My morning tea couldn’t come soon enough this morning, as I had a rather sleepless night. Somehow, I even managed to sleep in until about 6:15, but otherwise I was tossing and turning most of the night.

Recently, Amanda made a post about her Happy List. Immediately, I knew I needed to do one of these myself, I mean there’s not a greater feeling than being happy, so why not make a list of all those things that make me happy.
Okay, not everything because this post would take years to read, but some little pleasurable things that make me happy!
Fresh Veggie Juice…
Since today is the last day of April?! I thought it was a great time for this months favorites. Well, they say April showers brings May flowers and I certainly hope this is true. We’ve had a ton of rain over here, but we have got a fair amount of sun too. I just woud rather have all sun and no rain…ever. If only that was possible.
Seriously though, I’m quite excited that the next few months are going to be getting continuously warmer and longer. Now that I’ve gotten that out of the way, let’s get to my April Favorites…
Food Favorites -
Happy Monday! After a few sleepless nights, I managed to sleep in until 8 AM this morning. I’d call that a major success. A very surprising, unusual, but marvelous way to start the week.
I can’t recall the last time I’ve seen that number after a nights sleep. Maybe it’s a mental thing, but I feel much more refreshed for this coming week. As I said before, I feel like I have a bunch of things happening all at one. So it’s a bit of a mix of anxiousness and excitement at the same time.
This being said, I decided to spend the weekend doing things I enjoy, spending time relaxing, instead of running around like crazy since I know that’s what I’ll be doing for the next few weeks. It was perfectly justified and sometimes spending a weekend filled with relaxation peps me up for the upcoming events.
My weekend consisted of things like…
Good Morning!
There and many beliefs I’ve held onto from the past. Some were adopted from other people, while others were used for me to feel “superior”. It’s not something I’m proud of, but it’s part of my past, that I accept.
Now, I’ve been able to change some of those harmful beliefs into happier and healthy beliefs instead. Belief is such a powerful thing. It can lead us to happiness, but it can always lead to destructive behaviours. Today, I want to focus on those positive, little beliefs that make me content.
I believe….
Breakfast is the most important meal of the day…in fact, I tend to eat this meal twice per day because I love that much…
I’m pretty sure I could live on Breakfast foods if I was given the choice. Most likely due to the fact that Breakfast is sweet and other meals are savory, who made that “rule” anyways?
Coffee and tea must be consumed daily…for sanity purposes.
We all know I love my coffee and tea. Nothing is better than waking up or getting home after a long day and relaxing on the couch with a big cup of hot tea or coffee.
A smile is the best exercise you’ll get all day…
Even though I struggle with my exercise – like taking more rest days; I always know I feel better from a simple smile, than I do from a 60 minute spinning session. *(More on this later).
The day isn’t complete without nut butter of some kind…
If I have nut butter in one of my meals, you can guarantee I’m saving the nut butter for my last bite. Always save the best for last:)

Home is where the heart is…
There is something fun about jet setting away for the weekend or a few weeks, but nothing feels more comfortable than returning home to my own bed. Often, when I picture my “safe spot” while meditating. My bed is the first place I go to.
Reading books everyday…
Reading has had such a positive impact on my life. The day just doesn’t feel complete if I haven’t read something. Don’t even ask me to choose a favorite book because that won’t happen.
Most importantly, I believe in myself…

First, I have to thank you all for your comments on yesterdays post. It seems a lot of us can relate to living from a planner, and not really doing things “in the moment”. This morning, I was pretty excited that I got the chance to sleep in until 6 AM. Progress people, progress.
There’s not a whole lot happening over here right now, I’ve been feeling a bit off the past few days. Most likely, due to the ungodly early hour wakeup calls. I’m sure those have done a number to my immune system, so I’m just hoping I can keep myself away from getting sick. I’ve been battling a chronic sore throat for the past 2 years or so, so I’ve kind of learnt to live with that one.
Rest assured, we’re not here to chat sickness so with that being stated, let’s move on to some things happening at the moment…
Eating…
Breakfast for Lunch, in the form of a Breakfast Cookie. Definitely one of my favorite items, especially since it’s so easy to make and I just love it.
Sipping on…
Shockingly enough, I’m not drinking coffee at the moment. In fact, the last beverage I had was a simple iced tea. Over the weekend, I went to David’s Tea and obviously had to pick up a new bag…I got the sweet strawberry and it’s amazing served over ice. Yum.
Making…
These curried pumpkin black bean burgers (minus the garlic and replacing the ground flax with ground chia seeds for me). They look incredible.
lentil burgers for Dinner tonight. Can’t wait to try them out!
Wishing…
That bad things didn’t happen to good people. Praying and thinking about all of those affected by the terrible event in Boston.
It’s absolutely awful and horrendous that this happened. Let’s not put the focus on those of us who are saddened by this event, but instead focus that energy, prayer, and positive thought, to all the people truly affected.
Loving…
Coconut milk. Full fat, from the can. It’s the best making hot chocolate from this plus a little almond milk, and then adding in my favorite cacao powder. This stuff is seriously delicious. It’s the perfect combination.

Well, since I just finished a spin workout! I’m currently wearing one of my favorite Lululemon hoodies. Scuba hoodies for the win.
They are so comfy and I love them for lounging around the house. I may or may not own more than 3 of them, yikes.
Working out…
If not obvious by my sentence above, I just finished a spin workout! I really need to start posting the spin workouts I complete at home, now that I’m no longer going to classes at the gym. Would you like that?

These gorgeous mint heart earrings. They’re simple, yet adorable and definitely add a nice finishing touch to an outfit.

One of my favorite things about the Spring time would have to be that it’s still cool enough to quietely enjoy my tea first thing in the morning without dying of heat stroke and the fact it’s not too cold to eat my overnight baked oats without the need of a heating blanket and 2 pairs of socks. It’s the simple stuff.
Hello and Happy Wednesday! I hope everyone’s having a beautiful day! The week is flying by! I still feel like it’s Monday, but it clearly is not. Which I’m mighty thankful for.
Now, let’s get the What I Ate Wednesday party started. It’s almost the best day of the weekend…behind Thursday, Friday, and Saturday;)
Since I can’t seem to get up any later than 4:30 these days, I’ve been taking the chance to getting my workouts in bright and early. Well, it’s not really bright at that time, but it sure is early.
Over here, the gyms don’t open until 5:3o, so I’m forever grateful I have enough equipment at home to get my workouts in. This way I also don’t have to deal with all the sickness, germs, and people at this time;)
One pilates workout later, and I was ready for a cup of tea. Followed by my leisurely tea drinking, I take the puppy out again, wash a few dishes, and prep my Breakfast to eat.
Breakfast -
{ Oat bran, banana, cinnamon, stevia, coconut flour, and coconut butter }
When I looked at my fruit bowl last night, I saw a perfectly ripe banana and knew it had to go in my Breakfast this morning.
Can anyone even argue the fact that banana and coconut are a combo meant to be. So good.
It’s been crazy with rain over here, so no enjoying the Spring time sun for me, but somehow the morning ended up passing by pretty fast. Probably due to all the puppy training. Next thing I knew, I was hungry again. After a quick trip to Starbucks for some much needed coffee, I made a quick meal.
Lunch -
{ Quinoa cooked in veggie broth, a huge handful of spinach, mixed with nutritional yeast, and half an avocado on top. }
Somehow, I ended up doing a little prep work Sunday (yay for progress) and had some extra quinoa on hand, which made this meal possible.
Isn’t it crazy how fast laundry seems to pile up? I swear I just did it, but yet again I had a huge load of laundry and chores to complete. Chores are the worst, but necessary. Cleaning always has the power to wake up my appetite, even more so than exercise. Odd.
Snack -
{ Pumpkin “cookie dough” }
This lovely bowl had a mix of oats, pumpkin, coconut flour, almond milk, and a little almond butter.
It’s been a while since I really craved a big bowl of veggies for Dinner, but since the craving hit I decided to go for it.
Dinner -

A bowl of homemade tomato sauce with some extra steamed zucchini and cauliflower (I actually had it without a reaction-good news I suppose).
On the side I had roasted parsnips that were baked in coconut oil, a little pink himalayan sea salt, and rosemary. One of my favorites.
Now, I’m sipping on some tea, reading a few blogs, and writing this post before relaxing a bit before bed.
Some deliciousness always follows at the end of the day. It will probably be the same old thing. Muffin, coconut flour frosting, and nut butter. I’m in a super rut with this nighttime Snack, but since it keeps me full until the morning, I’ll most likely stick with it until I’m sick of it.
And one more thing, thanks for the comments on yesterdays post! You all have great tips too!

Hello friends. It’s now Tuesday, although it kind of feels more like Monday to me.
To say I’m overwhelmed right now would be an understatement. Instead of having my stress control me, I’m taking control and doing everything I can to de-stress my life.
Stress sucks, we all experience it, we all need to find healthy ways cope with it. Before, I used to deal with stress the worst way possible; skipping meals, ignore my feelings, and exercise in full out intensity. Not anymore.
Here are some natural, healthy , and simple ways I use to break-up with my stress.

This week went by SO fast. I swear I blinked my eyes and it’s now Friday. Maybe it’s because of the long weekend. Anyways enough small talk, let’s get to more important things like coffee talk for the week. I have a new recipe to share, some new obsessions, and other things I’m loving lately.
