Hm.

I’m truly confused how it got in there…Life is weird sometimes.

Coffee is much needed today.

Let’s get to this weeks confessions.

1. ‘Tis the season for everything holiday themed.

I mean why buy normal coffee when you can buy christmas coffee. I have to admit I fall victim to this trend.

Holidays = happiness in my mind. My heart belongs in this season.

I like the Fall flavours, but there’s nothing better than gingerbread, peppermint, and eggnog flavored goodies.

The weird thing is I don’t like these things as individuals, but in baked goods they are just the best!

Who wants to send me some gingerbread coffee ;) ? We sadly don’t get it here.

2. I mentioned on my what I ate Wednesday post that I had socca for Dinner and I had a few people asking me what exactly it is and how to make it.

It’s so simple, really!

I take 1/3 cup garbanzo bean flour, a little less than 1/3 cup water and mix it together, while 1 teaspoon of coconut oil is heating in a pan.

Then, I simply pour the flour and water mixture and cook it in the pan.

And voila! It’s pretty hard to mess up, so don’t fret.

3. Maca.

I posted this on instagram yesterday, but wanted to know what on earth I should use my un-opened package of maca in.

Most people recommended smoothies, which I’m definitely going to try out, but it’s so cold.

I wonder if it would be any good in baked goods? Opinions?

4. This tea cup candle needs to be made instantly.

Is that just not the most adorable thing ever?

It kind of sounds time consuming, but I can’t get over how much I love it.

Plus you can add your own scent, which just makes it that much better.

5. I’m kind of addicted to this moroccan argon oil for my hair.

It makes my hair so silky soft, and I just heart it solely for that reason.

It also prevents hair frizz and those little whispy hair pieces that sometimes come around, as well as protects hair from sun damage.

So basically it’s amazing.

6. New Workouts.

This one was rough, but I it was fun once I was finished.

Anything that can get me running is a miracle.

I’m pretty much loving all the GPP workouts that Janetha has been posting about. I’m now addicted to their workouts.

They burn so good and are short and effective. Winning.

What I Ate Wednesday

Why hello there Wednesday, we meet again. Time for the usual foodie fun.

I tried to mix things up more this week, but I’m such a creature of habit I can’t help myself from returning from the old favorites.

My day started off bright and early with a not so new workout, spin class. Even though I go twice a week, I love that each class is different from the last. Intervals are the best.

This morning I realized just how cold it has gotten over here now, ick. I guess that just means I get to load up on coffee and my favorite teas. Fine by me.

I returned from spin starving so breakfast was had as soon as I walked in the door.

Breakfast -

Pumpkin oat bran always tastes amazing in the morning, plus it’s ready as soon as I’m home….so they’re back once again.

Hey, if it works it works.

Since I dropped my bottle of molasses over the weekend, I made my way over to the store bright and early to get there before the crazy later morning crowds arrive. And made sure to stop for coffee as well!

It was perfect timing, the store just happened to be dead. I picked up a few necessities and came home to get my baking on.

I also picked up 5 kabocha squash I found at the store. They re-stocked so that was a pretty pleasant surprise.

Yep, I’m cool like that.

I got home and did a little work before breaking into my next meal.

Lunch - 



I decided I wanted to make some sort of pizza, but didn’t have any tortillas or crust. Easy enough to fix.

I simply made my own from 2 tablespoons ground flax, 1 tablespoon coconut flour and 1 egg, which I fried up in a smidgen of coconut oil.

Topped with tomato paste, spinach, roasted brussels and goat cheese. Baked in the oven for about 10 minutes until the cheese was melted.

For last minute making, it was delicious.

Later, I whipped up a snack…

Snack -

Pumpkin coconut frosty. Oh my, I forgot how superbly amazing this snack is.

Even though I was freezing after it was well worth the pain. I realized I have an absurd amount of canned pumpkin and coconut milk, so I had to get to work on using those up.

I had some time to kill, so I quickly met a friend for coffee at Starbucks. Double coffee day don’t mind if I do.

When I got home, I wanted something fast. This meal came together in no time.

Dinner -

Socca, coconut oil, nutritional yeast, broccoli slaw, fresh dill, crushed red pepper and avocado.

I’m socca-obsessed these days.

Clearly, I had a burning issue in the kitchen tonight. Oops. I always forget that I have things on the stove or in the oven and leave them in too long.

This meal was nothing to rave about, but it did the trick.

I’m writing this after dinner, but I already know what I’ll be snacking on later…the usual

Evening Snack -

Protein muffin, coconut cream, and un-pictured peanut flour paste (it was far too ugly to photograph).

Now, to catch up on Dexter from Sunday with a cup of one of my new favorites; cocomint tea.

What I Ate Wednesday

Happy Wednesday! The fact that it’s the middle of the week is making me smile. Another reason to smile? It’s What I Ate Wednesday.

Today started bright and early, like it usually does. Up and at my spin class for 5:30.

Spin class has definitely gained popularity this year! I remember this time last year, there were probably, at most, 10 of us. And now we have to get there super early to make sure we get a bike for class.

Of course, it’s a good thing that people are getting involved in spin class, but I always dislike having to get there even earlier now.

After spin, my Mom and I went to Starbucks to treat ourselves to a coffee, typical. We are both Starbucks addicts.

When I arrived home, it was time for Breakfast.

Breakfast

This bowl had ground buckwheat cereal, 1/4 cup egg whites, 1 tablespoon chia seeds, 1 tablespoon ground flax, cinnamon, stevia, pumpkin and banana.

I was having a little craving for some tanginess to my morning bowl, so I scooped in some greek yogurt to satisfy my craving. Topped with peanut flour to finish it off.

I didn’t have time to stretch much after class, so I made sure to get my foam roller out and do some stretching in the living room. It was sort of challenging, and stretching hurts like heck when you avoid it.

However, I know I need to be stretching more often, you know, so I don’t get injured.

Lunch

Post stretching, I baked up some tempeh, cauliflower, broccoli slaw, nutritional yeast, curry powder, coconut oil and served that on top of some pre cooked quinoa. And goat cheese, which melts all over the hot veggies.

Yum.

I finished this up quickly, since I had to go to my acupuncture appointment. Have you ever gone to acupuncture?

I have to say, it has helped me SO much in dealing with my anxiety and stress levels. I love it.

Which may be kind of weird to say, I digress.

In between the hours of Lunch and Dinner, I was actually pretty hungry. Which doesn’t happen often on workout days.

I went with it.

I snacked on an apple, and then a few hours later snacked on a pumpkin protein bar with more pumpkin seed butter.

Clearly, I’m obsessed with this stuff. It’s awesome.

Oh yes, the pumpkin bars and pumpkin seed butter go oh so well together.

And helped tide me over until Dinner time.

I’m glad I had prepped my chopped veggies ahead of time, since I was having a major migraine.

Dinner

I just threw in  some spinach and zucchini in the oven to roast and while that was baking away, I cooked up some socca to round out the meal. Topped with some extra coconut oil and nutritional yeast, and hidden mashed avocado in a shot glass.

Now, I’m sipping on tea and getting ready to finish the rest of the best movie ever, which I started watching Sunday, but for some reason didn’t finish?

Before bed, I will always snack again before hitting the hay. That’s a weird saying.

With that, I’m off.
